2 Chorizo Con Queso Dip with Black Beans Creamy cheese dip with chorizo is a perfect Mexican-inspired appetizer. INGREDIENTS: - 8 oz. Contigo Queso Blanco Dip ( /#10) - 2 oz. chorizo - 1 tsp. Peak Fresh Produce Garlic ( /5 lb), clove(s) (minced) - 1 oz. West Creek Black Beans ( /#10 lb) - 1 Tbsp. jalapeño pepper - 8 oz. Contigo Tortilla Chips ( /16 oz) INSTRUCTIONS: Pre-Preparation: - Heat Queso Blanco Dip in steamer or water bath for 30 minutes or until product reaches 140 F for 15 seconds - In a medium skillet, over medium heat, add chorizo and garlic and cook through - Hold hot until ready for service Per Order Preparation: - In a small cast iron skillet or ceramic dish, add 8 oz. Queso Blanco Dip - Place 2 oz. chorizo in center of Queso Blanco Dip. Top chorizo with 1 oz. black beans and 1 Tbsp. sliced jalapeños - Serve immediately with 8 oz. blue corn tortilla chips

6 Seared Red Snapper with Coconut Couscous Empire s Treasure Red Snapper, /10 oz Roland Couscous, /5 lb Coco Lopez Coconut Cream, /15 oz McCormick Cumin, /14 oz West Creek Chorizo, /5 lb Arugula, /3 lb Delectables Salt, /5.2 oz Delectables Pepper, /2.55 oz Piancone Oil, /750 ml Peak Tomato, /10 lb Peeled Garlic, /1 ea For Chorizo Oil: Dice chorizo, or use ground chorizo. Place in a hot pan. Sweat until all the juice and oil are out of the product. If need be, use a chinoise to make sure your oil is sifted through. Place in a squeeze bottle or a container and set aside. Coconut Couscous: Bring water and Coco Lopez to a boil. In a mixing bowl, place couscous, oil, salt, pepper and cumin. Pour the boiling liquid over and mix well. Let sit for 10 minutes. Arugula, Tomato Salad: In a sauté pan, place the garlic and toss with the tomoatoes. Place arugula in a small bowl and mix it in with the tomatoes and garlic. Plating: Use a mold and place the couscous down on the plate. On a slight angle, place the snapper beside the couscous. Place the arugula by the couscous. Finish the dish with the chorizo oil on the arugula (if desired, you can also place the chorizo oil on the fish.)
