1 10 Minute Omelets Formatted: Centered Works great to get everyone fed at once & with very little clean up. Kids especially like it. Vegies (green peppers, onion, mushrooms) meat (ham, bacon, sausage) cheese (shredded - 1/8 cup per person) eggs (2 per person) milk/cream (1/2 Tablespoon per person) butter (1/4 teaspoon per person) salt & pepper Instructions Fill a pot 3/4 full of water & put on to boil. Your pot size will be determined by how many are participating. We use a Dutch oven pot to prepare 6-8 omelets. Cut up your favorite ingredients, green pepper, onion, mushrooms ham, bacon, and sausage (etc.) into small pieces. We do it ahead of time to save on the preparation & fuss. Put all ingredients on the table in bowls. Give each person a Ziploc sandwich bag and write their name on it with a permanent marker. Each person goes around the table with their bag & puts whatever ingredients they would like into it, then add the milk, butter, eggs & salt / pepper. "Zip" the bag up, try to get most of the air out of the bag to allow for expansion. Carefully kneed the bag to mix up the ingredients & scramble the eggs. Place the bag into the boiling water for 10 minutes to cook & you have multiple perfect omelets. ** If you use more than 2 eggs allow an extra 3-4 minutes for cooking time.

2 Breakfast Donut Holes refrigerated biscuits butter, melted cinnamon sugar Instructions Cut refrigerated biscuits into thirds, roll each piece into a ball. String onto skewers, leaving about1/2 inch between each. Brown over hot coals, turning constantly, till done through, about seven minutes. Push off skewers into melted butter & roll in a mixture of cinnamon and sugar

3 6-8 eggs bag of hash browns 1 c cheddar or jack cheese sausage, bacon, ham or steak onion garlic butter salt and pepper 1 can of green chilies Salsa Instructions Breakfast Pie Pour a little oil or bacon grease in pan, line a cast iron pan with uncooked hash browns, making a pie shell inside pan, cut several pats of butter, place evenly over hash browns, beat 6 to 8 eggs, cook sausage and bacon, onion, garlic, cut meat into chunks, add salt and pepper to taste and 1 cup of cheddar or jack cheese. Add green chilies, mix with egg mixture and pour into hash brown shell. Cover with heavy foil cook over campfire or on camp stove until egg mixture is cooked. Hash browns will be golden. Cut in slices add salsa or more cheese

4 Butterscotch Squares Makes 25 1/4 c margarine or butter 1 c packed brown sugar 1 egg 1/2 tsp vanilla 1 c all-purpose flour 1 tsp baking powder 1/8 tsp salt 1/2 c chopped walnuts Instructions Grease am 8x8x2-inch baking pan with a little shortening. In a medium saucepan melt margarine over low heat. Remove saucepan from heat. Stir in the brown sugar. Add egg and vanilla. Beat with a wooden spoon until well mixed. In a medium mixing bowl stir together flour, baking powder and salt. Add flour mixture and chopped walnuts to brown sugar mixture and stir until well mixed. Spread batter in the greased baking pan. Bake in a 350 degree oven for minutes or until edges are firm. Cut into squares while warm.

5 Cheese Melts thinly sliced meat sliced onion sliced green pepper cheese hamburger buns Prep Time: 30 minutes Total Time: 30 minutes PREPARATION Stack sliced meat on a piece of aluminum foil and shape into a tent. Place on the fire and cook the meat in the "tent." Meanwhile, brown some onions and peppers on the side. When the meat starts to cook, put the cheese on top of it and watch it closely until it melts together. Serve with the cooked onions and peppers on hamburger buns.

6 Chicken In a Bag Makes 34 1 pound(s) chicken breast 2 c rice 1/2 pound(s) frozen peas 1/2 pound(s) shredded cheddar cheese Instructions You will need one small roll of aluminum foil (heavy gauge is better) and 4 sticks (about 1/2-1 inch in diameter). At home, cut chicken breast into cubes and fully cook in a skillet. Season with lemon pepper if you like. Cook rice, remove from pot and let cool. In a large container, combine chicken, rice, frozen peas, and shredded cheddar cheese. Cover and refrigerate. At dinner time, scoop each serving onto the middle of a 2 ft. long piece of aluminum foil. (Four servings = four pieces of aluminum foil). Wrap the mixture into the foil by folding the foil longwise (so that it stays about 2 ft. long). Wrap the tail ends of the aluminum around a heavy stick and warm each wrapped mixture over a campfire until the cheese melts. The foil cools rapidly and can be unwrapped easily from around the sticks and from around the mixture. You could also add cashews, canned mushrooms, and/or soy sauce depending on the tastes of the group.

