4 CAVIAR MENU Served between 11:30am and 10:30pm PLATINUM STURGEON Platinum Sturgeon Caviar has an intense flavour, often with long hazelnut notes and a colour ranging from dark grey to ebony. 30g g 260 Vodka Pairing: Beluga Noble 16 per 50ml ROYAL BELGIAN OSCIETRA Oscietra produces its eggs after 8 years. It has a nutty, mellow taste, which develops into a buttery sweetness similar to lobster, and a golden brown to slate colour. Historically the egg is smaller than Beluga Caviar, but with increased farming, the egg size can sometimes be almost as large as its mighty cousin Beluga. 30g g 300 Vodka Pairing: Stolichnaya Elit 18 per 50ml BELUGA Beluga is considered as the King of Caviar, Beluga is rare because it takes 12 years to produce its eggs. Judged by many to be one of the first drinks to combine Vermouth with spirits, we are proud to offer you our interpretation. Woodford Reserve Bourbon, Martini Sweet Vermouth, With a dash of Barrel Aged Bourbon macerated with Orange and Vanilla BARREL AGED MARTINEZ First appearing in H. O. Byron s 1884 The Modern Bartender, where it is listed as a variation of the Manhattan, The Martinez is considered by many to be the great grandfather of the Martini cocktail. Bombay Sapphire Gin, Carpano Antica Formula, Maraschino Cherry Liquor and Boker s Bitters BOSSA NOVA Our take on the Bossa Nova style of Brazilian music, developed and popularized during the 1950s and '60s, this fruity drink delivers all the excitement of South American rhythm in a glass. Here we honour our labyrinthine cellars by composing a cocktail list that incorporates forgotten spirits from the 1950s to 1980s and some of the unusual, rare spirits from around the world. NEGRONI ~ 90 ~ It was Count Negroni who first decided to throw an extra measure of Gin into his Milano-Torino (Americano), dissatisfied as he was with its lack of backbone.
