Coat a 7x11 inch baking dish with nonstick cooking spray. Pound chicken breasts to 1/4 inch thickness. Sprinkle both sides of chicken breasts with salt and pepper. As soon as you get the chicken in the oven start the rice. Melt 1 Tbs. butter in a lidded skillet over medium-low heat. Cook and stir 1/4 cup orzo pasta, onion and 3/4 teaspoon freeze dried minced garlic until orzo is golden brown. 5 6 Now mix in the 1/4 cup of rice, chicken broth and 1/8 cup water. Increase heat to high and bring to a boil. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Put sliced carrots into a separate pan, cover them with water and salt to taste. Heat to boiling on high, once boiling reduce heat to medium-low, cover, and simmer until carrots are tender. 7 8 Remove chicken from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve. Remove rice pilaf from heat and let stand for 5 minutes, then fluff with a fork. Plate all of meal. Serve and enjoy your Delicious Family Dinner.
