1 ! Raving Fans! Last night 8/21/12 myself and 4 friends ate at your restaurant located in Ft Lauderdale. The service we received was impeccable. Griffin was our server in the bar area. He levels of customer service far exceed that of what I normally get from restaurants in the area. He did an outstanding job and deserves commendation if not a raise. Once again J Marks has set the bar for dining in the Fort Lauderdale area, and servers like Griffin help set that bar at your restaurant. All the best, awesome dinner and drinks, awesome atmosphere, and good people. Keep up the good work. It s testimonies like these that make us proud to be a part of the J Mark s team. Even prouder was the way everyone handled our recent inclement weather. Everyone in both restaurants works hard every day but when we shine for the guest by taking care of them in both foul and good weather, we shine for everyone else. Even if our guests don t write us, the fact they show up day after day, week after week, speaks volumes about everyone s performance!

Shelving, Office Organization and focus by the BOH team on keeping the back door clear! (Great job kitchen staff!!) 4 PROCESS MEMOS Weekly Memos This week s Process Memos: I m a Regular gathering card process PRE SHIFT CRITICALS Whisper This week s Pre Shift Criticals is WHISPER!. We all love to have great conversations. Ever been in line at a McDonalds where the cashiers are all involved in talking about what their kids, dogs, husbands, wives did that morning that caused them to be late? Really? Your conversations aren t why the guest is here. They re here to enjoy their OWN conversations with their friends. Inside Voice and discreet service. These two things walk hand in hand.
5 MARKETING I m A Regular Cards We will start mailing out the I m A Regular cards this weekend! We re excited at the great response we ve received so far, and thank you to ALL the servers who sent the cards into the corporate office. We haven t tallied who has sent in the most yet but the prize will be announced once we ve tallied them all up! Are you the winner? The card will be mailed out to their addresses on file in a sleeve. They are made of stiff cardboard (like a business card). THE OFFER Here is what the card will look like (see to the right). They will be the size of a business card, and the guest will keep it with them you will not collect them. They can re use this card until 12/31/2012. We will be sending out a new card each quarter (with new offers on the back). You will be ringing these up in Aloha under the following keys (which will be set up by next week): REG 10% REG House Wine REG Dessert REG Appetizer Manager s will need to approve. THE RULES *which are described on the card* 10% OFF is on FOOD items only, valid for the entire table if all on one check (regular needs to be buying). FREE Dessert is with PURCHASE of entrée, limited to one per table. FREE Glass of House Wine is with purchase of entrée, limited to one per table. FREE Appetizer is with purchase of entree, limited to one per table, does not include Combo Appetizer They can only do ONE offer per visit but they can choose which offer they want to use.

Here are some talking points Peter has put together to help you during preshift: The process is the host(ess) brings the I m a Regular card with them to the table as they seat the guests. 1) After your guests are handed the menu, the host(ess) should place the I m A Regular promo card on the table and give a light walk through: a. We are inviting you to join our regular s club and receive special membership benefits. If you d like to join up, please fill in the card and your server will enroll you. Thank you. Having the Host(ess) put the card down first allows the guest time to review the card and fill it out without being rushed. NOTE: f the card didn t make it to the table with the seating (i.e. they go to the bar or the hostess misses the step), the server needs to include it with the check presenter to make sure the guest has the ability to opt in in the program if they d like. The server will then cover the card with the guest We are inviting you to join our regular s club and receive special membership benefits.
