1 10 Year Limited Warranty Course Housewares, LLC warrants this Cook s Companion cookware product to be free from manufacturer defect for up to 10 years from the original date of purchase. If a defect is found to exist, Course Housewares will, at its option, either repair or replace the product or the defective component, including labor. Replacement will be made with a new or rebuilt product or components. This warranty does NOT cover (a) ordinary wear and tear (such as scratches, chips or stains), (b) impact damage or breakage, (c) heat discoloration, minor imperfections and slight color variations in the enamel or metal which are a normal part of the craftsmanship, (d) extreme temperature changes (such as pre-heating cookware empty, letting liquids boil dry, immersing hot pot or lid into cold water) or resulting damage to the pot and/or other property, (e) improper cleaning methods causing scratches, or (f) accessories, even if sold with the cookware, (g) any unit that has been tampered with, (h) damages incurred through improper use and care and (i) faulty packaging by you or mishandling by any common carrier. Failure to follow the accompanying Care and Use instructions or commercial use will void this warranty. Course Housewares sole obligation and your exclusive remedy under this warranty is limited to repair or replacement, at its option, of the defective cookware. You will be responsible for any shipping and handling fees. Products returned to us that are not found to be defective in material or workmanship will be returned to you. If your particular product is found defective but is no longer available and cannot be repaired, a comparable product, at our discretion, will be sent as a replacement. This warranty extends only to the product s original purchaser, US residents only and does not cover damage caused by improper use or accidental damage. 2 Getting Started Before using, remove any labels and wash and dry each item in accordance with the care and use instructions. Care & Use PLEASE READ BEFORE USE AND SAVE THESE INSTRUCTIONS Thank you for purchasing Cook s Companion Cast Iron Cookware. Cook s Companion will perform best when used as intended. To ensure the best performance of your cookware, please consistently follow these instructions. Your 6 Piece Square Cook s Companion Cast Iron Set includes: 9 Square Fry Pan with Glass Lid 3QT. Square Dutch Oven with Cast Lid 6QT. Square Dutch Oven with Cast Lid Always preheat your cookware and use low to medium high heat when cooking. Preheating requires oil, water or food to be in the pan. Heating cookware without oil, water or food may cause damage to the pan or the coatings. As with all fine cookware, hand washing is recommended and will prolong the cookware s original appearance. Always allow your cookware to cool before submerging into water. When hand washing, use a soft towel or sponge and wash with warm soapy water. Do not use abrasive or harsh cleaners, steel wool or other abrasive cleaning pads. It is recommended that you use tools made of silicone, nylon, wood or melamine to protect the luster of the interior surface. Use caution when handling the cookware, impact to the enamel interior or exterior will cause chipping and will void the warranty. Always use extreme caution when handling hot cookware and keep out of reach of children at all times. Do not let handles extend over a hot burner. Doing so may cause the handle to become hot or cause damage. Always use oven mitts or potholders when handling cookware. Cook s Companion cast iron cookware is oven safe to 500 F. The glass lid is only oven safe to 350 F. Your cast iron cookware is compatible with induction cooking, gas stoves, electric stoves (including glass tops), and is oven safe. Do not use your Cook s Companion cast iron in the microwave.
