5 Liquor Treatment Products Hops DWB and the chloride/sulphate balance which will affect the beer flavour. Murphy & Son Ltd are proud partners of Charles Faram & Co Ltd Calcium Sulphate (Gypsum) Calcium Chloride Charles Faram and Company has been established as merchants of hops and hop products for over 100 years. The company, which was originally based in Worcester, now resides in the small hamlet of Newland, situated at the foot of the picturesque Malvern Hills. Charles Faram supplies the largest range of hops in the UK. With over 100 different varieties of hops to choose from, it provides an artist s palette of flavours to create every type and style of beer. Sodium Chloride (PDV Salt) Are used to adjust chloride levels. Potassium Chloride Are used to adjust chloride levels (low sodium alternative to Sodium Chloride). Dionic AT No.1 Ac40 We supply the brewer with the hops to design his or her own unique beer and we are able to provide the full range of hop products, from whole hops through to processed hop products, such as pellets, extracts and oils. Dionic HT No.2 Ac0 AMS Over the last 10 years Murphy and Son Ltd and Charles Faram and Co Ltd have been working together to promote each others product range to the micro brewing market. We both feel very passionate about the industry and given the level of expertise across the range of products, we both have to offer, it allows us to give the best possible level of service to our customers. Sulphuric Acid 25% Reduces alkalinity and increases sulphate. Phosphoric Acid 75% Reduces alkalinity without adding other ions. Suitable for lagers. Both Charles Faram and Murphy & Son supply the full range of each others products, giving you the option to buy directly from either Charles Faram or Murphy & Son. Please remember that you will not lose any of the technical back up and support, that Murphy and Son offer with their product range. Just pick up the phone if you require assistance. 11 Enzymes Enzyme Products Continued Enzymes are complex organic substances that act as catalysts: that is they accelerate the velocity of a reaction whilst remaining essentially unchanged themselves at the end of it. They promote the hydrolysis of proteins and polysaccharides into simpler substances and are usually highly specific. Each enzyme will act on only a limited range of substrates, frequently on only one. Glucanase longibrachiatum (formerly Trichoderma reesei). AMG Amyloglucosidase is derived from a selected strain of Aspergillus sp. Potential applications include production of highly attenuated low carbohydrate beers. Amylase Muramylodextrinase Creates low carbohydrate super-attenuated beers. Dualase A blend of Can be added directly to the mash. 13 Carrageenan Carrageenan is derived from certain types of seaweed and is a sulphated polysaccharide which complexes with undesirable protein fractions. These carrageenan products are usually added towards the end of the boil or to the whirlpool. Principle carrageenan which is derived from seaweed. Carrageenan in solution with wort proteins. random coil structure. As the wort cools the carrageenan takes a much more compact and ordered helical structure which is thought to drag the protein particles together to form aggregates. The dissolve. 19 Preservatives Foam Head Stabilisers The maximum permitted levels of sulphur dioxide in the UK for cask conditioned and other beers are 50ppm and 20ppm respectively, but such levels are not recommended from a flavour point of view.
