Slice the courgettes into circles about 1cm (1/2 inch) thick. Blanch them in a pan of boiling water for 30 seconds. Drain well. Prepare the barbecue for grilling. Place the oil, butter, garlic and pepper in a small saucepan and heat gently for a few minutes. Keep the pan on the side of the grill for basting. Thread the meat cubes, courgette slices and tomato pieces alternatively on to skewers and brush with the garlic oil. GENERAL HINTS ING 1, If you are using a thick basting sauce containing sugar, jam, honey or ketchup brush it on during the final few minutes of cooking. If applied too early, especially at high cooking temperatures, the basting sauce will quickly burn and char. 2. Grill one side of the meat for the time recommended in the recipe or cooking time chart. Brush the uncooked surface with oil or butter. Turn the meat over and complete the cooking cycle. Note that the second side will generally take a minute or so less to cook than the first side. 3. Meat marinated for a few hours, or overnight in the refrigerator, moistens, flavours and tenderises the meat. INSTRUCTIONS Combine all the ingredients and mix well. Add the prawns and turn until completely coated with the marinade. Cover the bowl and refrigerate for 1-3 hours. Drain the prawns and reserve the marinade. Blend the reserved marinade with the melted butter or margarine. Thread the prawns onto skewers and place them on the grill. Cook over a medium heat for 6-8 minutes, turning once and basting generously with the marinade mixture during cooking. The fat and excess oils are directed off the cooking surfaces and into the draining channel at the rear of the barbecue. The excess fats and oils travel down the channel through a drainage chute. The fat and excess oils are then directed cleanly into the drip tray where they will be collected into the slide out collection cup, for easy and safe disposal. 11

Wash thoroughly with a brush and warm soapy water. Use a scraper to remove any debris and built up residue in the barbecue body and inside the lid. If your barbecue has a glass hood and is especially streaky and unclean, use a spray-on oven cleaner and ordinary newspaper to wipe it off. Repeat the process if necessary. Allow all parts of the barbecue to dry completely before reassembling.