3 Get Cooking! Sweet Potato Casserole 3QT. Square Dutch Oven Recipes Irish Soda Bread 1 (40oz.) can cut sweet potatoes, don t drain 1 Cup White Sugar 2 Eggs 1tsp. Vanilla Extract 1/3 Cup Butter 1 Cup Brown Sugar (packed) 1 Cup Chopped Pecans 1/3 cup all-purpose flour 1/3 cup melted butter 1 cup Milk (any, buttermilk works great!) 1 tsp. vinegar 2 cups all-purpose flour ½ tsp. Salt ½ tsp. Baking Soda 1 tbsp. Sugar (optional) Pre-heat your oven to 400 F. In a small bowl, mix the milk and vinegar and let stand for 10 minutes, or until curdled. In a medium mixing bowl stir the flour, salt, baking soda and sugar together. Slowly mix in the milk and vinegar, until the dough is smooth. Place the dough onto a flour dusted cutting board and shape into a square disk. Place the disk into the 3QT. Square Cast Iron Dutch Oven and bake for 15 minutes, or until the crust feels firm to touch. Enjoy! Caramel Chews 1 Cup Butter 1lb. Light Brown Sugar 1 can sweetened condensed milk (14oz.) 1 Cup Light corn Syrup Pinch of salt 1.5tsp. Vanilla Extract Combine the butter, brown sugar, sweetened condensed milk, corn syrup and salt in the 3QT., stirring constantly. Heat the mixture until the temperature reaches between 234 F-240 F. Cook for 2 minutes at this temperature. Remove from the heat, and stir in the vanilla. Pour mixture into a buttered 9x13 inch-baking pan. Allow to cool completely and then cut into squares with scissors. Wrap them individually in waxed paper or cellophane to give as gifts! Enjoy! Pre-heat your oven to 350 F. Heat the potatoes (with liquid) in the 3QT. and bring to a boil. Cook until tender, about 15 minutes, and then drain and mash the potatoes in a medium bowl. Next mix in the sugar, eggs, solid butter, milk, and vanilla extract. Butter your 3QT. and place the sweet potato mixture into the 3QT. and spread evenly. In a separate bowl, mix the remaining ingredients together and sprinkle over the potato mixture. Place your Dutch oven into the pre-heated oven and bake for 35 minutes; or until a knife inserted in the middle comes out clean. Enjoy! Deepest Deep Dish Pizza 1lb. Turkey Sausage or Hot Italian sausage, ground 3oz. Sliced Pepperoni 1 Medium yellow onion, chopped 1 Small Green or Red Bell Pepper 1 can (4oz.) Black olives, sliced and drained 1tsp. Minced Garlic 13 oz. pizza dough 1 can (14.5oz.) Italian stewed tomatoes 1 (8oz.) Can tomato sauce 3 cups Shredded Mozzarella Cheese Cook the sausage, onion, pepper and garlic in the 3QT. Dutch oven. Drain and remove from the 3QT. Set aside. Pre-heat your oven to 425 F. Grease or butter the 3QT. and place your pizza dough into the Dutch oven. Your dough should go up about 2 inches on the sides of your pan. Next spread the sausage mixture, then layer pepperoni on top of the pizza dough. Cover the meats with the tomatoes and the sauce. Then spread the cheese over the
4 6 Quart Dutch Oven Recipes One Pot Puttanesca Pasta White Chicken Chili 1 jar (24oz) Spaghetti Sauce 2 cups Water 1 package (8oz) Spaghetti Noodles, uncooked 4 oz. Black Kalamata Olives, pitted and halved 2 tbsp. Capers 3 Garlic Cloves, minced 1 cup Grape Tomatoes, halved 2 tsp. Red Pepper, crushed 2 tbsp. Parsley, chopped Combine spaghetti sauce and water into the Dutch Oven. Place spaghetti noodles into pan. (Break in half if desired) Bring to a boil, stirring often. Stir in Kalamata olives, capers, garlic, grape tomatoes, red pepper flakes, and parsley. Reduce heat to medium-low, cover and simmer until pasta is cooked about 8 to 10 minutes, stirring often. Enjoy! 1 tbsp. Vegetable Oil 1 Onion, chopped 3 Garlic Cloves, crushed 1 4oz can Jalapeno Peppers, diced 1 4oz can Green Chile Peppers, chopped 2 tsp. Cumin, ground 1 tsp. Oregano, dried 1 tsp. Cayenne Pepper, ground 4 cups Chicken Broth 3 cups Chicken Breast, cooked and chopped 3 cups White Beans 1 cup Monterey Jack Cheese, shredded Heat the oil in the Dutch Oven over medium-low heat. Slowly cook and stir onion until tender. Mix in garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture for 3 minutes. Mix in chicken broth, chicken, and white beans. Simmer for 15 minutes, stirring often. Remove from heat and slowly stir in cheese until melted. Enjoy! Apple Flavored Pot Roast 3 lb. Boneless Beef Chuck Roast 1 can (12oz) Frozen Apple Juice Concentrate, thawed 3 Garlic Cloves, crushed 1 envelope Dry Onion Soup Mix 3 Baking Potatoes, peeled and diced 2 Carrots, peeled and sliced Preheat oven to 325 F. Place the roast in the Dutch Oven and fill with about ½ inch of water and stir in apple juice concentrate. Make several slits in the roast and stuff pieces of garlic into them. Season the roast with onion soup mix. Cover and bake for 2 hours. After 2 hours carefully add the carrots and potatoes into the Dutch Oven. Recover and bake for another 2 hours. Enjoy! Cola Baked Ham 1 (8lb.) Boneless Ham 2 cups Brown Sugar, packed 1 (12oz) can or bottle Cola Flavored Carbonated Beverage 1 cup Grape Juice 1 (20oz) can Pineapple, sliced and drained (Set juice aside) Preheat oven to 325 F. Use a knife to score a pattern onto the ham with lines about 1 inch apart. Place ham in the Dutch Oven. Pat brown sugar over the entire ham. Bake the ham for 30 minutes. Remove from the oven and carefully pour the cola, grape juice, and pineapple juice into the pot and baste the ham with the mixture. Continue to bake for 2 hours, basting every 20 minutes. Cut the pineapple rings in half. Remove ham from oven and place pineapples in the excess drippings. Allow ham to rest for 10 minutes. Enjoy!
