2 SAKE To make sake, rice is polished so that it is smooth and white. The more the rice is polished, the higher quality the sake. When the rice is polished to 70% or less of its original size it is called Junmai, and is classed as premium sake. Junmai sake has a deeper colour and less floral aroma, but more body and acidity making it smooth and rich to drink. Once the rice is polished to just 60% of its size, it is called Junmai Ginjyo and it is brewed by a method called Ginjyo zukuri. When the rice is polished to just 50% of its size, it is called Junmai Daiginjo. This is low temperature fermentation, which gives a lighter, more delicate flavour. Like wine, sake sourced from different areas of Japan takes on a vast array of flavours and aromas. 4 KOKURYU SELECTIONS 黒龍酒セレクション 黒龍酒セレクション Kokuryu Sake Brewery, founded in 1808, is in the Fukui Prefecture that faces the Sea of Japan. It is home to a serene temple training Buddhist monks. The brewery supplies its own sake to the Imperial palace. They released the first Daiginjo sake to the market in The brewery is known as one of the best sake breweries in Japan. The selections here are very rare and hard to find even in Japan itself. Fukui Prefecture is famous for local seafood, especially Echizen gani, Japanese crab.
