Follow these simple steps to give your customers that little bit extra: Glass... cold, clean and appropriate for the drink (14oz hi Ball is perfect for most spirits and mixers)... Ice... always use good quality ice (large cubes with no frost) and fill to the top of the glass. more ice is always better; it looks great, keeps the drink colder and melts very slowly. Fruit... fresh lime, lemon, orange, grapefruit or even cucumber will add a huge amount of value to your spirits and mixers for very little cost. Slicing little and often is the key to ensure your fruit remains fresh and juicy. G I F T Talk... always talk to your customer about their mixer; do they want it all poured in? 90% of customers will say yes, but you ll get it right 100% of the time if you ask them first! Never leave customers to pour their own mixers unless they specifically ask to do so; they are paying for a drink, so make them one.

12 1 2 M A R G I N S & C O C K T A I L S MARGINS & COCKTAILS Top Tips for Selling Spirits... finished drinks pricing (stating the t o p t i p 1 complete price for, say, a gin & tonic, as opposed to pricing the individual elements) will give your customers the confidence to order the drink. there is often the misconception that spirits are more expensive than other liquor categories, this will help to dispel that myth. t o p t i p 2 double-up offers at an eyecatching price point ( 1.00, 1.50) can further drive the category by increasing sales whilst offering better value. Branding is critical to the category,so make sure you don t t o p sell yourself short! use your products brand names and logos wherever appropriate to add value to your offer and enhance the quality message. In most cases, a spirit and mixer is the highest margin drink you can deliver, typically returning over 70% margin, so it s absolutely essential to ensure that your spirits range is appropriate for your customers and well promoted. AUTHENTIC CARTA BLANC RUM MOJITO... t i p 3BACARDI Ingredients 50mls Bacardi Carta Blanca rum 4 lime wedges 12 fresh mint leaves 2 heaped tsp caster sugar 15mls soda water/club soda Sprig of fresh mint to garnish Method... Gently press together the limes and sugar. Bruise the mint leaves by clapping them between your palms, rub them on the rim of the glass and drop them in. Next, fill half the glass with crushed ice, add the BACARDÍ Carta Blanca rum and stir. Top up with crushed ice, a splash of soda and a sprig of mint. Mojito! Cocktails... cocktails are enjoying huge growth within the market and are an absolutely fantastic way of enhancing your drinks offer, delivering very high margins and making your site stand out from the crowd. and they don t have to be complicated! most cocktails are no more difficult to make than a g&t, but a snappy name can work wonders!
