2 DALAMARA Paliokalias Red 2013 Xinomavro Naoussa 12 x 750 ml Made from a patch of dry-farmed vines planted on their own roots nearly 100 years ago. They weathered the warmth of the vintage well, turning out a ripe red dense with chewy, drying tannins. Spicy, smoky and cedar-scented, it's built for the long haul, wanting another five to ten years to show more detail. That elevation makes for a vibrantly fresh, crisp wine, all lemon zest and fresh-cut herb flavor. The pine resin is an extra breath of fresh air, a high-toned note with a cooling effect that recalls mastikha, while a seashell minerality holds the wine firm. Winemaker Yiannis Paraskevopoulos relies on vineyards in Pygros, the highest and coolest point off the island, to attain this lean profile, and vinifies the wine entirely in stainless steel. "It's not easy-going but it can work with a lot of foods; you can even drink It with lamb. "Take a tip from Kouiri, however, and decant it before serving. Thalassitis Oak Fermented (O.F.)White 2014 Assyrtiko, Oak Fermented Santorini 6 x 750 ml Thalassitis Oak Fermented is made from 100% Assyrtiko free-run must fermented in 100% new 225L French Oak casks from the Nevers Forest for 5-6 months during which time the yeast lees are put into suspension by stirring (bâttonage). The result is a beautifully balanced, rich and velvety ront wine with distinct smoky notes and citrus hints. Full bodied with a lacy and long finish, THALASSITIS OAK FERMENTED is a well suited to complicated and adventurous cuisine, far beyond the stereotype white wine-sea food. The grapes, grown In the cool, sunny heights of Koutsi, ripened ten days earlier than those in the valley, coming in well before September's rain; twelve months in oak, only ten percent new, smoothed and lengthened the tannins without adding any noticeable flavor. The end result is firm and savory, a wealth of stony minerality underpinning the cherry flavors. Approachable now, this will continue to age well overt the next decade.
