1 FAJITAS FIESTA SERVES (suitable for front country) to 8 inch flour tortillas 12 oz Shredded taco cheese 8 oz Sour cream 8 oz Guacamole (optional) 2 pkgs Fajitas seasoning mix 3 pkgs Instant refried beans 3 c Deli salsa (med) 3 sm cans Green chilies, chopped 3 c Instant rice (optional) oz pkgs Taco Mix (imitation ground beef) 4 med Green peppers 2 med Red pepper 2 lg Sweet yellow onion 1 lg Avocado, sliced (opt) Condiments: Hot sauce 1. Chop peppers and onion. Set aside. 2. Prepare Taco Mix ATPD. 3. Stir fry peppers and onion in 2 Tbsp oil until a little tender. Add fajitas seasoning mix. 4. Boil 3 c. water for rice; after water boils, stir in rice, remove from heat and let stand 5 minutes covered. Stir in 1/4 c. salsa. 5. Prepare refried beans ATPD. 6. Serve veggies with tortillas, taco mix, refried beans, rice, shredded cheese, chopped green chilis, avocado slices (opt), sour cream and salsa. DINNERS WILDERNESS VOLUNTEERS Page 1 of 14

2 CURRIED RICE WITH TUNA SERVES 12 1 ½ serving Minute Rice per person 4 packs Knorr vegetable soup 1-2 oz jar of curry powder 1-7 oz. bag sweet baking coconut 24 oz. packaged tuna 1-10 oz. container dry roasted peanuts 8 oz raisins (or raisins from the drink box) Wash the rice. Use 18 cups of water. Add the Knorr soup mixes and rice to the cold water. When this boils, pour in the curry powder mix and cook until the rice is tender. Drain the tuna. When the rice is done, remove from the heat and add the tuna. Let it stand for 5 minutes. The peanuts, raisins, and coconut are used as garnishes for folks to sprinkle on for themselves. RATATOUILLE SERVES (suitable for front country) 1 tsp each Oregano, basil, marjoram butter, olive oil 2 28-oz. cans crushed tomatoes, drained 2 large cans tomato sauce 1 1/2 lb. macaroni 1 sm. bottle salad dressing 2 med chopped onions 1 med green pepper, chopped 1 med red pepper, chopped 4 ea garlic cloves, minced DINNERS WILDERNESS VOLUNTEERS Page 2 of 14

3 2-3 ea 6-8 inch zucchini, sliced 1 med eggplant, peeled and diced Bakery: Sourdough rolls 1. Sauté onions, peppers, garlic and zucchini in olive oil. Add flavoring package of oregano, basil, marjoram. 2. Add eggplant, crushed tomatoes, tomato sauce 3. Cover, simmer 30 min. 4. Cook macaroni ATPD. Add cooked macaroni to veggies. 5. Serve ratatouille with sourdough rolls and butter. PENNE a la GREQUE SERVES pkg. Feta cheese, crumbled 1 1/2 lb Penne pasta 1 jar Kalamata olives, pitted and sliced 1 cup Pine nuts, toasted 1 T. Fresh rosemary, snipped 3 med Zucchini, diced 3 cans Italian tomatoes: 2 drained, 1 with liquid 2 lg cloves Garlic, minced 1. Cook penne pasta ATPD. 2. Toast pine nuts in skillet and set aside. 3. Sauté in oil: kalamata olives, fresh rosemary, zucchini, minced garlic 4. Add Italian tomatoes. 5. Drain pasta and stir in sautéed ingredients 6. 4 MEXICAN BEAN TOSTADA SERVES (suitable for backpacking) Premix before trip: 1 oz Pepper Flakes 1 oz FD corn 2 tsp cumin ½ tsp dehydrated roasted garlic ½ tsp chipotle powder ½ oz onion flakes 2 cans green chilies, dried 16 oz instant black beans Other ingredients: 1 # grated cheddar 1 # crushed tortilla chips Instant salsa -- rehydrated In camp: Rehydrate bean/premix with 4 cups boiling water. Let sit 5 minutes, add more boiling water if needed for correct consistency. Stir in chips & cheese and serve with salsa. LENTIL DAHL SERVES (suitable for backpacking) Premix at home: 2 T curry powder 1 tsp coriander seeds pinch red pepper flakes 3 T dried onion DINNERS WILDERNESS VOLUNTEERS Page 4 of 14

