7 CIELO Regional, Italy 4 Generations of Venetian values. In 1908 great-grandpa Giovanni fell in love of a small estate overlooking the Romeo and Juliet castles. The following generations established a new winery created on the company s present premises and expanded their wine horizons to encompass other national wines. Sensitive to the subject of environmental protection in vinegrowing, Cielo e Terra Gruppo Cantine Colli Berici has been working on a project of organic viticulture for over 10 years.

8 APPASSIMENTO SANGIOVESE / PRIMITIVO IGT Puglia Garnet red. The nose is a harmonic and fine blend of dried cranberries, currants, nutmeg and pepper. In the mouth it is vibrant with ripe berry fruits, smooth with velvety tannins. The very long finish features the typical notes of the Appassimento technique, that is raisins and spices. VINIFICATION A unique Apulian red wine, made 100% with a natural grapes drying process called APPASSIMENTO. 3 PASSO NEGROAMARO / SANGIOVESE Organic IGT Puglia Deep red with garnet notes. Intense and mature fruit, with oak notes. Rich and mature fruit, with soft oak hints. A muscular wine, unique for complexity and harmony. VINIFICATION 3 Passo, meaning 3 Steps in Italian, produced following these 3 steps. 1. Partial Appassimento (Grape Drying) for a more concentrated fruitness. 2. Over pumping of the must in a tank at cold temperature to extract sweet tannins and dark colour. 3. Ageing in oak to enhance smoothness and longevity. AMARONE DELLA VALPOLICELLA DOCG Intense garnet red. Floral, elegant, mature aromasfloral, elegant, mature aromas of Christmas pudding andof Christmas pudding and sweet black cherry. Dry yet fruity, medium-full body and thought-provoking. Dried forest berries, salted caramel chocolate truffle, polished wood, and dusted jerked meats. 9 CORDERO DI MONTEZEMOLO Piedmonte, Italy Since 1340, 19 generations one after another, have managed the Monfalletto property in the town of La Morra, the center of the production of Barolo wine. Even today, the property is entirely family-run. Giovanni Cordero di Montezemolo and his children Elena and Alberto are the protagonists of this millennium. The historical single-body vineyard area of 28 hectares (69 acres), rare for the area, extends over all sides of the hill. The land has always been cultivated with the various local varieties, selected and distinctly planted according to sun exposure, type of soil and the altitude.

The palate reveals good structure with the fruitiness first seen on nose, and fir acidity. Long finish COSTASERA AMARONE CLASSICO DOCG Bright, intense ruby red. Prominent bouquet of ripe berry fruit, sweet and bitter cherries, and hints of plums tinged with spices, such as cinnamon and cloves. Intense and distinctive on the palate, full bodied and attractive, with the richness of the alcohol content well balanced by good supporting acidity. TASTING NOTE The wine has a straw yellow color and, on the nose, it offer flo al sensation that recall the aroma of acacia blossom, with hints of pears as well. Its fl vour is intense and very well-balanced, with fruity notes of apples and pears. AREA OF ORIGIN Veneto and Friuli. The soil is deep alluvial on well exposed hills. Intense red. It displays inviting scents of blackcurrants with hints of plums and herbaceous notes. The soil is calcareous, flaky debris, and prevalently pebbly. Ruby red. This wine offers intense fruity aromas of wild cherries, vanilla and hints of toasting. A rich, full-bodied wine, round and warm on the palate. AREA OF ORIGIN Vineyards located on the hillside areas of Valpolicella. The soil is calcareous, flaky debris, and prevalently pebbly. Ruby red. This wine displays assertive aromas of morello cherries, but also of blueberries and currants, which give way to liquorice notes and toast-like hints. 28 ROMEO & JULIET PASSIONE PASSIONE BIANCO GRAPE VARIETIES Garganega 100%. VINIFICATION This white wine is obtained with the appassimento technique: the Garganega grapes are harvested in advance, left to dry in trays for a short time to lose weight, concentrating sugar and aromas. They then macerate for 12 hours to enhance complexity and structure. At the end of the fermentation a part of the wine is matured in wooden barrels for some months before blending and bottling. STYLE An alluring white wine. In thiis dry and well ventilated environment where the humidity level is carefully controlled, the grapes lose around 30% of their water content and gain high sugar concentration. The vinific tion process takes place in separate steel tanks. Maturation in oak tonneaux (at second use) for 3 months. The grapes are blended and malolactic fermentation follows to harmonize and soften the wine. STYLE Deep ruby red in colour. The nose has intense aromas of red berries with hints of spices. 29 POLETTI Emilia Romagna, Italy The company was founded by Aurelio Poletti in As a result of his commitment, followed by that of three generations of his descendants and other hard, honest workers, the company has continued to offer high quality products and services. Casa Vinicola Poletti s production is based on its own grapes that come from fifty hecta es of vineyards. The company processes around 50,000 quintals of grapes, some of which are also provided by selected local growers, on its own wine-producing plant, where 20 million litres of wine are made and bottled every year.

32 ESTATE VALDADIGE PINOT GRIGIO DOCG AREA OF ORIGIN To create this signature varietal, the fully ripe Pinot Grigio grapes are harvested in the Alto Adige vineyard in the Italian Alps by hand to ensure that the clusters remain whole and retain their delicate aromas and fl vours. WINEMAKING Santa Margherita was the fir t company to vinify pink Pinot Grigio grapes as a white wine. In this process, the must does not remain in contact with the skins, from which it would otherwise take on the rusty color. This dry white wine has a straw yellow colour. Its clean, intense aroma and bone-dry taste, with an appealing fl vour of Golden Delicious apples, make Santa Margherita s Pinot Grigio a wine of great personality and versatility. 107

36 VALIANO Tuscany, Italy Our philosophy at Valiano is to produce elegant wines that reflect the egion and ultimately the characteristics of each particular vineyard. Tradition comes in the presentation and the character of our wines focused on expressiveness of grape variety in relation with its territory. Valiano is immersed in the typical Tuscan countryside, in the heart of Chianti Classico spreads over 230 hectares, 70 of which are dedicated to specialised vineyards. While the Mediterranean sun is conducive to an extended growing season, there is also a considerable variation between day and nighttime temperatures. Such temperature variations work to the benefit of grapes in that it not only facilitates berry growth and coloration but also promotes complexity in grape flavours.

39 VIGNETI DEL SALENTO Salento, Italy SALENTO: LIGHT AND STONE Light and Stone - that s where it all begins in the land of Salento. The light penetrates in the secret clefts of the ground with its Mediterranean character, it warms the red colour of the soil, draws the scents from the sea and makes the sparse bunches of grapes turn red. The solid, indestructible stone, soft and malleable, emerges from the subsoil and tangles with the Trulli (typical cylinder shaped houses with a conical roof) across the meadows where the trees are hundreds of years old. In this special atmosphere the old grapevines lay still and silent, in the same place for almost a century. After years of research to find the best and oldest vineyards in the Manduria and Sava area which, due to their specific soil and clim te conditions, are considered the most suitable areas for the main grape variety: the Primitivo.