7 Chicken Pockets 1 tube readymade croissants 1/2 c finely chopped onion or green onion 1 c cheese (reserve 1/2 cup for sauce) cooked chicken cream of chicken soup milk Instructions In a bowl shred the chicken into pieces, add the cheese and onion and mix together. Open the tin of croissants and add a bit of the chicken mixture to each one and roll it up. Place on the cookie sheet and cook per the package instructions. In a sauce pan open and add a can of cream of chicken soup and one can of milk and add about 1/2 cup cheese for a nice little cheesy sauce to cover the chicken pockets with

8 3-4 flour tortillas 1 block of almond bark 1 large snicker candy bar coconut small marshmallows Instructions Dessert Tortillas You can cook this on a fire or in your oven. Put almond bark pieces in the center of the tortillas. Chop up the snickers into dime sized pieces and add them to the tortillas. Cover the snickers with coconut and small marshmallows. Roll the tortillas up like a burrito and put each into its own tinfoil cover. Seal the ends by folding over the tinfoil. Put on the edge of the fire or above the coals or into your oven for about 10 minutes or until hot clear through, then unwrap and enjoy!

9 Dutch Oven Breakfast 1 Bell Pepper diced 1 Medium Onion diced 1 1/2 doz. eggs or a carton of egg mixture 1 lb. of sausage salt and pepper to taste. Equipment Dutch oven, spoon, knife Instructions Break up sausage into bite sized chunks. Brown in medium hot Dutch oven with coals underneath only. You don't need to put the lid on. Stir softly and occasionally as the brown being careful not to break them apart. Before they are completely done add the bell pepper and onion and sauté in the sausage juices until onions begin to be translucent. Spoon out excess grease and add scrambled eggs. Slowly fold over until set too desired firmness.

10 Dutch Oven Chicken Pot Pie 4-6 Whole Boneless Chicken Breast (or chicken of choice) 1 Cream of Chicken, Mushroom or Broccoli Soup 1/2 c water or milk 1 Can Mushrooms 2 Bags of Cauliflower, Broccoli and Carrots (frozen vegetable mix) 1 large onion Olive Oil Butter Salt & Pepper (or seasoning of choice) Cooking Spray Instructions Spray the bottom of a medium sized foil baking pan with the cooking spray. Line the bottom of the pan with sliced onions. Spread the sliced mushrooms and frozen vegetable mix over the onion layer. Mix soup and water (or milk). Spread soup mixture over vegetables. Add a little olive oil and butter. Season chicken and place on top of mixture. Using heavy duty aluminum foil, cover the pan completely from side to side and end to end wrapping all the way over the bottom of the pan to create a good seal. Put on camping rack over hot coals. Check for doneness after approximately 1 hour (cooking time will vary depending on the heat from the coals). You may place directly on the coals, but the mixture may stick to the bottom of the pan. Serve with your choice of bread

11 Dutch Oven Pizza Recipe: Recipe Type: Pizza, Pizza Dough, Dutch Oven Cooking Yields: 1 pizza Prep time: 20 min Cook time: 15 min : Vegetable oil Tube of pre-made pizza crust Small can of tomato sauce Shredded mozzarella cheese Grated cheddar cheese Garlic powder Salt and pepper to taste Sliced onions Pepperoni Slices Variation Ideas: Barbecued Chicken Pizza - Substitute barbecue sauce for tomato sauce. Breakfast Pizza - Use Crescent Rolls, eggs, and hash brown potatoes. Dessert Pizza - Use Crescent Rolls and bake the crust. Then remove from heat and top with cream cheese and fruits of your choice (orange slices, kiwi slices, and/or strawberry slices, etc.) Preparation: (1) Prepare your fire using either charcoal coals or wood. Eileen is using the charcoal coal method for her Dutch Oven Camp Cooking. Check out Eileen's article on Dutch Oven Camp Cooking for information and instructions on Dutch Oven cooking.