5 ½ tsp garlic powder 1 tsp cinnamon ¼ tsp cloves Other ingredients: 3 T vegetable broth 3 cups salmon-colored lentils 2 T fresh grated ginger 4 tsp margarine 4 cups instant rice Mix broth with 8 cups water; bring to a boil. Simmer lentils for 20 minutes, remove from heat and let sit 10 minutes. Add premix, and return to stove for ten more minutes until lentils are done. Just before serving, stir in margarine. Serve over rice. POTATO CURRY SERVES (suitable for backpacking) Premix before trip: 1/8 tsp cayenne pepper 1 T cumin seeds 1 T turmeric 1 ½ t salt 2 tsp mustard seeds 1T coriander seeds Other ingredients: Chutney Premix before trip: 5 T brown sugar 1 tsp ginger 1 tsp cinnamon 1/8 tsp nutmeg 1 tsp cloves ½ tsp black pepper Other ingredients: 7 oz dried peaches/apricots 4 T minces candied ginger Rehydrate fruit. Stir in spices, simmer to blend. 2 T oil 1.3 # dried potato slices, rehydrated DINNERS WILDERNESS VOLUNTEERS Page 5 of 14

6 Heat margarine; add premix. Stir for two minutes over medium heat (seeds will pop; don't let this burn). Add potatoes and water (if needed). Cook over low heat to blend flavors. NATIVE AMERICAN VEGETARIAN STEW SERVES (suitable for car camping) 3 cans red beans drained 2 cans whole kernel corn drained 2 cans garbanzo beans drained 1 can hominy 2 cans crushed tomatoes 2 large onions, diced 2 large bell peppers, diced 8 cloves garlic, chopped (garlic seasoning can be used as a substitute) 6 stalks celery, chopped ½ cup chili powder 2 teaspoons ground cumin Salt Red pepper 4 vegetarian bouillon cubes Vegetable oil Add first four ingredients to 4 quarts water and bring to a boil. Turn heat down and add bouillon cubes. Meanwhile, sauté the onions, bell peppers garlic, and celery in a little cooking oil until tender. Add the sautéed mixture to the simmering pot. Add the crushed tomatoes, chili powder and cumin and season to taste with salt and red pepper. Allow stew to simmer covered over low heat for about half an hour. This stew works well served in bread bowls. JAMBALAYA SERVES (suitable for backpacking or front country) DINNERS WILDERNESS VOLUNTEERS Page 6 of 14

7 3 pkg Zatarains Jambalaya Mix 1 pkg salami, cubed and sautéed Cook Jambalaya according to package directions. Serve vegetarians; add sausage and serve. BURRITOS SERVES ~12 (suitable for carcamping, backpacking w/pack support) 2 regular size flour tortillas person 10 oz. can mild enchilada Sauce 1 ½ lb. grated cheese 1-7 oz. can jalapenos oz cans sliced black olives 1 serving instant refried beans person 1 serving minute rice per person For this recipe, instant refried beans are 1/3 cup per serving; instant rice is ½ cup per serving. Mix the beans and rice at home and package in a ziplock bag. To cook, use 1 cup of water to one combined serving of instant beans & instant rice. Boil the water. Then add the instant rice / instant refried beans mixture. Bring back to a boil for 1 minute. Take off and let stand for 5 minutes. The cheese, green chilies, olives, jalapenos and enchilada sauce are used as individual garnishes. GREEN CHILI STEW SERVES (suitable for front country) 3 lg potatoes, cooked & diced 2 28oz. cans crushed tomatoes 1 large can green chilies (or 4 small) 1 pkg Knorr Tomato Soup 3 cups water 2 onions chopped 2 cans pintos 4 cloves garlic, minced Quesadillas 12 flour tortillas 1 # jack cheese, shredded Heat a tortilla on griddle or frying pan with cheese on top. When the cheese starts melting, add another tortilla to the top (like a cheese sandwich). Turn and heat until cheese is melted. Cut into fourths and serve. DINNERS WILDERNESS VOLUNTEERS Page 7 of 14

