3 Local Suppliers - The Importance of Provenance Why is provenance so important when it comes to produce? You can probably imagine why knowing the origin of your food has ethical benefits and marks of quality, but provenance tells us a whole lot more. The origin of harvestable produce is an expression of terroir. Terroir (pronounced ter-wah ) is the complete natural environment, including the soil, topography and climate, which give the produce its unique characteristics. Where a crop is grown and its respective farming methods will determine how the produce will taste. Seasonal produce is at the heart of our menu and by working with some of the best producers in our area we can discover the finest ingredients. Our team then take these and handcraft new and exciting flavours for you to experience. + + Comboyne Culture + + Binnorie Dairy + + Bellingen Smokehouse + + Bago Bluff Glossary Fricasee Souffle Terrine Blanc de Blanc Cafe de Paris Buerre Noisette Pissaldière Vegetables sautéed and braised, and served with its sauce; traditionally a white sauce. A baked egg-based dish which originated in early 18-century France. It is made with egg yolks and beaten egg whites combined with various other ingredients and served as a savoury main dish or sweetened as a dessert. Most commonly refers to a French farce loaf similar to a pate, made with coarsely chopped ingredients. Terrines are usually served cold or at room temperature. Cassegrain Wines ever-popular sparkling wine infused with a cream based sauce. French; literally, white from whites. Complex butter based sauce, typically containing herbs, spices and other condiments such as eschallots, garlic and chives. Butter that is browned in the pan. Literally; hazelnut butter, due to its colour and slight nutty taste. A Provençal open tart resembling pizza, typically made with onions, anchovies, and black olives. Pissaladière is a specialty from Nice, in the South of France.
