5 INTRODUCING OUR IN-HOUSE DEVELOPMENT CHEF JEROME DREUX OUR IN-HOUSE DEVELOPMENT CHEF, JEROME DREUX HAS MORE THAN 28 YEARS EXPERIENCE IN MANY RENOWNED PASTRY KITCHENS. He worked in patisseries and 2 Michelin star restaurants in Paris after his apprenticeship in the south of France. Arriving in London in 1989, he worked at the Connaught Hotel for 3 years with Michel Bourdin and moved to Claridges Hotel for 2 years with Marjan Lesnik and John Williams. He then took his first position of Head Pastry Chef at Mosimann s Club for 2 years before moving to Cliveden Hotel for approximately 1 year with Ron Maxfield. He also worked for Conran Restaurants and opened the Orrery with Chris and Jeff Galvin. After that, he moved to the Ritz Hotel for nearly 10 years alongside Giles Thompson, Dominique Blais and John Williams. Finally he took over as Executive Pastry Chef at Phyllis Court Club in Henley where he stayed for 4 years before joining Town & Country Fine Foods. National Scottish Chefs Conference Dessert.