TANGY NOODLES SERVES 4-6 (suitable for front country and backpacking) 1# Chinese noodles (soba) 1/4 cup sesame oil 1/4 cup soy sauce 1 1/2 Tbsp rice vinegar 2 Tbsp sugar 1 to 3 tsp hot chili oil (experiment to taste) 1/4 cup sliced or chopped green onions Add noodles to boiling water for 5-6 minutes. Mix the sauce (next 4 ingredients) in a bowl. Drain noodles, add to sauce. Garnish with green onions. Can be eaten immediately, but the longer it sits the more sauce the noodles soak up. ORIENTAL SALAD SERVES (carcamping) Selection of lettuce/cabbage/snow peas/carrots/edamame ~ 3# 2 bunches green onions, thinly sliced Mandarin oranges 4-6 cans, drained (save juice) Toasted almonds 2 cups Chow mein noodles l large bag Optional: Grilled chicken breast, thinly sliced Lawry's Sesame Ginger Marinade thinned with saved orange juice to taste DINNERS WILDERNESS VOLUNTEERS Page 8 of 14

9 DO LASAGNA SERVES (carcamping) 2 # lasagna noodles (precook them or not depending upon your preference & experience) 75 ounces spaghetti sauce 2 onions, chopped 4 zucchini, julienned 6 cloves garlic, minced 1 pound fresh spinach, washed 16 ounces ricotta cheese 2 # mozzarella cheese, shredded 8 ounces parmesan cheese, grated 2 T Italian herbs 2 eggs olive oil Cooking with a Dutch oven is easy with a little practice. The trick is to turn the ovens frequently to prevent hotspots, and monitor the heat. Start the charcoal about 15 minutes before you need it to make sure the coals are hot. Do not let them burn too long before using them, or you won't have enough heat. When stacking DOs, use fewer briquets on the upper oven as heat rises. 1. Sauté onions with garlic in olive oil until translucent; add zucchini and cook 5 minutes. Add sauce to heat. 2. Mix ricotta, herbs, eggs together. 3. Start with thin layer of sauce in bottom of 12" dutch oven. Layer noodles, ricotta mixture, spinach, sauce & remaining cheeses in oven to within an inch of the top. 4. Cook over charcoal with briquettes on the bottom and 20 on the top. Rotate oven every ten minutes to prevent hot spots. Let sit for about 15 minutes after it's done before serving. DO ENCHILADAS SERVES (carcamping) 20 corn tortillas, quartered 2 lbs grated jack cheese DINNERS WILDERNESS VOLUNTEERS Page 9 of 14

10 1 lb grated sharp cheddar ~60 ounces enchilada sauce, red or green 2 cans corn, drained 1 can each pintos, black beans, kidney beans (or any combination) l large can whole green chilies 2 onions, chopped optional: chopped olives Beginning with thin layer of sauce, layer tortilla pieces, cheese, corn, beans, onions, & chilis in 12 " Dutch oven, repeating until full. End with layer of sauce & cheese. Bake with briquettes on bottom and on top rotating oven frequently over coals to prevent hot spots. THAI SALAD SERVES (suitable for carcamping/backpacking first night) 3 boiled eggs (optional) Large bag Coleslaw (12 servings as per back of bag) Bag of Spinach or Oriental Salad 3 bunches of green onions, chopped ½ cup sunflower seeds 1 can bean sprouts 1 cup chopped cilantro 1 pkg. Chow Mein Noodles (those crunchy ones) 1 bottle Peanut Dressing 1 lime 6 cups instant rice for instant rice, water is one to one with rice so bring 6 cups water to a boil, stir in rice. Let sit covered for 10 minutes. Boil eggs, chop onions, chop eggs, mix salad, add dressing, and squeeze lime over salad. Serve with rice. DINNERS WILDERNESS VOLUNTEERS Page 10 of 14

11 PASTA FAGOLI SERVES (suitable for carcamping) 3 T Olive Oil 2 Onions, chopped 3 carrots, sliced 4 celery stalk, sliced 1 can zuchinni 3 cloves garlic, minced 3 pkgs Knorr Tomato Soup Mix 1 large can crushed tomatoes 2 cans Navy Beans 1# penne pasta (or ziti), cooked 1 tsp. Italian Seasonings salt/pepper to taste grated Parmesan Saute onion & garlic in oil, add carrots, celery and Italian Seasonings. Stir in zuchinni, tomatoes, beans, soup mix and 8 cups water. Simmer 10 minutes. Adjust seasoning. Add pasta, add Parmesan. Serve. POLENTA 3 cups cornmeal 1 tsp salt 1 Tbsp each basil, oregano & garlic powder 8 oz Fontina cheese 1 cup parmesan cheese DINNERS WILDERNESS VOLUNTEERS Page 11 of 14

