3 2016 NAST ANNUAL CONFERENCE September GUEST ACTIVITIES Pike Place Market & Hands-On Cooking Demonstration Monday, September 12 9:00 a.m. - 1:45 p.m. Guests will begin the day with a private tour of Pike Place Market located just five blocks from the Fairmont. Following the tour guests will travel to The Hot Stove Society restaurant for a hands on cooking demonstration with renowned Seattle chef Tom Douglas. Guests will work together with the chef to prepare and enjoy a delicious lunch using the best of Northwest summer produce. Hot Stove Society Tom Douglas: Chef & Restaurateur As a chef and restaurateur, Tom Douglas is self-taught, not classically trained. Tom has always considered his taste memory, combined with years of tirelessly dining out in great restaurants, as his education. Tom and his staff ran a week-long intensive Tom Douglas Culinary Summer Camp for seven years and have offered some cooking classes at the Tom Douglas Restaurants for the last twenty years. These experiences affirm our belief that people want to cook and be connected to the food they eat. Hot Stove Society is our personal quest to educate everyone who has the desire to become a better cook whether they want to learn how to brew a perfect cup of coffee or butcher a whole pig.

4 2016 NAST ANNUAL CONFERENCE September GUEST ACTIVITIES Wine Tours at Avennia & DeLille Cellars Tuesday, September 13 9:00 a.m. - 2:15 p.m. Guests will get the opportunity to travel to Woodinville, WA, about 30 miles away from downtown Seattle, to explore wine country. The day will begin with a tour and tasting at Avennia winery. A private lunch and tour and tasting of DeLille Cellars will follow. Avennia wines use the classic French varietals and blends, with methods passed down over generations. They work within this context to allow Washington vineyards and terroirs to distinguish themselves. Terroir is only readily appreciable in a well-formed, harmonious wine. Avennia is run by Managing Partner Marty Taucher and Winemaker Chris Peterson. DeLille Cellars is a boutique artisan winery. The winery was founded in 1992 by Charles and Greg Lill, Jay Soloff and celebrated winemaker Chris Upchurch. The mission at DeLille Cellars has always been to create a new Bordeaux blend using Washington State vineyards. In 1992, the winery pioneered its Chaleur Estate Rouge and D2, both blends of Cabernet Sauvignon, Merlot, and Cabernet Franc. Avennia In 1995, the team at DeLille chose to make a barrel fermented blend of Sauvignon Blanc and Semillon for our first white wine: DeLille s Chaleur Estate Blanc. Guests will get the chance to sample these wines during the tasting. DeLille Cellars