5 9 Cast Iron Fry Pan Recipes Skillet Spinach Lasagna Fresh Baked Apple Cake 1 cup White Sugar 1 Egg 1/3 cup Butter 1 ½ cups Flour 1 tsp. Baking Soda 1 pinch Salt 1 ½ tsp. Cinnamon, ground 1 ½ tsp. Vanilla Extract 2 cups Apples, peeled, cored, and chopped ½ cup Walnuts Preheat oven to 350 degrees. Grease skillet with oil or butter. In a medium bowl, mix flour, baking soda, salt and cinnamon together and set aside. In a large bowl, cream the butter and sugar until fluffy. Add egg and beat well. Add vanilla. Add the flour mixture and beat well. Fold in apples and walnuts. Pour batter into the greased skillet and bake for 45 minutes. Enjoy! English Toffee 1 cup Butter 1 ¼ cup White Sugar 2 tbsp. Water ¼ cup Almonds, silvered 1 cup Chocolate Chips Butter a 10x15 inch jelly roll pan. Melt the butter in the skillet over medium heat. Stir in sugar and water. Bring to a boil and add almonds. Cook while stirring constantly until almonds are toasted and the sugar is golden brown. Pour the mixture into the prepared jelly roll pan. Note: Do not spread. Let stand for a minute and then spread chocolate chips over the top. Let cool and then break into pieces. Enjoy! 1 lb. Italian Sausage 8 Lasagna Noodles, broken into pieces 1 can (28 oz) Crushed Tomatoes 1 can (8 oz) Tomato Sauce 2 cups Fresh Spinach, torn ½ cup Ricotta Cheese 4 oz. Mozzarella Cheese, sliced ¼ cup Parmesan Cheese, grated Brown Italian sausage in the heated skillet about 5-7 minutes. Break into small pieces. Mix the noodles into the sausage. Pour crushed tomatoes and tomato sauce over noodle-sausage mixture and bring to a boil. Cover skillet and reduce heat. Cook for about 25 minutes or until noodles are cooked and sauce is thickened. Add spinach, ricotta cheese, and mozzarella cheese, cover skillet and remove from heat. Let lasagna stand for about 5 minutes and top with parmesan cheese. Enjoy! Fried Rice with Cilantro 4 tsp. Vegetable Oil 5 Garlic Cloves 2 Green Chilies, diced 2 cups Chicken Breast, cubed 2 cups Jasmine Rice, cooked and chilled 1 tbsp. White Sugar 1 tbsp. Fish Sauce 1 tbsp. Soy Sauce 2 tsp. Green Onion, chopped 2 tbsp. Fresh Basil Leaves, chopped 5 tbsp. Fresh Cilantro, chopped Heat oil in the skillet, over medium-high heat. Fry the garlic until golden in color. Add the green chili peppers and chicken breast cubes and stir-fry until cooked through. Add rice, sugar, fish sauce, and soy sauce into chicken mixture. Cook over medium heat and stirring gently. Blend mixture well. Stir in the green onions, basil, and cilantro. Cook for 1 more minute and Enjoy!