12 (2) Fire pit with coal - using backyard fire pit to cook on. (3) Coals being shifted around so more of them will get hot enough to cook with. (4) Pour vegetable oil in the cold Dutch Oven, spreading it around the bottom and sides of the Dutch Oven. (5) Take the pizza dough out of the tube and split it in half. 13 the dough in the bottom of the Dutch Oven. Since the tube of pizza dough was meant to be for a rectangular pizza, I had to patch it and spread it around the pan. If you have two Dutch Ovens, you can make two pizzas at once. pizza dough and sprinkle with garlic powder, salt, and pepper to taste. Add sliced onions and sliced pepperoni. If you would like to add additional toppings, now is the time to do it. (7) Pizza ready to put over the hot coals. (8) Place the Dutch Oven with the prepared pizza on the hot coals.

14 (9) Place the lid on the Dutch Oven and place hot coals on the lid to start the baking process (this allows the dough to bake and the toppings to cook through). Bake for approximately 10 minutes or until done. (10) After the pizza has cooked approximately 10 minutes and the dough is baked, remove the lid. (11) Sprinkle the mozzarella cheese and cheddar cheese over the top of the hot pizza.

15 (12) Place lid back on the Dutch Oven and let the cheese melt. The more hot coals placed on the lid, the faster the cheese will melt. (13) When cheese is melted, remove lid and then remove the Dutch Oven from the coals. Your pizza is now done. Serve to your family and enjoy!

16 Ground Beef (1/2 lb per packet) Carrots Potatoes Onions Green Peppers Salt and Pepper Butter Instructions Foil Dinner Assemble packets using double layer. Add ingredients and fold packet to seal. Place packet into the campfire on hot coals and let cook for minutes

17 Grilled Chocolate Banana Melt banana, peeled tablespoons miniature marshmallows tablespoons semi-sweet chocolate chips tablespoons Cinnamon Toast Crunch cereal, slightly crushed DIRECTIONS 1. Preheat grill to medium high heat. 2. Slice banana lengthwise and slightly open. Place on a rectangle of aluminum foil. 3. Insert marshmallows and chocolate chips into the sliced banana. 4. Wrap banana up in foil and cook on the grill for 5-6 minutes. 5. Unwrap banana and top with cereal. After melt has slightly cooled eat with a spoon. 6. OVEN METHOD: Cook in the OVEN at 400 degrees for 5-6 minutes. 7. CAMPFIRE METHOD: Keep peel on banana; slice lengthwise twice, lift up flap of peel, slice banana and add chocolate and marshmallows as above. Replace peel flap and wrap banana with foil. Let the flames die down before adding banana packets directly to fire. Cook 3-5 minutes, or just until soft and melty. Use tongs to remove from fire. Carefully unwrap and unpeel banana to eat. Grilled Chocolate Banana Melts As prepared by Girl Who Ate Everything August 24, 2011 It seems like s mores have been the star this summer, popping up in all forms from drinks to cupcakes. But there s always room for one more... and this s mores tangent has a fruity twist. When you fire up the grill for its summer workout, you have to make these Grilled Banana Chocolate Melts. A banana is sliced down the middle and stuffed to the max with marshmallows and chocolate chips.

18 Wrap it in foil and throw it on a grill for a couple of minutes to get a warm, decadent banana melt. A handful of crushed Cinnamon Toast Crunch cereal on top is all you need to add the graham cracker element of your s more and the perfect amount of crunch to compliment the gooeyness of everything else. You re going to need a spoon for this one that s the only way to make sure you get every last morsel of chocolate and melted marshmallow.

19 And it wouldn t be a s more if you didn t get messy. If you can eat this melt using less than five napkins, you are my hero. NO GRILL? No worries. Just throw the foil wrapped banana straight on the cooking rack in a 400-degree oven for 5-6 minutes to get the same delicious result. These are also a classic campfire favorite! Just add them to your fire for 3-5 minutes and remove carefully with tongs when the chocolate and marshmallow are melted.

Spread butter on both pieces of bread, wrap in foil if cooking over campfire, otherwise place sandwich on griddle and cook until golden brown on both sides
