2 Your Kenwood Food Processor Your new Kenwood Food Processor will make your favourite dishes, simply and quickly. To gain maximum benefit from your processor, keep it ready for use on a convenient worktop for whenever you need it. Read these instructions carefully because food processors require different techniques to traditional mixers. Please read these instructions, paying particular attention to the following safety points:- 1. The blades and plates are sharp, handle with care. Hold the steel blade at the top away from the cutting edge, both in use and when cleaning. 2. Always remove the steel blade before pouring contents from the bowl. 3. Do not place hands in the processor bowl or liquidiser whilst the power is connected. 4. Never use your fingers to push food down the feed tube. Always use the pusher(s). 5. Switch off and make sure the attachments have come to a stop before attempting to remove the lid. 6. The product will be damaged and may cause injury if the interlock mechanism is subjected to excessive force. 7. Do not use if there is visible damage to any part of the product. 8. This appliance is not intended for use by young children or infirm persons without supervision. 9. Do not leave the appliance unattended when in operation. 10. Do not immerse the appliance, supply cord or plug in water or other liquid and take care to ensure that the controls are kept clean and dry. 11. Do not let excess cord hang over the edge of the table or worktop or touch hot surfaces. Excess cord should be wrapped around the cord stowage at the rear of the appliance. 12. Don t let children play with the machine. 13. Never misuse your food processor and only use it for its intended domestic use. Connecting to Power IMPORTANT SAFEGUARDS PLEASE KEEP THESE INSTRUCTIONS Before switching on make sure that the voltage of your electricity supply is the same as that indicated on the rating plate. Service If the cord is damaged it must, for safety reasons, be replaced by KENWOOD or an authorised KENWOOD repairer. Before Use Before using your food processor for the first time, remove and discard the plastic blade covers from the steel blade - these covers are to protect the blade during manufacture and transit only. Wash the bowl, lid, pushers and attachments in accordance with the cleaning instructions, page 11. To prevent unwanted cord trailing across the worktop, wrap any excess around the cleats on the back of the food processor. 2

3 Care and Cleaning Before cleaning always switch off and remove the plug from the power supply. Immediately after use, wash all pieces except the power unit, twin beater geared whisk, liquidiser goblet and base, multi-mill base, blade and housing assembly in hot soapy water, then dry thoroughly. Take care when washing the steel blade and cutting plates - they are extremely sharp. You may place the following components in a dishwasher; bowl, lid, pushers, steel blade, maxi-blend canopy, dough tool, paddle egg whisk, citrus juicer, centrifugal juicer, multi-mill jar, storage box and processing plates. However, please ensure that they are only placed on the top rack of the dishwasher. Wipe over the power unit of your Food Processor with a damp cloth and polish with a dry one. Ensure that the safety interlock is clear of food debris. Always store the food processor with its dust cover if supplied, in place. Twin Beater Geared Whisk Detach each whisk from the drive head of the whisk assembly by gently pulling free. Wash the whisks in warm water. Wipe the drive head with a damp cloth then dry. DO NOT IMMERSE THE DRIVE HEAD IN WATER. Liquidiser Half fill with warm water and place onto the food processor. With the lid and filler cap in place, switch on for seconds to dislodge any particles of food. Empty out the water and rinse with clean warm water. Wipe off any surplus liquid and leave in a warm atmosphere to dry. Take care when drying by hand as the blades are sharp. Do not immerse the liquidiser base in water. Multi-mill Wash the blade assembly in hot soapy water, rinse and dry well. Take care when handling the blades as they are very sharp. Do not leave the blade assembly soaking in water. Guarantee (UK only) If your food processor goes wrong within one year from the date you bought it, we will repair or replace it free of charge provided: you have not misused, neglected or damaged it; it has not been