2 Food Demonstration-Cooking very low protein recipes for renal patients, (Dialysis) Renal Diets with Flavour Let us start with this:
3 For best results Weights & Measures (If a scale not exist) 1. Read recipes carefully every word before you start to mix. 2. Measure exactly. Measuring tools are a must in any kitchen for consistent results in cooking. They may be made of metal, glass or plastic.
4 For liquid ingredients Use glass cups with pour spouts. To measure, place cup on a flat surface, then pour in liquid. Read the desired mark on the cup at eye level.
5 For dry ingredients Use individual cups in sets of 1 cup, ½ cup, ⅓ cup and ¼ cup sizes. To measure ingredients, pile lightly into measuring cup with spoon. Do not shake cup, level off with a straight edge. For brown sugar, pack firmly in the cup so that it will keep the shape when turned out.
6 Measuring spoons Available in sets of 1 tablespoon, 1 teaspoon, ½ teaspoon, ¼ teaspoon, and ⅛ teaspoon. Use for small amounts of dry foods or liquids. Dip spoon into dry ingredient, scoop, and then level off with a straight edge. Do not pour or level the ingredient over the bowl with the other ingredients.
7 The following are foods to avoid and suggestions for substitution for Foods to Avoid low salt diet. Substitution Bouillon cubes Homemade stock Cakes mix Homemade cakes Garlic salt Fresh or powdered garlic Instant gravy/sauce mix Thicken pan dripping with flour or cornstarch Instant rice and cereals Long cooking rice and cereals Onion salt Fresh or powdered onion Salt Spices and herbs Self-rising cornmeal Plain cornmeal plus baking powder
8 These foods should be omitted from your recipes, unless otherwise specified by your Dietitian. Apricots Baking Soda Bananas Black-Eyed Peas Bouillon Cubes Cheese Coconut Cream Soups Cream Style Corn Dates Dill Pickles Instant Mixes Instant Rice Lima Beans Melons Monosodium Glutamate (MSG) Nuts Oranges Orange Juice Prunes Raisins Salt Sweet Relish Pickles Tomatoes Tomato Juice Tomato Sauce Tomato Paste Tomato Soup Water Chestnuts
9 Double Cooking Method to Reduce Potassium in Tuberous Root Vegetables This method does not change these vegetables into a low potassium food but will remove a significant amount of the potassium. 1. Wash the vegetable, peel and wash again. 2. Slice into very thin slices. 3. Place the vegetable slices in room temperature water. Use two times the amount of water to the amount of slices. 4. Bring the water to a boil; remove from the heat and drain off all water. 5. Add fresh, room temperature water use two times the amount of water to the amount of vegetable slices. 6. Bring the water to a boil again and cook until the vegetable slices are soft and tender.

11 DEVILLED EGGS INGREDIENTS 400 g water 8 eggs 55 g pimentos, in pieces 140 g mayonnaise 2 level tsp mustard powder 1 tsp freshly ground black pepper 1 pinchpaprikafor garnish ACTIVE TIME 5 min TOTAL TIME 20 min DIFFICULTY easy PORTIONS 16 pieces (8 servings)

13 PREPARATION Place waterintobowl, insertbasketandaddeggsin basket. Steameggs 13 min/varoma/speed 1. Remove basket with aid of spatula and run under coldwatertostopthecooking. Remove theeggshellandcuttheeggs crosswise. Carefullyremovetheegg yolkandsetaside. Place theegg whitesin a servingplateandsetaside. Place pimentosin bowl andchop 3 sec/speed 5. Add egg yolks, mayonnaise, mustard and mix 15 sec/speed 3. Scrape down sides of mixing bowl with spatula. Add pepperandmix 10 sec/speed 3. Filltheegg whiteswiththemixture and garnish with paprika. Keep in the fridge until serving. TIP Transfer egg yolk mixture into a pastry bag to fill the egg whites for a special presentation.
14 SWEDISH MEATBALLS INGREDIENTS 40 g onion 1 tsp poultry seasoning (without salt) 1 tsp freshly ground black pepper ¼ tsp mustard powder 1 ¾ tsp onion powder 1 tsp Italian seasoning 3 tsp sugar 25 g lemon juice (1 tbsp) 2 tsp Tabasco sauce 450 g lean minced beef or turkey 60 g sunflower oil 2 tsp vinegar g water 40 g flour ACTIVE TIME 10 min TOTAL TIME 35 min DIFFICULTY easy PORTIONS 25 pieces (12 servings)
15 PREPARATION Grease the Varoma trays and set aside. Place onion, poultry seasoning, pepper, mustard, ¾ teaspoon onion powder, Italian seasoning, 1 tsp sugar, lemon juice, 1 tsp Tabasco sauce andchop 5 sec/speed 5. Add mincedmeatandmix 10 sec/speed 5. Transfer intoa bowl. With greasedhands, use1 tbspmixtureata time toshapemeatballs. Place them into Varoma trays and set aside. Place oilandonionpowderintobowl andsaute 2 min/120 ο /speed 1. Add vinegar, 2 tspsugar, 1 tsptabasco sauce, water, flourandmix 5 sec/speed 5. Place Varoma into position and steam 20 min/varoma/speed 1. Serve warm with sauce. TIP You could add some vegetables in the basket while steaming.

17 PREPARATION Preheatovento165 ο. Butter a cupcake form or place paper cups into form and set aside. Place 340 g margarine, 225 g creamcheese, 600 g. Sugar, vanillaessence, eggs, egg whites, flourintobowl andmix 50 sec/speed 5withaidof spatula. Transfer mixtureintobutteredform orpapercupsandbake in preheatedoven(165 ο ) for min. Meanwhile, prepare the cream cheese frosting. Place 300 g sugarintobowl andgrind 1 min/speed 10. Repeat another twotimesuntilall sugarhasbeenground. Add remaining115 g margarine, remaining225 g creamcheeseandmix 50 sec/speed 3withaidofspatula. Transfer intoa pipingbagandkeepin the fridge until needed. Letcupcakescool down forabout10 min beforetakingout oftheform (unlesstheyarein papercups. Place on coolingracktocool down completely. Decorate with cream cheese frosting in piping bag. All in all a much healthier food regime.
