(AM) The landscape of red winemaking continually changes, and this session will discuss issues from extended maceration and oxygen management to vessels and SO2. adjust winemaking practices to make sure the wine is microbially sound? What is the future of vineyard workers and how does a vineyard owner or manager determine when to move to partial or full mechanization?
