1 The Wine Emporium is proud to offer the 2011 vintage wines from Domaine William Fevre, Chablis, FR. Made up of 51 hectares and 90 separate parcels, Domaine William Fèvre s vineyards enjoy both a great complexity and incredible richness. To preserve their environment, the vineyards are carefully managed. Limiting yields is a given, and the vines have been cultivated using organic methods for many years. The domain carries out harvesting by hand in small crates followed by rigorous sorting, and pays close attention to detail at every stage of the process. The domain uses old barrels with an average age of 6 years rather than new oak, in order to preserve freshness and minerality and enable the subtle nuances of Chablis terroirs to fully express themselves. This careful process allows us to produce rich wines of great aromatic purity, which keep their unique character and express the particular characteristics of each vintage. The 2011 Vintage - Even in Northern Burgundy this vintage was early and started with a particularly sunny, hot and dry spring except a few stormy spells in June. Conversely July was very poor in sunshine and the beginning of August was very rainy. A fine weather got the upper hand at the end of the month and accompanied the whole picking which begun particularly early at the Domain. This is how we obtained some very ripe and very balanced wines. Their aromatic complexity, made of citrus notes, white flesh fruit or apricot, is entirely remarkable. The mouth combines freshness, classical minerality and richness at the same time.
2 Introduction to the 2011 vintage and tasting notes/reviews by Allen Meadows, Régisseur Didier Séguier describes 2011 as a "vintage where it was necessary to pick relatively early, at least if you wanted to preserve the acidity. We were one of the first domaines to begin and we started on August 31st and while you're never entirely sure at the time you make the decision, in retrospect I am very happy we chose to start early. It's almost difficult to believe but even August 31st was 104 days after the flowering and given that 100 is the rule of thumb, we still had plenty of ripening time because the growing season started so early. We had reasonably good potential alcohols at between 11 and 12.2% but more importantly, excellent phenolic maturity and between 5 to 6 grams of acidity. The crop was mostly quite clean and on the left bank we had normal yields but on the right bank they were a bit lower than normal, partially because of early season hail in certain sectors and also because the berries were quite small. I like the 2011 vintage a lot and while it's not as classic in style as 2010 or 2008, the wines are still very Chablis in character and that is what is important." I have mentioned this before but it bears repeating so readers will not be surprised: for several years now Fèvre has elected to bottle its entire range, including the grands crus, under the Diam cork. Note further that effective with the 2008 vintage the label for the Vaulorent no longer indicates Fourchaume on it; previously it said "Fourchaume - Vignoble de Vaulorent" Domaine William Fevre The Estate Wines 2011 Domaine William Fèvre Petite Chablis - $25 per bottle A hint of unabsorbed sulfur detracts only mildly from the otherwise fresh green fruit aromas that are laced with hints of iodine and saltwater, both of which are picked up by the racy, intense and well-detailed flavors. This dry and persistent effort is really quite good for what it is. It would make a fine choice for an inexpensive house white. 88 Points, Drink Domaine William Fèvre AC Chablis - $32 per bottle As with the two previous wines there is a trace of post-bottling sulfur in evidence though it's not enough to significantly mar the attractively complex nose that is classic Chablis in character. There is very good richness to the detailed but opulent flavors that remain focused and display plenty of finishing minerality. There is really lovely intensity to the dry and precise finish and overall, this offers terrific quality for a villages level wine. Recommended Points, Drink
3 2011 Domaine William Fevre The 1er Cru s 2011 Domaine William Fèvre Premier Cru Mont de Milieu - $55 per bottle The classic Mont de Milieu hints of exoticism are present in the form of dried peach and apricot along with green fruit and sea breeze nuances. There is excellent volume and impressive richness to the suave and seductively textured flavors that brim with dry extract before terminating in a focused, long and strikingly powerful finish. I quite like this plus it should age to good effect. Sweet spot outstanding Points, Drink Domaine William Fèvre Premier Cru Les Lys - $55 per bottle This is almost achingly elegant with its airy nose of essence of tidal pool, mineral reduction and rose petal. The racy, intense and beautifully precise flavors are salty, clean and bone dry and though they are less complex than those of the Montmains, they are delicate and superbly refined Points, Drink Domaine William Fèvre Premier Cru Montmains - $55 per bottle This is compositionally similar to the négociant version though this is a bit more elegant and layered. There is excellent volume and fine mid-palate concentration