3 Inspired by his recent travels around the world, our award-winning chief mixologist, Jack Williams, has poured his findings into our mouth-watering new cocktail menu. I wanted to capture the essence of a great cocktail and enhance it with top quality ingredients for example all of our mojitos are made with fresh fruit and Bacardi Superior rum. I hope you enjoy our new range, especially the Cuban inspired mojitos. Try my favourite, the fresh watermelon mojito, which is reminiscent of long summer Havana nights or indulge in the Champagne mojito finished off with Pommery Champagne. Enjoy. 6 HERITAGE & HAUTE We have carefully researched the original recipes of some of the world s favourite cocktails to bring you the best tasting versions. MARGARITA El Jimador Blanco 100% agave tequila, Cointreau and 8.20 fresh lime juice, served straight up or on the rocks, salt or no salt Originally created in the 1930s, this recipe comes from the 1950s and uses the most popular tequila in Mexico HURRICANE The intensely sweet taste of passionfruit and sugar syrup 8.20 shaken with ice, Bacardi Superior and Lamb's rum, along with splashes of lime and pineapple juice create this iconic New Orleans cocktail. The perfect way to start the party! PINA COLADA Bacardi Gold, coconut cream, fresh lime and pineapple, 8.20 served very long Created in San Juan, Puerto Rico, in 1954 and made possible by the production of Coco Lopez. We stick to the original recipe with no dairy products MAI TAI Bacardi 8yr old, orange curaçao, almond syrup 8.70 and fresh lime, served on the rocks Credited to Victor Bergeron (a.k.a Trader Vic) in Oakland in 1944, this drink was originally made with 17yr old overproof rum. We get as close as we can with Bacardi 8yr old CAIPIRINHA Sagatiba Cachaca, muddled lime and brown sugar, 8.20 swizzled with crushed ice The national drink of Brazil, with a myriad of different recipes. We make our favourite, given to us by an 80yr old grandmother. She didn t look a day over 50 so it must be doing something right! BERRY CAIPIROSKA Eristoff vodka, fresh raspberries and blackberries, lime 8.20 and cane syrup muddled and served over crushed ice COSMOPOLITAN Absolut Citron, Cointreau, fresh lime and cranberry juice, 8.20 served straight up. This drink was created by several bartenders independently in the late 1970s. We make the Dale DeGroff s version because it's the best!

7 PASSIONFRUIT DAIQUIRI Bacardi Superior, fresh lime, passionfruit cane syrup 8.70 and a dash of maraschino liqueur, served straight up TOM COLLINS Bombay Sapphire gin, fresh lemon juice, cane syrup 8.70 and soda, served long The first mention of this drink is from Jerry Thomas seminal 1876 cocktail book The Bartender s Guide and was probably invented just a couple of years earlier in New York DARK AND STORMY Gosling's dark rum, fresh lime and Schweppes ginger beer, 8.70 served long The national drink of Bermuda, made with the local Gosling's rum, this drink epitomises the perfect summer cocktail with its Caribbean flavours ZOMBIE A blend of light, golden, dark and overproof rums, including Bacardi, Bacardi Gold, Bacardi 8, Lamb's and Wray & Nephew, with fresh lime, exotic liqueurs and juices, served long and very strong! 9.70 Created in the 1930s by Earnest Raymond Beaumont Gant (a.k.a. Don Beach) at his famous Tiki bar Don the Beachcomber and named for its effect on the customers. Just like him, we limit these drinks to two per person, per hangover MOCKTAILS PINEAPPLE BREW Three of your five-a-day! Pineapple, cranberry and 3.95 elderflower juices, shaken and poured over ice MANGO MORENA Exotically moreish. Fresh mint leaves with sweet mango purée, 3.95 topped with apple juice
