It is the fi rst day of Spring according to the lunar calendar as Spring Festival. When we are young as kids, we always look forward the Chinese New Years for the reasons of good food, new clothes, toys and "red envelope" (a pocket fi lled with money) from parents and relatives. The chinese zodiac for last year was the dragon, but this the Year is Snake (people prefer the name "little dragon"). To celebrate Chinese New Year here in Florida is quite different than in China. You can go "big" or "small" as you wish. The "big" means you can go to more parties or celebrations organized by different associations. You can go "small" which means you may just want to have few good dishes, celebrate with your own family. This year we went " big". We went to three parties. My family loves these. You could dip them into spicy mustard if desired. INGREDIENTS 1 pound skinless, boneless chicken breast halves 1/2 pound bacon 1 (20 ounce) can pineapple chunks 18 fl uid ounces teriyaki sauce DIRECTIONS 1. Cut chicken into bite-size pieces. Wrap with about 1/3 slice of bacon, thread onto toothpick, and top with pineapple chuck. Marinate for 4 hours or longer in teriyaki sauce. 2. Preheat oven to 375 degrees F (190 degrees C). 3. Place marinated appetizers onto parchment lined baking sheets. Bake for 20 minutes, or until chicken is done and bacon golden brown. Drain on paper towels. Serve hot. excerpted from allrecipes.com
