6 DAY ONE DINNER: Red Lentils with Potatoes For lentils ½ Tablespoon olive oil ¼ yellow onion, diced (¼ cup) ½ teaspoon grated ginger ½ clove garlic, minced ½ zucchini, diced (1 cup) ½ red bell pepper, diced (½ cup) ¾ teaspoon curry powder Dash of kosher salt Pinch of ground pepper Pinch of crushed red pepper, optional ⅓ cup red lentils ½ cup light coconut milk ¼ cup water 2 Tablespoons toasted chopped cashews 1 Tablespoon chopped cilantro 1 lime wedge 1.