modified (unless by Kenwood); it is not second-hand; it has not been used commercially; you have not fitted a plug incorrectly; and you supply your receipt to show when you bought it. This guarantee does not affect your statutory rights. Recipes Shortcrust Pastry 12 oz/300g plain flour 6oz/150g mixture of lard and margarine 1 2 tsp/2.5ml salt 3 tbsp/60ml water approximately Roughly cube the fat. Using the steel blade, place the flour, salt and fat into the bowl and process using a higher speed until the mixture resembles breadcrumbs. Continue operating the machine on a lower speed and add the water down the feed tube and process until one or two balls of pastry are formed. Remove the pastry from the bowl and combine together by hand to prevent over processing. Use as required. Hints For best results use the fat straight from the refrigerator. Take care not to overprocess the fat into the flour, as it will continue mixing when the water is added. If the dough is slightly warm after processing allow it to rest for minutes in the refrigerator before using. Scones can be prepared in a similar manner to pastry. Meringues 4 egg whites 8oz/200g caster sugar Whisk the egg whites until stiff. Add half the sugar and continue whisking until the mixture is glossy. Remove the whisk and with a metal spoon carefully fold in the remaining sugar, a spoonful at a time. Pipe the mixture onto trays lined with non stick paper. Bake in a preheated oven at 90 C or at the lowest setting possible for 4-5 hours, until the meringues have dried out. If the meringues start to brown, prop open the oven door a little. 11

4 Multi-Mill (FP470 & FP570 only) The multi-mill attachment if supplied, can be used to blend baby food, make salad dressings, chop herbs and mill spices as well as milling coffee beans. 20 Base with fixed spring Blade and housing assembly Rubber seal Blend and store jar Max fill line Lid 1. Remove the outlet cover from the food processor by lifting off. 2. Place the jar, rim uppermost on the worktop and add the food to be milled 3. Ensure that the rubber seal is correctly located in the recess of the blade and housing assembly. 4. Invert the blade and housing assembly, and place so that the blades are submerged in the jar. 5. Secure the assembly by screwing the base onto the jar until finger tight. 6. Place the multi mill on the outlet, engaging the lugs in the base in the slots provided. Turn clockwise until it locks into position (fig.20). Note:- When using the multi mill ensure that there are no tools in the processor bowl. The multi mill will only operate with the processor bowl and lid in position. Hints:- For best results do not fill the glass jar more than half full with ingredients to be blended. Blend small quantities of cooked ingredients together with a little gravy or milk to make baby food. Best results are obtained using Speed 2. When milling herbs, best results are obtained when the herbs are clean and dry. IMPORTANT You can ensure the long life of your Multi Mill by switching off promptly as soon as the desired fineness has been reached. Maximum continuous operation for any process must not exceed 2 minutes. Do not leave your Multi Mill unattended whilst in operation. When milling dried ginger, it should be broken into pieces before milling, whilst Turmeric is extremely hard and considered unsuitable for milling. WARNING NEVER PLACE THE BASE AND BLADE ASSEMBLY ONTO THE APPLIANCE WITHOUT THE JAR IN POSITION, NOR DISMANTLE BEFORE REMOVING THE COMPLETE MULTI MILL FROM THE PROCESSOR. 7 Citrus Juicer The citrus juicer if supplied, can be used to juice citrus fruits including oranges, limes, lemons and grapefruits for drinks and for use in puddings, cakes etc With the processor bowl in position, attach the citrus juice strainer by placing over the bowl and turning clockwise until the fin on the strainer aligns with the mark on the processor body (fig.16). 2. Place the reamer onto the drive shaft turning until it drops all the way down (fig.17). 3. Cut the citrus fruit in half. Switch onto Speed 1, hold fruit firmly over the reamer to extract all the juice P P Liquidiser (FP450, FP470, FP570) Use for blending soups, drinks, pâtés, mayonnaise and for chopping nuts and making crumbs from bread and biscuits. 