The Qantas Rockpool Sommeliers team features 16 highly experienced sommeliers and mixologists, who, over 4 days in August 2017 blind tasted, reviewed and selected from over 1200 Australian wines. THE RESULTS Five Outstanding RISKY BUSINESS wines were chosen, and are available now on Qantas First Class International Flights. 3 MARGARET RIVER WESTERN AUSTRALIA WINE MAKERS COMMENTS > This wine is a blend of 85% barrel fermented wine and a small portion of unwooded wine to add freshness and brightness. Only free run juice was used, then slightly settled, meaning the coarser solids were settled out and then the juice put to barrel. Fermentation occurred in barrel to dryness, wine sulphured at completion of primary fermentation as malolactic fermentation was not desired. No lees stirring, but wine remained on lees for 11 months in barrel, all in French oak barriques. A modern Australian Chardonnay with more lifted fruit character. PRODUCTION > This wine is a blend of 2 vineyards, both with a low intervention approach to viticulture. Hay Shed Hill and Bantry Bay which is about 5km from Hay Shed Hill in the Margaret River Region. COLOUR > Pale, bright green hues. AROMA > Mineral and grapefruit aromatics without being overtly fruity. PALATE > The citrus and mineral flavours continue through the palate rather than lifted stone fruits common in Australian Chardonnay. Elegant texture with some lees influence. The low winemaking intervention is evident and has resulted in a bright modern Australian Chardonnay. 4 KING VALLEY VICTORIA WINE MAKERS COMMENTS > The wine has been made specifically in the classic Pinot Gris style a slight richness, textured and balanced by good acidity. In comparison to Pinot Grigio, this wine offers greater complexity and a more intense mouthfeel. PRODUCTION > Slow gradual ripening saw harvest dates pushed back 2 to 3 weeks. The result being intensely flavoured and super elegant wine, with this 2017 vintage potentially being our best to date. COLOUR > In the glass, the wine appears light, with a pale light yellow straw colour. AROMA > The nose displays lifted pear and green apple characteristics along with strong aromas of citrus. PALATE > A slight textural and richness through to the palate leaving pronounced acidity, a character typical of cool climate vineyards. FOOD MATCH > Perfect with seafood risotto. Sourced from the coolest vineyards, the wine has a hint of tropical fruits with bright citrus notes and a minerally dry finish. PRODUCTION > This wine is produced from selected low intervention vineyards, then hand made by using small batch winemaking techniques. COLOUR > Light straw with a delicate green hue. AROMA > Lifted notes of pears and peach with a savoury spice element. PALATE > This wine has a solid acid backbone giving vibrancy and freshness. It s a delicious alternative and a great summer aperitif. Risky Business Prosecco is versatile and fresh and is a great wine for celebrating any occasion. COLOUR > Pale straw. AROMA > Pear with mineral complexity and a touch of toastiness. PALATE > This light and dry wine has mouth filling bubbles and zesty citrus fruit on the mid palate. It finishes delightfully dry with hints of blanched almonds. An ideal aperitif on a summer s day fresh, light and crisp. 7 MT BARKER WESTERN AUSTRALIA WINE MAKERS COMMENTS > The fruit was crushed and the juice run off after a short time on skins so not too much colour was picked up. Fermented in tank at cool temperatures for half the fermentation period then transferred to older oak barrels. Fermented to dryness and kept on lees for a short time. PRODUCTION > Pinot Noir is the ideal choice for dry style Rose because of its light colour and natural flavour complexity. Made from the best Pinot Noir grapes from the cool climate Mt Barker region. COLOUR > A really beautiful, bright and delicate, very pale salmon pink. AROMA > Has light cherry aromas and hints of berry fruits though not overly fruity. PALATE > This is a dry Rose. It is quite restrained, is more similar to the styles of Southern France being crisp and very dry with delicate fruit characters, light savoury notes and a very good texture. Rose made from Sangiovese has a lovely blend of savouriness and texture that matches well to all sorts of food. COLOUR > Classic pale rose colour. AROMA > The nose exhibits strawberry and other red fruits, including cherry. PALATE > Soft acidity, creamy and a long dry finish. AROMA > A rich bouquet with ripe cassis and berry fruits, rich and opulent. PALATE > This wine has ample flavour and concentration in the classic Margaret River style. Intense fleshy and full mid palate with huge fruit weight with dark cherry and blackcurrant flavours. Fruit sweetness will become more apparent with bottle age. With deepest darkest colour this wine explodes with ripe fruit aromas and a dark fruit fleshy palate. Full of flavour, full of pleasure. PRODUCTION > This wine is produced from selected low intervention vineyards, then hand made by using small batch winemaking techniques. COLOUR > Very deep purple with a dark crimson hue. AROMA > Deep brooding plum fruit aromas with hints of spicy berries and violets. PALATE > This full bodied wine is well flavoured with delicious juicy plum and berry fruit characters. A full, round palate with fine lingering tannins on the finish. Enjoy now or cellar for 6 years or so. PRODUCTION > This wine is produced from selected low intervention vineyards, then hand made by using small batch winemaking techniques. COLOUR > Attractive crimson red with purple hues. AROMA > Generous fruity aromas of dusty plums with cherry ripe characters. PALATE > A great medium bodied wine with the best from all of these varieties. Sweet spicy fruit from the Shiraz. Savoury characters from the Tempranillo and the attractive lightness of the palate from the Grenache. Like a wine from the southern Rhone, its not too fruity and not too tannic has a gorgeous suppleness that would suit many foods.
