Mulberry St. Room 105 Fax: Kokomo, IN Website: Believe & Achieve Dear Members, I would like to thank Carolyn Kuhns and her officers and chairman for their service last year. Your support to myself and my officers and department chairman will be appreciated. July - August 2016 Some dates that need to be remembered are: State Officer forms are due immediately. September 12, Fall District Meeting at Fulton County March 8, County First Timer Winner to District Representative March 10, Career Advancement Scholarship March 23, Spring District Meeting at Grant County June 5, 6, and 7, Home & Family Conference - Sheraton Inn of Keystone at the Crossing I would like to encourage people to apply for these scholarships. As of June 2016, IEHA has raised nearly $150, for the Cancer Endowment Fund. The knitting or crocheting of comfort shawls will continue Home & Family Conference - State Officers President - Cathy Cook President Elect - Stephanie Jerabek Vice President - Cindy Saferight Treasurer Jan Gogle Secretary - Anne Moore Immediate Past - President - Jeanine Arnett There were 247 registered for the Home & Family Conference this year. The sessions were very interesting and informative. Dick Wolfsie, from channel 8, was very funny. The Sheraton Inn of the Crossing was very accommodating. The Melody Makers were 150 strong and sang beautifully. The talent show was laughable. Many items were entered in the Cultural Arts. There were pillows, paintings, quilts and needlepoint. Margaret Christenson, International Officer from Ontario, Canada and IEHA Exchange Homemaker gave an informative talk about Canada. Voting will be done on a County Project at the October Council Meeting. Jeanne Houser and Ramona Duncan are on the Marketing and Logo committee. If you have any ideas on what to sell, please give them to us. Condolences are sent to Jeannie Vondersaar on the passing of her sister. 2 Need old but barely used We Care sweatshirts. We Care Quilt Nancy Newell and Pat Tracewell thought it would be great if the Extension Homemakers would make a quilt for We Care out of old but barely used old We Care sweatshirts. We need about 9 to 12 more to finish the quilt. If you have some to donate call Pat Tracewell at or Nancy Newell at Learn-N-Share Special Interest Club Nancy Newell Learn and Share, special interest will be meeting June 28, 6:00, at Highland Park Church, 516 W. Sycamore. Bring items you are working, or anything you have questions about, or a idea to share. Hope to see you there. Contact, Nancy Newell, zucchini 1-16 ounce can stewed tomatoes 1 small onion - sliced 1-3 ounce can sliced mushrooms 1-12 ounce mozzarella cheese - shredded Jeanne Houser s Recipes Zucchini Italian Style Preheat oven to 350º. Layer zucchini, tomato, onion and mushrooms in a 9X13inch baking dish. Bake for 30 to 45 minutes or until the zucchini is tender. Sprinkle with cheese. Bake for minutes or until the cheese melts. 4 large green tomatoes 1 1/2 cup buttermilk 1 teaspoon salt 1 teaspoon pepper 1 cup self-rising flour 1 cup cornmeal 3 cups peanut oil Salt to taste Fried Green Tomatoes Cut tomatoes into 16 slices - 1/4 to 1/3 inch thick. Place into shallow dish. Pour buttermilk over tomatoes. Sprinkle with salt and pepper. Mix self-rising flour and cornmeal in shallow dish. Dredge tomato slices in flour mixture. Fry tomatoes a few at a time in hot oil in a large cast iron skillet over medium heat for 3 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with salt to taste. Serve warm.

3 Education Janalyce Hatton - Chairman Howard County Extension Homemaker Scholarship Recipients Congratulations! to this year's winners: Emily Harvath and Miranda McGuire. Each recipient received a Certificate, and a $500 Scholarship, at an Achievement Day awards ceremony on May 31. Emily Harvath, a 2016 Eastern High School graduate, will be attending Purdue University in the fall. She is a 10-year 4-H member and will be studying Pre-Pharmacy as a college major. Her parents are Alan and Marie Harvath. Miranda McGuire, a 2016 Eastern High School graduate, will be attending Purdue University in the fall. She is a 10-year 4-H member and will be studying Animal Science as a college major. Her parents are Paul and Renee McGuire. Strawberry Salad with Gorgonzola and Strawberry-Balsamic Vinaigrette Hands-On Time: 15 minutes Total Time: 15 minutes Vinaigrette: 1/2 cup sliced strawberries 1 tsp. honey 1 tsp. Dijon type mustard 1 Tbsp. Balsamic vinegar 1/4 tsp. kosher salt 1/4 cup grapeseed or canola oil In a blender (or in a tall jar using an immersion blender) puree strawberries. Add honey, Dijon type mustard, balsamic vinegar and salt blend to combine. While blending, gradually add oil and blend until smooth. Salad: 1 pkg. (4-5 oz.) baby arugula (greens) Pinch kosher salt 2 cups sliced strawberries 1/4 cup sliced, toasted almonds 2 oz. Gorgonzola or blue cheese - crumbled. In a large bowl, toss arugula with pinch of salt. Add just enough dressing to lightly coat arugula and toss gently. Transfer greens to four individual plates and divide sliced strawberries, almond and cheese among servings. Serve immediately, refrigerate any left overs. Berry Good Salad Salad 1/2 pint strawberries, sliced 1/2 pint blueberries 10 ounce spring salad mix 4 ounce goat cheese, crumbled 1 large shallot, thinly sliced 1 ounce dried cranberries 1 ounce dried raspberries 1 ounce chopped walnuts 2 pinches coarse black pepper (to taste) Vinaigrette 6 Tbsp. extra-virgin olive oil 2 Tbsp. red or white vinegar 1 tsp. dijon type mustard 1 Tbsp. finely chopped shallot 1/4 tsp. salt 1/8 tsp. ground black pepper To prepare the salad, combine all ingredients in a large salad bowl. Just before serving, add vinaigrette and toss well. To prepare vinaigrette, combine oil, vinegar, mustard, shallot, salt and pepper in a bowl. Whisk well. Per Serving:178 calories, 11g fat, 9mg cholesterol, 280mg sodium,18g carbs, 4g fiber, 6g protein

Remember, this is a good way to keep the Extension Homemaker's name before the public. Who knows, there is a possibility of gaining new members through this and the county Extension Homemaker's display, which will be located next to the Open Class display. Please mail a check to - Lydia Barnard, 2115 East-200 South, Kokomo, IN phone cup sugar 1 cup water 5 fresh mint sprigs 1 quart fresh strawberries, halved 2 quart cubed honeydew 1 3/4 cups cubed cantaloupe Ginger ale or sparkling grape juice Strawberry Melon Fizz Janalyce Hatton Serves 8 to 10 In a sauce pan, combine the sugar, water and mint; bring to boil. Boil and stir until a candy thermometer reads 240ºf (soft boil stage). Remove from heat; allow to cool. Discard mint. Combine the strawberries and melon. Just before serving, fill tall glasses with fruit and drizzle with 1 Tablespoon syrup. Add ginger ale to each glass.
