4 REGISTRATION REQUIREMENTS Registration is required one week in advance, unless noted otherwise. Class fees must be paid in advance. You may pay at the Whitley County Extension Office. Please bring exact cash OR make out a check payable to Whitley County Cooperative Extension. We currently do not accept credit or debit cards. If you cannot attend a class you have registered for, please let us know so that we can let someone on a waiting list fill the empty spot. Registration is required to receive notice of class changes or cancelations. Notifications will be made by phone. If Whitley County Schools are closed for inclement weather, all Extension classes will be canceled. Feel free to call the Extension Office ( ) or check our Facebook page (Whitley County Cooperative Extension to confirm cancelations. Classes are created with adults 18 years and older in mind. If there are exceptions, it will be noted. All classes listed in this booklet will be held at the Whitley County Cooperative Extension Service, (Goldbug location) Williamsburg, Kentucky, unless noted otherwise.

There will be vendors, informational booths, giveaways, and activities for kids! 7 E a s y Soap Making Learn the basics of making Melt and Pour soap! This easy method is great for making molded soaps, with all kinds of possibilities for scents, colors, and fun extras! May 8th at 5 p.m. Register by May 1st Cost: $5 Limit: 10 G rilling This class will cover topics to keep your grilled food safe during the upcoming summer holidays. We will discuss proper cooking temperatures, recipes, and have samples. May 18th at 11:00 a.m. Register by May 11th Cost: Free! Limit: None

8 S m o c k i n g Join us and learn how to do the smocking technique by hand! June 6th at 10:00 a.m. Register by May 30th Cost: $5 Limit: H Camp Whitley County 4-H Camp will be held June 12-15, 2017! Where do we camp? We spend 4 days and 3 nights at J.M. Feltner 4-H Camp in London, KY on Highway 229. Who can go to camp? Camp is available to youth ages 9-14 as of June 12, 2017 How much is camp? With support from our Extension District Board and 4-H Council, the cost of camp has been lowered to $150. This includes lodging, meals, snacks and a t-shirt. Are there scholarships available? We encourage parents to pay as much as they can of the camper fee. We do, however, have scholarships available. Scholarships are on an as needed, first-come, firstserve basis. The deposit of $50 must still accompany the registration form. What do campers do at camp? Campers participate in classes such as obstacle courses, zip lining, sewing, crafts, fun foods, riflery, canoeing, archery, dance and recreation, fishing, games, basketball, rocketry and more! Campers sign up for classes on the first day of camp. What do I do if my child wants to go to 4-H camp? Fill out a pre-registration form (available online and at the Extension Office). You can then bring it by the Whitley County Extension Office or mail it to the address on the form. We will send you a camper packet after receiving this initial application. 13 Once we start to see strawberries at the grocery store and farmers market, we know the warm months of the year are right around the corner. Many people enjoy picking strawberries at local farms and orchards. This is a great way to teach children about how strawberries are grown and when they are in season. Strawberries have many nutrients that are good for our overall health. Their bright red color indicates high levels of antioxidants and they are loaded with other minerals and vitamins including vitamin C. Another great thing about strawberries is their natural sweetness that can be used in any dish at any time of day. Try strawberries in your cereal or yogurt for breakfast, in a fruit salad at lunch or in a strawberry pie for a special occasion. For a great strawberry recipe, try the Spring Harvest Salad from Plate it Up! Kentucky Proud. Source: Heather Norman-Burgdolf, Extension Specialist for Food and Nutrition, University of Kentucky; College of Agriculture, Food and Environment Ingredients: 5 cups torn spring leaf lettuce 2½ cups spinach leaves 1½ cups sliced strawberries 1 cup fresh blueberries ½ cup thinly sliced green onions Dressing: 4 teaspoons lemon juice 2½ tablespoons olive oil 1 tablespoon balsamic vinegar 1½ teaspoons Dijon mustard 2 teaspoons Kentucky honey ½ teaspoon salt ¼ cup feta cheese crumbles ½ cup unsalted sliced almonds Directions: 1. Combine leaf lettuce and spinach leaves with sliced strawberries, blueberries and green onion in a large salad bowl. 2. Prepare dressing by whisking together the lemon juice, olive oil, balsamic vinegar, Dijon mustard, honey and salt; pour over lettuce mixture and toss to coat. 3. Sprinkle salad with feta cheese and sliced almonds. 4. Serve immediately.

14 During this time of year, you may notice that your neighbor s yard is in a constant state of blooms green grass, well-trimmed bushes and breathtaking flowers. If you are interested in revamping your own yard s landscaping, here are some budget-friendly tips to keep in mind: Divide your landscaping project into zones and tackle each zone one at a time. Doing so will allow you to budget and save for each landscaping zone. Before making a trip to your local gardening center, have a plan. Know which plants and materials you will be buying and how much. Your garden center may also be running sales so be sure to research those while planning your landscaping project. Talk with your neighbors to see if they are planning any projects that require some of the same equipment that you will be using. For instance, if you will be renting a tiller, you can share the costs with a neighbor who will also be using that piece of equipment. Source: Jennifer L.