18 Filler cap Lid Goblet and base combined 1. Remove the outlet cover from the food processor by lifting off. 2. Fit the lid and filler cap on the goblet (fig.18) by placing into position, and twisting both clockwise to lock. 3. Place the liquidiser on the outlet, engaging the lugs in the base in the slots provided. Turn clockwise until it locks into position. (fig. 19) Note:- When using the liquidiser outlet ensure that there are are no tools in the processor bowl. The liquidiser will only operate with the processor bowl and lid in position. 19 Hints:- Cut dry ingredients into cubes, e.g. bread for breadcrumbs and feed them through the filler cap onto revolving blades. Recipes containing liquid can be placed directly into the liquidiser Best results are obtained using Speed 2. When making mayonnaise, place all the ingredients with the exception of the oil into the liquidiser. Remove the filler cap and with the motor running gradually add the oil in a steady stream. Never exceed the maximum capacity on the liquidiser of 1 litre/ 1 3 4pints. IMPORTANT For safety reasons we do not recommend the blending of very hot liquids Do not place dry ingredients into the liquidiser before switching on Various spices such as cloves, dill and cumin seeds have an adverse effect upon the liquidiser plastic and should not be processed. The liquidiser runs at such high speeds that all foods are processed within one minute. Prolonged running or repeated use should be avoided especially when processing dry ingredients or small quantities. The liquidiser is not suitable as a storage container therefore ingredients should not be left to stand in the goblet before processing and should be removed immediately afterwards. When switching off, wait until the blades have stopped revolving before removing the liquidiser. 9

8 Centrifugal Juicer The centrifugal juicer if supplied, is suitable for juicing firm fruit and vegetables such as carrots and apples. Little preparation of these foods is necessary and any combination of fruit and vegetables can be used to produce a healthy and flavoursome drink. 1. Fit the strainer basket into the inner bowl ensuring that the tabs on the strainer basket fit into the slots in the inner bowl. (fig 13) 2. With the processor bowl in position add the above assembly turning until it drops into position(fig 14). 3. Fit the attachment Iid by turning clockwise until it locks into position. (fig 15) 4. Cut the food into suitably sized pieces to fit the feed tube. 5. Switch the processor to maximum speed, add the food down the feed tube whilst exerting an even pressure on the pusher. Process one or two pieces of food completely before processing further amounts. 6. Once all the food has been processed allow the machine to run for an additional 20sec under no load to ensure maximum juice extraction. 7. After use, dismantle the unit. Unclip the strainer basket and remove the waste. Transfer the juice to a jug for serving Hints:- Best results are obtained by using firm fresh fruit and vegetables. Fruit and vegetables with tough skins such as melon or pineapple should be peeled before processing. Stones and pips should also be removed from fruit and vegetables such as peppers, melon and plums. It is unnecessary to peel and core apples and pears before processing. Your juice separator will process citrus fruit but the large quantity of pith present will cause the resulting juice to be bitter. A special citrus juicer is available for this purpose. IMPORTANT To get the best performance from your attachment process small quantities at a time and clean the strainer basket and inner bowl of pulp regularly. Your processor may occasionally vibrate during use due to uneven distribution of pulp. If this becomes excessive, stop the machine and empty the strainer. We recommend that no more than 454g / 1Ib of fruit or vegetables be processed in one batch. Please Note Some fruit and vegetables may discolour the plastic. This is perfectly normal and will not impair the flavour of subsequent juices. 8

