1 2011 Collection American Oak Quercus Alba Demptos sources its ultra premium American oak from a small, 50 mile radius surrounding Cuba, Missouri. Our American Oak is naturally air dried and seasoned for up to 36 months in Missouri before being milled and then custom coopered in Napa, California. Demptos American oak barrels offer your wine an elegant sweetness balanced with rich aromatics and delicate flavor compounds. Hungarian Oak Quercus Petraea & Robur With the same European species grown in France, these subtle oaks from Hungary compliment many varietals of wines. The Demptos Hungarian Oak is sourced from several regions of Hungary from the Lake Balatom region of the Southwest to the Tokai region of the Northeast for balance and complexity. A great value for your finest wines! French Oak Quercus Petraea & Robur In order to maximize the consistency of our oaks, Demptos selects by grain from within our forest regions. This heightened level of selection allows winemakers to more accurately control the oxidation potential, extract rate, tannin content and aromatic contribution. Via natural air drying and seasoning, we naturally increase the total polysaccharide levels in our oaks. Cooper Select TG barrels offer tight grain benefits of slow extract and rich aromatics and delicate tannin extraction. Cooper Select MTG & MG barrels offer middle body texture and a complex balance of aroma, flavor and delicate oxidation.