12 Bring 8 cups water to a boil. Mix cornmeal w/ enough cold water to wet. Add wet cornmeal to boiling water, stirring constantly. Cook 5 minutes over low heat; add more water if needed -- should be slightly creamy. Add cheeses. Note: Do not cook after adding the cheese -- make sure it's done (cornmeal isn't crunchy) first. CREAMY PESTO TORTELLINI SERVES (suitable for car camping) 2# tortellini, dried 2 pkgs pesto sauce mix (Mayacams or Knorr) 2 pkgs Alfredo Sauce mix (") 2 cans Italian Tomatoes, chopped, or one cup sundried tomatoes, chopped 4 oz olive oil 2 cups water 1 cup powdered milk Parmesan Cheese Add pesto and alfredo sauce mixes and milk powder to olive oil. Heat with water until thick. Add tomatoes. Pour over tortellini; serve with parmesan and breadsticks. CURRIED CAULIFLOWER AND PEA SERVES (carcamping) Vegetable oil 2 tablespoons black mustard seeds 2 teaspoons cumin seeds 2 onions, peeled and grated 8 garlic gloves 2" piece of ginger root, peeled and grated 2 fresh green chilies, grated DINNERS WILDERNESS VOLUNTEERS Page 12 of 14

13 2 teaspoons ground turmeric ½ teaspoon ground dried red chilies 2 large heads of cauliflower, cut into I" pieces 32 oz. Canned peas, drained (dried peas can be used) Salt to taste Heat oil in large pan. Add the mustard and cumin seeds and fry over medium heat until mustard seeds start popping. Stir in the onion, garlic, ginger, and green chili and fry until browned. Add the turmeric and ground chili and stir for 30 seconds. Mix in the cauliflower, peas, and salt. Add some water, cover, and simmer for about 10 minutes, until cauliflower is tender. TORTELLINI PRIMAVERA SERVES ~ 12 (suitable for carcamping) about 1/4 lb. dried cheese Tortellini per person 2-13 oz cans quartered artichoke hearts 2 cups sun dried tomatoes 1-3 oz. container parmesan cheese 16 oz bottle Italian Salad Dressing Add the tortellini and sundried tomatoes to the boiling water - use about 14 cups of water for 3 lbs. pasta. Boil uncovered for about 10 minutes until the tortellini is tender. Remove from the stove and drain. Add the Italian Salad Dressing. Drain the artichoke hearts and mix in to the tortellini. The cheese is used as an individual garnish. ANAZASI RAMEN SERVES 12 (suitable for carcamping/backpacking with pack support) 1 pack Ramen per person 2-15 oz cans corn DINNERS WILDERNESS VOLUNTEERS Page 13 of 14

14 3-7 oz cans green chilies Use 18 cups of water for 12 people (1 ½ cups per). Boil the water and then add the Ramen Noodles. Drain the corn, green chilies and then add to the Ramen. Add the Ramen Flavor packs to the stew. Take off the stove and let stand for 5 minutes. PASTA LA PORTA SERVES 12 (suitable for backpacking/camping) 4 boxes - cheese tortellini pasta 1 pkg - mushroom sauce (powder) 2 pkg - dried porcini mushrooms 1 jar - sundried tomatoes (in olive oil) 1 pkg - pine nuts 1 can - shredded parmesan cheese 1) Before the trip, roast pine nuts in hot skillet until nicely browned. Place in ziploc bag. 2) Before the trip, slice sundried tomatoes into small strips. Place in ziploc bag with the olive oil. 3) Boil water and cook pasta. 4) In a small pot, add small amount of water to dried mushrooms. Stir to reconstitute. Add mushroom sauce and sundried tomatoes. 5) Drain pasta, add mushroom sauce. Mix. 6) Stir in pine nuts just before serving. 7) Trip members add sprinkle of parmesan cheese to taste.