9 Using Your Kenwood Food Processor Assembling the Processor Bowl and Lid 1. Place the clear plastic bowl over the processor drive, positioning the handle towards the back of the appliance(fig 1 ). Lower the bowl onto the power unit and turn in a clockwise direction so that it locks firmly into place. 2. Once the bowl is locked in place you can add an attachment to the food processor (see below). Always fit the appropriate attachment in the bowl before adding the ingredients. 3. Place the lid onto the processor bowl with the feed tube towards the back of the appliance. Turn the lid clockwise until the tabs on the lid lock against the tabs on the bowl and the feed tube is in line with the handle (fig 2). Ensure that the mark on the lid aligns with the mark on the processor body (fig 3). Your processor incorporates a sophisticated safety interlock feature. FAILURE TO CORRECTLY FIT THE LID WILL PREVENT YOUR FOOD PROCESSOR FROM OPERATING. 4. Reverse the above procedure to remove the bowl and lid. It is only possible to remove the lid when the control is in the off (0) position Operating Controls and speeds Use the control knob 'A' to select the desired speed (fig 4). Switch on the food processor by moving control knob 'B ' from 0 to I (fig 5). Switch off the food processor by returning control knob 'B' back to position 0 (fig 6). IMPORTANT If the control knob B or the pulse button C (fig. 6) cannot be operated readily then check that the bowl and lid are correctly fitted as described under Assembling the Processor Bowl and Lid. Pulse - This feature allows the attachment fitted to the processor to be manually operated in a start stop action to control the texture of various foods. Pulse is obtained by simply depressing control knob 'C'. The pulse switch operates the motor and keeps it running constantly for as long as the button is held down. This can be carried out at either speed. Use these speeds for the following operations:- 4 A Paddle Egg Whisk and Citrus Juicer Adding water to combine pastry ingredients together. 1 2 P 1-2 Yeasted Mixtures, rubbing fat into flour for pastry, scones etc. 2 Cake Making. 10 Using the Attachments Steel Blade, Dough Tool and Paddle Egg Whisk 1. Lock the bowl onto the food processor. 2. Place the attachment over the food processor drive and carefully turn until it drops all the way down (fig 7). The tool must be completely down as far as it will go before you proceed. 3. Place the ingredients into the processor bowl. 4. Fit the lid and operate the food processor The steel blade is the most versatile of all the attachments and can be used for a variety of operations including cake making, bread dough, pastry and chopping meat, vegetables and nuts. The texture of the food is determined by the speed selected and the length of the processing time.. Use the dough tool if supplied for yeasted mixtures 7 The paddle egg whisk if supplied, must only be used for egg whites for meringues or for folding into souffles etc. Always ensure that the bowl and whisk are completely clean and free from grease before whisking egg whites. Best results are obtained when the eggs are at room temperature for whisking. This whisk will whisk up to 6 egg whites.do NOT USE WITH OTHER LIQUIDS. IMPORTANT Your processor and liquidiser are not suitable for crushing or grinding coffee beans, or converting granulated sugar to caster sugar. When adding almond essence or flavouring to mixtures, switch off, remove the lid and add to the mixture direct. Direct contact with the bowl, feed tube, lid or liquidiser material may result in permanent marking. This will not affect the functioning of your food processor. Maxi-Blend Canopy (If Supplied) The maxi-blend canopy is used in conjunction with the steel blade when blending soups or other liquids in the processor bowl. It allows you to increase the liquid processing capacity of the bowl. 1. Place the steel blade and food to be processed into the bowl. 2. Position the maxi-blend canopy over the steel blade and allow it to rest on the step in the top of the processor bowl (fig 8). 3. Fit the lid and operate the machine. 8 Twin Beater Geared Whisk (If Supplied) Use for LIGHT mixtures only eg egg whites, cream, evaporated milk and for whisking eggs and sugar for fatless sponges. Heavier mixtures (eg fat or flour) may damage it Ensure that each whisk is pushed securely into the drive head of the assembly (fig 9). 2. Place the whisk onto the food processor drive turning to ensure it is correctly located. 3. Place the ingredients into the processor bowl. 4. Fit the lid and operate the machine. Hints:- Best results are obtained when the eggs are at room temperature for whisking. Always ensure that the bowl and whisks are completely clean and free from grease before whisking egg whites. 6

