3 Why monitor the temperature of bottled wine? As with uncontrolled oxygen exposure, when wine in a bottle is exposed to high temperatures (>25 C) as well as temperature swings: Quality is damaged Aging chemical reactions are accelerated Color, aroma and aging ability are degraded Bad storage or shipment conditions also have an impact on packaging, notably on closure systems: Oxygen transfer rate through the closure is accelerated at high temperature : diminution of aging ability Intensification of wine leakage and closure «push-out» risks Source: IFV-BIVB 3

The customer notes the date, the hour, the container/pallet or shipment number as well as the last 4 digits of the sensor ID number 6. Customer fills all this information into the Excel sheet provided and s it to WQS 7. Sensors are applied on pallets or in the container 3. Customer chooses the shipments to monitor Day 2 or 3 4. 6 Sensor Return Data Collection The pallet or container arrives at its destination with the sensors attached. The recipient must return sensor(s) to eprovenance by mail : By using the self-addressed prepaid envelope included with the sensor(s) By using their own envelope and postage Data collection: Data are available through a secure, customized dashboard on the Online Monitoring System If the customer agrees, the recipient can collect the recorded data directly from the sensors on the pallet or container using an NFC-equipped Android smartphone. 6

7 Data Delivery A synthesis report, statistics and benchmarks are delivered to the producer, as well as results relating to the shipment and the improvements to be implemented Results are also communicated to the recipient (importer, customer ) Step for improvement can be put in place 7
