2 2,600 Years of History in Provence The grape wine is introduced in France in the year 600 B.C. by the Phoenicians. Then the Romans divide the south of France regions into large domains and, being experienced producers, introduce new grape varieties and improve the viniculture methods. The wines of Provence are well known abroad during the Middle Ages, and are among the favourite wines of the French kings. In 1977, they are awarded with Appellation d Origine Controlée classifi cation. The Côtes de Provence wines have the innate sophistication of all the best wines : they are subtle enough to accompany the most delicate dishes such as truffl e or lobster, yet they are also robust enough to underline the wide range of the Provencal cuisine fl a- vours. Glossary AOC - Appellation d Origine Contrôlée : The top of the line, AOC applies to French wines from precisely specifi ed regions. The control includes : variety of grapes, density of the vines, production size, alcohol level, as well as the methods of culture and vinifi cation. Cru Classé : A high quality classifi cation used by only a few wineries.

3 The Red Wine The White Wine The Rosé Wine This wine can have many aspects, depending on its age : subtle, with red fruits or fl owers fl avours ; or strong, after having aged for several months in oak barrels. They are perfect for accompanying red meat and cheese. Those wines come from the white grapes variety, which production remains limited, but it is the most refi ned of all. The fruity white wine is excellent served with seafood and fi sh. Left to age for a few years, it is perfect with white meat and cheese. They are the most popular in Provence. It is also the most delicate to produce, and has the lighter taste too. It can be enjoyed as an simple drink or during a meal, and goes along with many dishes.
