2 Welcome from the President Welcome to this Sydney Royal Competition and thank you for your interest this year. Competitions such as this play an integral part in the aim of the Royal Agricultural Society of NSW (RAS) to encourage and reward excellence, ensuring a viable and prosperous future for our agricultural communities. Judging of produce has a long history with the RAS, we have held competitive events for almost one hundred and fifty years. Today our competitions have evolved to become some of the most prestigious in the country, raising the benchmark in numerous industries. Our Sydney Royal competitions attract a growing number of talented and ambitious producers Australia-wide, and the quality and standard of entries are always high. As our competitions advance each year, we delight at the mix of medal recipients, from smaller boutique operations to large-scale manufacturers. Products are entered in an attempt to win a coveted Sydney Royal medal, an award that represents excellence and can open doors to many commercial opportunities. Whether your product receives a medal or not, you will receive valuable feedback from the judges and will discover where your product sits against industry benchmarks. I look forward to seeing the range of high-quality entries in this competition and I thank all involved for the part they play. It is unique in that the Medal is not awarded solely on taste; the Medal recognises a product s overall economic, social and environmental integrity through the entire production cycle from gate to plate. It draws from Sydney Royal Champions from throughout the year, examines, and celebrates truly inspirational, innovative agricultural achievers. 21 Grilled flat iron steak with tomato, olive and oregano salad Serves: 4 Prep time: 10 minutes, plus marinating time Cooking: 8 minutes Ingredients 4x 170g flat iron steaks 1 clove garlic, chopped 1 ½ tbsp chopped oregano leaves 1 ½ tbsp olive oil 400g mixed tomatoes, diced 60g pitted Kalamata olives, sliced Method ½ small red onion, finely sliced 2 tsp red wine vinegar Baby leaf salad mix (to serve) 1. Marinate the steaks in the garlic, ½ tbsp oregano and ½ tbsp oil and cover. Refrigerate for 30 minutes (minimum) or up to overnight. 2. Preheat a ridged chargrill or barbecue over a moderately high heat. Season the steaks with salt and pepper and grill for 3 4 minutes on each side or until cooked to your liking. Place on a plate and loosely cover with foil. Allow to rest for 5 minutes. 3. Meanwhile, make the tomato, olive and oregano salad by mixing the remaining olive oil with the rest of ingredients and season with salt and pepper. 4. Slice the steaks thinly and serve with the salad, along with some dressed baby leaf salad leaves.