11 Slicing, Shredding and Chipping Plates Use the shredding plates for cheese, carrot, potatoes and foods of a similar texture. Use the slicing plates for potato, carrot, cabbage, cucumber, courgette, beetroot, onion and apples. The extra coarse shredding plate is suitable for cheese and carrot when a very coarse shred is required. The standard chipper plate is suitable for potatoes which can then be fried to produce slim french fries, or for other fruit and vegetables including, swede, apple, pear and cucumber suitable for casseroles and crudities for dips. The fine (Julienne style) chipper plate can be used to produce long thin strips of potato which can then be fried to make super slim french fries. Alternatively other fruit and vegetables can be processed such as apples, carrot, swede, courgette and cucumber and used for garnishing dishes or for use in salads, casseroles and stir fries (thin items are best packed into the feed tube horizontally). The rasping plate can be used for grating parmesan cheese and vegetables including raw potatoes to make German Potato Dumplings. 1. Select the desired plate and assemble onto the shaft. Do this by pushing the shaft onto the plate until it is fully home (fig 10). Twist slightly if necessary to engage. The desired cutting edge should be on the top face. 2. Place the plate and shaft over the food processor drive and carefully turn until it drops all the way down. The attachment must be completely down as far as it will go before you proceed. 3. Fit the processor lid and select which size feed tube you wish to use. The pusher has been designed to include a narrower inner feed tube. This allows individual items or thin foods to be more easily sliced and shredded. To use the inner feed tube, the larger pusher has to be in place in the feed tube before the food is added. (fig 11). To use the larger feed tube, use both pushers together. (fig 12) 4. Place the food into the selected feed tube. 5. Switch on the food processor and using the pusher(s) exert an even pressure onto the food Hints:- To obtain good results always use fresh fruit and vegetables. When using the larger feed tube, cut food to fit. Fill the feed tube almost to the top and push firmly down with the pusher whilst operating the machine. Always pack the large feed tube to prevent foods from slipping sideways during operation. Alternatively use the inner feed tube (fig 11). Always use the pusher to process food onto the plate. Never use your fingers. Remember when using the large feed tube, the two pushers must be used together. When slicing and shredding, packing the food in an upright manner will produce shreds and slices shorter in length than if the food is packed horizontally. Please note that there will always be a small amount of waste left either on the plate or amongst the processed food after using the cutting plates. 7

12 Recipes Winter Warmer Soup carrots, potatoes and onions: twenty 2cm ( 3 4 ) cubes of each bacon stock 100g (4oz) red lentils, washed 250ml ( 1 2pt) vegetable stock one 400g (14oz) tin chopped tomatoes salt and pepper 200g (8oz) cooked bacon joint cut into 1cm ( 1 4 ) cubes Put the carrots, potatoes and onions into the blender in that order. Add bacon stock up to the 1 litre mark. Blend for no more than 10 seconds. Pour into a saucepan. Then add the lentils, tomatoes, vegetable stock and seasoning. Bring to the boil, stirring constantly. Then simmer for about 1 hour, stirring regularly, until the ingredients are cooked. Add the bacon cubes and heat through for 5-10 minutes. Serve immediately. Hints When soup making, the vegetables etc should be drained and placed into the processor bowl with a small quantity of liquid from the recipe. The ingredients are processed to the desired consistency and added back to the remaining liquid and heated through if necessary. Alternatively, fit the maxi-blend canopy when blending soup in the bowl. When slicing, shredding or chipping always use fresh vegetables. Cut pieces of each food to fit the feed tube. Fill the tube almost to the top and push firmly down with the pusher whilst operating the machine. Always solidly pack the feed tube to prevent foods from slipping sideways during operation. Always use the pusher to process foods onto the plate. Lasagne 12oz/300g braising steak, cubed 15oz/425g can tomatoes 2tbsp/40ml tomato purée 1 onion 1tsp/5ml basil 4oz/100g lasagne 8oz/200g Mozzarella cheese 1tbsp/20ml