FRUIT SALAD Pair with Carta Nevada Semi Dry 1 cluster red, seedless grapes, halved 1 cantaloupe, seeded and cubed 1 honeydew melon, seeded and cubed 2 bananas, peeled and sliced 2 peaches or nectarines, pitted and sliced 1 cup walnuts, coarsely chopped 1 Tbsp honey 2 Tbsp fresh mint, chopped Add all fruit together, drizzle honey over the fruit and toss. Add walnuts and mint just before serving and lightly toss. In the spring and summer, add strawberries, raspberries and blueberries. Throw in mango for an extra tropical feel. In the fall and winter, add slices of pear and apple. SMOKED SALMON SANDWICHES Pair with Carta Nevada Brut 1/4 lb thinly sliced smoked salmon 1 container of chive cream cheese 1 English cucumber, peeled 16 slices of thin, pumpernickel bread 4-6 Tbsp fresh dill, chopped Take cucumber and thinly slice crosswise, using a mandolin or other slicer to get the slices extra thin. Set aside. Remove crusts from bread and discard. Take two slices of bread and evenly spread cream cheese on both. Layer salmon slices on one piece of bread. Top evenly with slices of cucumber. Sprinkle lightly with dill. Cover with other slice of bread and gently press down on sandwich. Cut diagonally, into four triangles, and arrange on plate. Repeat with remaining slices of bread. FRUITY TREATS Slice and skewer summer fruits and freeze until solid. Dip each skewer into a bowl of melted chocolate. Place on a tray lined with wax paper. Return to the freezer until the chocolate hardens and enjoy! SWEET AND SAVORY BREADSTICKS Pair with Cordon Negro Extra Dry 1 package long bread sticks 4 oz honey 1 package sliced prosciutto Cut the prosciutto slices, lengthwise, into 1 inch strips. Gently pull the slices apart. Coat 4 inches of the bread sticks with a thin layer of honey. Starting at the top of the honeyed end of the stick, wrap a slice of prosciutto around to the other end of the stick. Stand the ungarnished end of the stick in a cup to store and serve.
