5 What do consumers look for in fresh bread products? We know consumers expect bread to stay fresh longer. That s why almost 80 percent of them look at expiration dates before purchasing. But what does freshness really mean when they eat the product at home? A recent study showed that most consumers determine bread freshness by appearance, taste or aroma not softness. 9 How do consumers view freshness in sweet goods products? Expiration dates count with sweet goods, too. About 90 percent of consumers look for them in determining when sweet goods have gone bad. But sensory cues are also important considerations, as a recent study showed. By a wide margin, texture and taste are the most influential sensory cues for consumers.
