2 Mixing Dividing Rounding Proofing Moulding MDD High Speed Mixer Mechanical Dough Developers Benier Nederland BV manufactures a range of Mechanical Dough Developers (MDD) with dry weight capacities up to 385 kg of dough per batch. The MDD mixer was initially developed as an integral cornerstone of the Chorleywood Bread Process and is most commonly used for sandwich and toast bread products in many parts of the world. It is also used across a product range that includes soft buns, morning goods, cake, batters, donuts and even Scotch-pastry. Mixing can take place under controlled vacuum/ pressure. Due to its bowl and impact plate design it produces a fully developed dough, in a short period of time, with reduced heat rise. Dough delivery system with MDD200 mixer, top frame and skip hoist.
3 High performance Vertical mixing method using vacuum and or pressure (recipe parameter). Temperature controlled mixing. Upto 12 batches of 385 kg per hour. Fully automated process with total system control when mixer is combined with top frame including ingredient weighing and dosing system. Easy to operate Integrated PLC for recipe control. Clear man-machine interface. Liquid track function; the water weight is set as a percentage of the dry ingredient weight. Ergonomic, safe and optimal overview on key positions. Easy cleaning Hygienic design. Patented CIP system (option) for deep cleaning of the mixing bowl. Lid with easy clean design using a minimum of components and wiring in a stainless steel tube. Small footprint. Low pressure hose-down cleaning of the mixer. Top frame is optionally available in hose-down execution. Easy maintenance Easy removeable impact plate with dedicated removal tool. Advanced design of the main bearing house including triple seal construction, long-life bearings and easily exchangeable seals. Effective control system for seal leakage indication. 4 More advantages Noise level under 73 dba (lowest in the industry) due to a fully enclosed, noise insulated swing frame. Variable speed drive for soft starting and mixing at different speeds. Glycol refrigirant is used to cool the bowl and the main motor. Polychain carbon composite toothed belt for zero slip and superior transfer of power. Safety fences with integrated hinged or sliding doors (interlocked) for good and safe acces to both sides of the mixer. Ingredient handling system (top frame) Benier mixers are offered as a complete dough preparation unit, including solid and liquid component dispensing. Ingredient delivery and batching is provided from the batching system on the integral top frame. The batching top frame is configured to customer preference with weigh hoppers for dry ingredients. Flow meters are commonly used for measured liquid ingredient delivery, directly to the mixing chamber, via valves mounted on the mixer lid. Adding liquids by weight is another option. Automation and controls Mixers will be supplied with the complete electrical controls, installed in stainless steel cabinets. The installations are pre wired and tested in our factory prior to delivery. State of the art PLC systems utilising Siemens, Mitsubishi or Allen Bradley PLC hardware and a touch screen HMI. Recipe storage and batch control for 100 recipes and production scheduling for 100 steps. Ingredients can be programmed to be delivered by either set point or percentage of flour/dry ingredient weight. Mixing can be set to a fixed time or fixed energy input. Options CIP system In order to adapt the MDD mixer to your requirements, several options are available, such as: Clean in Place (CIP) system; A patented system, which consists of a portable ring with spray heads that fits between the mixer bowl and lid. A high pressure pump delivers water to the rotating cleaning heads that move through 360 giving full coverage through the mixer bowl. A full cleaning cycle takes roughly 3 minutes. High tip/ skip hoist; The skip hoist will receive a batch of dough directly from the mixer, lift it and dump it into a dough receiving hopper. The whole interior is cleaned and rinsed out with a controlled small quantity of water. Benier skip hoists are executed in stainless steel with a removable, teflon coated bucket or skip. Bin tipper; For manual adding of ingredients we can offer a bin tipper.