and here too there is a distinct saline influence to both the intensely mineralinflected flavors that terminate in a balanced and impressively long finish. This is a strikingly complex effort that should amply reward mid-term cellaring Points, Drink Domaine William Fèvre Premier Cru Vaillons - $55 per bottle Saltwater, floral notes and subtle spice nuances characterize the aromas that slide gracefully into rich, concentrated and relatively refined medium-bodied flavors that display excellent delineation on the solidly powerful and mineral-driven flavors. This is dry and pure if not quite as complex as the domaine version of the Montmains Points, Drink Domaine William Fèvre Premier Cru Montée de Tonnerre - $70 per bottle An expressive, airy and cool nose features notes of stone, sea water, floral aromas and white orchard fruit. This is also exceptionally rich and concentrated yet the medium weight flavors remain light and pure with absolutely no trace of heaviness on the mouth coating and stunningly persistent finish. This is beautifully refined yet there is no absence of muscle or punch Points, Drink ES PREMIERS CRUS - continued 2011 Domaine William Fèvre Premier Cru Fourchaume - $70 per bottle Here the nose offers up an abundance of Chablis character with a gentle hint of wood framing the aromas of mineral reduction and green fruit. There is good volume to the generous, rich and attractively textured flavors that possess good power and very solid density, all wrapped in a refreshing, stony and saline-infused finish. This is lovely Points, Drink
4 2011 Domaine William Fèvre Premier Cru Vaulorent - $83 per bottle This is quite aromatically similar to the Fourchaume though here there is also a discreet hint of sulfur and the wood is all but invisible. There is fine concentration to the powerful, suave and intensely stony flavors that possess superb finishing complexity on the balanced, clean, very dry and energetic finish. As is often the case, this delivers grand cru quality. Don t miss! Outstanding Points, Drink Domaine William Fevre The Grand Cru se S GRANDS CRUS 2011 Domaine William Fèvre Grand Cru Les Clos - $130 per bottle This was quite closed and somewhat difficult to read but aggressive swirling grudgingly liberated ripe aromas of sea breeze, pear, lemon rind, oyster shell and mineral reduction plus an abundance of typical floral scents. The large-scaled flavors are overtly powerful and impressively concentrated as there is plenty of palate staining dry extract that also buffers the very firm acidity that supports and shapes the gorgeously precise finish. This explosively long effort possesses exquisite balance and the tightly wound flavors are going to need at least a decade to completely bloom. A knock out Points, Drink Domaine William Fèvre Grand Cru Valmur - $115 per bottle This could be from nowhere else but Chablis with its ripe yet cool, airy and refined nose of green fruit, mineral reduction, sea breeze and iodine. There is positively gorgeous intensity and laser-like precision to the rich but wonderfully vibrant flavors that display moderate austerity on the focused and remarkably persistent finish. This is a really lovely combination of power and refinement Points, Drink Domaine William Fèvre Grand Cru Vaudésir - $115 per bottle This is noticeably riper than the Bougros with hints of exotic yellow fruit along with hints of spice and mineral reduction. Here too there is impressive size and weight to the solidly well- concentrated big-bodied flavors that possess an opulent mid-palate before ending in a mineral-driven and intensely saline-infused finish that just goes on and on Points, Drink Domaine William Fèvre Grand Cru Les Preuses - $115 per bottle If the Côte de Bouguerots is the biggest wine in 2011 then the Preuses is arguably the most aromatically complex with a broad ranging nose of perfumed and ripe scents of oyster shell, sea water, citrus and white flowers. The silky and refined flavors are wonderfully seductive with an intense minerality to the austere, bone dry and balanced finish that exudes hints of saline and iodine. In sum, this is flat out stunning Points, Drink
5 2011 Domaine William Fèvre Grand Cru Bougros Côte de Bouguerots - $115 per bottle This is also completely classic and even more aromatically complex with a plethora of sea shore nuances to the cool green fruit scents. On the palate this is dense, powerful and quite serious with brooding flavors that brim with dry extract that buffers the firm acid spine on the intensely mineral-driven and explosively long finish. This is the biggest wine in the range yet impeccably well-balanced and if not exactly refined, then certainly not rustic either. A 'wow' wine , Drink Domaine William Fèvre Grand Cru Bougros Bouguerots - $98 per bottle This also displays an abundance of classic Chablis character with iodine, tidal pool and ripe green fruit aromas that precede dense, muscular and overtly powerful flavors that culminate in a saline- infused and impressively persistent finish where a touch of wood surfaces. As Bougros typically is, this is a big wine with almost painful intensity. While this slightly smoky effort isn't particularly refined, it is certainly dramatic and imposing Points, Drink