oil salt and pepper Using the shredding plate grate the cheese. Using the steel blade chop the meat and onions separately. Pre-heat the oil and fry the onion until softened, add the meat and fry until brown. Add the tomatoes, tomato purée and seasonings. Stir well, cover and simmer gently for about 40 minutes. Cook lasagne in plenty of salted boiling water until tender, drain. Place layers of meat, lasagne and cheese in a 2 pint/1 litre ovenproof dish, finish with a layer of cheese. Bake in a preheated oven 190 C/375 F/Gas Mark 5 for 30 minutes until golden and bubbling. Hints Make mince by trimming the meat of all excess fat and cutting into 1in/2.5cm cubes. Place into the bowl and process using the steel blade. Use the pulse control towards the end of the chopping functions to obtain the desired consistency. Vegetables e.g. onions can be chopped in a similar manner to meat, cut into 1in/2.5cm cubes and process using the steel blade until the desired consistency is obtained. Process foods of a similar texture together e.g. harder vegetables like carrots and potatoes or softer ones like mushrooms and tomatoes. The steel blade can also be used for making breadcrumbs, biscuit crumbs, chopping nuts etc. Fruit Cake 5oz/125g block margarine 5oz/125g caster sugar 2 eggs 4-5tbsp ml milk 11oz/275g mixed fruit 8oz/200g self raising flour 1tsp/5ml mixed spice Using the steel blade, place the cubed margarine and sugar into the processor bowl. Mix until smooth, light and fluffy, scraping down the bowl several times as necessary. Add the eggs one at a time, scraping down after each addition. Add the sieved flour, spice and milk and pulse until the ingredients are just incorporated. Add the fruit and pulse to incorporate. Turn the mixture into a greased and lined 7in/17.5cm round cake tin and bake in a preheated oven 150 C/300 F/Gas Mark 2 for approximately 2 hours or until cooked. Turn out of the tin when cool. Hints Use the margarine straight from the refrigerator and cut into cubes. The above method is suitable for cakes which do not require air to be incorporated at the creaming stage to make them rise. Take care when adding the fruit not to overprocess the mixture as this may chop the fruit. Use the spatula provided to scrape ingredients away from the sides of the bowl. Whisked Sponge Cake 3 eggs 3oz/75g caster sugar 3oz/75g plain flour (sifted twice) With the twin beater geared whisk in position, place the sugar and eggs into the processor bowl, replace the lid and whisk until the mixture is thick and leaves a trail. Stop the processor remove the lid and whisk. Carefully fold in the flour using a metal spoon. Transfer the mixture into a deep lined and greased 7 in/18cm cake tin and bake in a pre-heated oven at 190 C/375 F/Gas Mark 5 for approximately 25 minutes until the cake springs back when touched. Remove from tin and cool on a wire rack. Use as desired. White Bread 1lb2oz/500g strong plain flour 1tsp/5ml salt 1 2 oz/15g lard 1 2 oz/15g fresh yeast or 2tsp/10ml dried yeast plus 1tsp/5ml sugar 11fl.oz/300ml warm water Dried Yeast (The type that requires reconstituting) Sprinkle the dried yeast into the warm water, add the sugar and allow to stand for approximately 10 minutes or until the mixture is frothy. Fresh Yeast Crumble into the bowl with the flour. For other types of yeast follow the manufacturers instructions regarding method and yeast quantities. Use the dough tool if supplied. If not use the steel blade and place into the bowl. Add the flour, salt, lard (and fresh yeast if used) into the bowl and process for a few seconds to evenly distribute the ingredients throughout the flour. With the machine operating, quickly pour the water or yeast liquid in a steady stream through the feed tube. Continue processing until the mixture forms a dough and becomes smooth in appearance and elastic to touch, this will take about seconds. Remove the dough into either a greased polythene bag or a lightly floured bowl and cover. Leave this dough in a warm place until doubled in size. Return the risen dough to the processor and re-knead for about 10 seconds. Shape the dough into a loaf or about 15 rolls and place on greased baking trays and leave until double in size. Bake at 230 C/450 F/Gas Mark 8 for minutes for a loaf or minutes for bread rolls. When the loaf or rolls are done they should sound hollow when tapped on the base.
