2 u BREAKFAST Egg White Scramble RECIPE IS WELL SUITED TO WEIGHT LOSS / MAKES 2 SERVINGS Though this dish uses some very humble ingredients, it s so spectacular that a four-star restaurant could serve it with pride. Not only is it tasty, but the snowy eggs, vibrant greens, and deep red tomatoes are visually stunning. You can substitute other greens, such as watercress or Swiss chard, for the spinach in this recipe with great results. Olive oil cooking spray ½ sweet onion, finely chopped 1 teaspoon minced garlic 1 yellow bell pepper, seeded and chopped 1 cup egg whites (about 10 egg whites) 2 cups shredded baby spinach 3 plum tomatoes, seeded and diced Sea salt Freshly ground black pepper 2 tablespoons grated vegan cheese 2 tablespoons chopped basil 1. Lightly spray a large skillet with cooking spray and place over mediumhigh heat. 2. Add the onion, garlic, and bell pepper and sauté until the onions are translucent. 3. In a medium bowl, whisk together the egg whites, spinach, and tomatoes until well combined. 4. Add the egg mixture to skillet and scramble until dry, about 4 minutes. 5. 3 u LUNCH Barbecued Chicken Fingers RECIPE IS WELL SUITED TO WEIGHT LOSS / MAKES 2 SERVINGS These tasty treats are perfect served with a large fresh salad and a spicy dipping sauce. Let the chicken strips marinate for at least 1 hour to allow the delectable citrus taste to permeate the meat. If you use wood barbecue skewers, soak them in water while the chicken is marinating. (Watersaturated skewers won t catch fire on the barbecue.) 1½ tablespoons olive oil Juice and zest of 1 large lemons ¾ pound boneless, skinless chicken breast, sliced into 20 strips Sea salt Freshly ground black pepper 10 small wooden skewers, soaked 1. Preheat the barbecue to medium-high heat. 2. In a medium bowl, whisk together the olive oil, lemon juice, and lemon zest. 3. Place the chicken in the marinade and store in the fridge for about 1 hour. 4. Thread each piece of chicken onto a skewer and season with salt and pepper. 5. 4 u DINNER Spicy Pasta Puttanesca with Meat Sauce RECIPE IS ENERGY BOOSTING / MAKES 2 SERVINGS This classic pasta sauce has a pleasing salty-spicy taste that pairs well with lean ground beef or even sausage. The saltiness in the sauce comes from the black olives, which are not only delicious, but also very high in iron, vitamin A, vitamin E, and antioxidants. Olives are very good for cardiovascular health as well as cancer prevention, which is why olive oil is considered to be part of any healthy diet plan. This recipe uses zucchini noodles, made by cutting zucchini into thin strips by hand or with a spiralizer. ½ pound lean ground beef ½ onion, chopped ½ tablespoon minced garlic 1 celery stalk, chopped fine 5 tomatoes, chopped ½ tablespoon chopped fresh basil ½ teaspoon chopped fresh oregano ¼ teaspoon red pepper flakes Sea salt Freshly ground black pepper ¼ cup kalamata olives, pitted and quartered ¼ cup low-sodium beef stock Juice of 1 lemon 4 cups zucchini noodles 1. Heat a large pot over medium-high heat. Add the beef and cook, stirring, until browned, about 8 minutes. 2. Add the onion, garlic, and celery and sauté until the vegetables are softened, about 5 minutes. 3. 6 u SNACK Fresh Peach Mango Smoothie RECIPE IS ENERGY BOOSTING / MAKES 2 SERVINGS Mango is a luxurious fruit because it is so sweet and so smooth on the tongue. It is the prominent flavor in this pretty, pale yellow smoothie, so you can substitute apricots or plums if peaches aren t ripe enough. Mangoes have many health benefits, including lowering cholesterol, promoting healthy skin, and preventing some types of cancers, so make this smoothie a regular weekly snack. 1 cup diced fresh mango 2 ripe peaches, pitted and diced 1 cup unsweetened almond milk 1 cup ice 1.
