6 L.A. Spring harvest Guide Harvest window dates are estimates and may vary due to your local environmental factors (cold, heat, light, water) and the health and care of your plants. Anise Seeds: April 15 - May 30 Pull, pluck, or snip seeds from the top of the plant once they are fully formed and have begun to dry. hese seeds will typically stay on the plant for several weeks until the seeds and plant stems are fully dried and the plant is disturbed. Basil Harvest Window: April 1 - June 15 Pluck or snip basil plant stems directly above the growth of two opposite leaves. After your harvest, two new stems will begin to grow from the leaf nodes directly below where you harvested. he two new stems will grow new leaves and your next harvest will be twice the previous harvest. Continue to pinch or snip newest growth as new leaves grow from the end of each branch. Harvest regularly to avoid flowering. Beans (Bush Beans) Harvest Window: April 1 - May 30 Pick beans when pods are young and tender before beans swell to expand the pod. Harvest largest pods several times per week or as they become ripe. Beans (Garbanzo Beans) Harvest Window: April 20 - May 30 Pick beans when pods are green. Pods may only have one bean in them. Beets Harvest Window: April 10 - May 30 Pull the entire plant out of the ground to harvest. Harvest when top of beet root reaches 1-2 inches in diameter. Beet roots can stay in the ground waiting to be harvested even after the leaves are damaged by cold. Be sure to eat your beet leaves similarly to collards, or kale. Carrots Harvest Window: April 10 - May 30 Pull the entire plant out of the ground when the top of the root reaches 1-2 inches in diameter. Carrots often need the soil to be loosened in order to harvest them. o loosen carrots from the ground, carefully dig into the soil several inches from the carrot, and wiggle your shovel to loosen the soil near the carrot root. cumber Harvest young fruits from the vine by twisting or cutting fruit stem. Rub the skin of the fruit to re-move the prickles. Harvest fruits while young before they swell in diameter and have a rounded and tough outer skin. As fruits age, they become more bitter and the seeds and skin become tough. Dill Harvest Window: March Snip or cut at stems as they grow to a harvestable size (5-10 inches). Dill will produce stems and leaves for several weeks until it goes to seed. Dill seeds are also edible and flavorful.

Spring harvest Guide Harvest window dates are estimates and may vary due to your local environmental factors (cold, heat, light, water) and the health and care of your plants. ggplant Harvest Window: May 1 - June 30 t eggplant just above the fruit with a knife or strong scissors. ggplant are ready to harvest when they have reached their full size, or while they are smaller and still growing: - Japanese eggplant: 1" in diameter 10" in length - Italian eggplant: 3" in diameter 7" in length Green Onions Harvest Window: April 10 - May 30 Pull or dig onions once stems reach at least ¼ inch in diameter. You may need to loosen the soil around the onions for an easier harvest. Lettuce (baby sized) Harvest Window: March 20 - April 20 Snip or cut leaves 1 inch above the ground as they grow to a harvestable size (3-5 inches tall). Do not pull upwards and uproot the plant during harvest. Once leaves have been harvested, continue to care for plants in order to grow more leaves for a second or third harvest. Onions (Bulbing) Harvest Window: May 25 - June 15 After onions form bulbs at the soil s surface, their necks will weaken and the tops will fall over. When half of the tops have fallen, the onions are ready. o harvest, loosen the soil with a shovel, and pull the whole plant out of the ground. Brush off soil, but do not wash. Onions (Spring) Harvest Window: April 10 - May 30 Harvest spring onions by pulling the whole plant from the soil. ypically, you will need to loosen the soil with a shovel. Peppers Harvest Window: May 5 - June 30 t or snip pepper stems just above the fruit. Harvest peppers when young and green, or mature. Perennial Herbs Harvest Window: Year-round Pinch off leaves by hand, or for larger harvests, cut or sip stems with clippers. Fresh herb leaves can be harvested as they grow. Harvest the top 1/3rd of plant or only the leafy tips to encourage new growth. Radishes Harvest Window: October Pull the entire plant out of the ground to harvest. Harvest when top of radish root reaches 1 in diameter. Radishes will be best when harvested young. omatoes Harvest Window: April 25 - June 30 Pull ripe tomatoes from the vine when mature in color and have a slight 'give' when squeezed.
