Heat 2 tablespoons of olive oil in a large, heavy frying pan over a medium heat. 2. Fry the chorizo, onions and peppers gently for 10 minutes, or until the vegetables have softened. 3. Add the tomatoes, garlic and chilli and fry until warmed through. 4. Season the beaten eggs with salt and pepper, and slowly stir into the vegetables, loosely scrambling the egg until firm. 5. Toast the bread and generously butter or drizzle with olive oil. Top the toast with a generous spoonful of Basque Scrambled Eggs and serve.

To make bruschetta simply cut the Genius Soft White Farmhouse bread diagonally across into large triangles or cut out large rounds from each slice with a pastry cutter. 2. Bake the prepared bread on a baking tray at 200 C/400 F for 10 minutes or until golden brown. 3. Grill 2 red peppers on all sides until the skin is blackened. Place in a bowl and cover with cling film and leave to steam for 15 minutes. Remove the cling film, and peel off the skin using a small, sharp knife. Core and de-seed the skinned peppers and thinly slice. 4. Place the pepper slices into a bowl, and mix in 2 finely chopped anchovies, a tablespoon of extra virgin olive oil and a teaspoon of small rinsed capers. 5. Season with freshly ground black pepper, stir in a tablespoon of finely shredded basil and heap onto the bread, rubbed with garlic and drizzled with olive oil.

Heat 2 tablespoons of oil in a frying pan. 5. Fry the burgers until golden brown on both sides. 6. Place a burger in each roll, top with slices of tomatoes, avocado, red onion and a dollop of sour cream and serve.

Mix together all the burger ingredients. Fry a teaspoon of the mixture in a tablespoon of vegetable oil and check the seasoning. Add more salt and pepper as necessary. 2. Shape the mixture into eight burgers approximately 2cm thick and chill for 10 minutes before cooking. 3. To assemble the burgers, add sliced avocado over the base of the bun, place the burger on top and layer over a generous helping of sour cream. Top with spicy salsa before adding the top of the bun. Serve immediately.

Mix together the ingredients for the marinade and spread evenly over the chicken breasts. Cover the chicken in clingfilm and leave for a minimum of half an hour before cooking. 2. Once the chicken is cooked, leave to cool a little then slice across the breast. 3. Meanwhile create your dressing by whizzing the ingredients in a blender. 4. To assemble your bagels, cut them in half, pop on some leaves, mango slices, a few crunchy salad ingredients and your cooked tandoori chicken. Finally dress with the yoghurt and herb dressing.

To assemble the Eggs Florentine toast the crumpets, load them up with spinach, pop the egg on top and spoon on the hollandaise.
