LA RUSTICA HAM Using premium grade Free-Range pork, this ham has been triple smoked to create an authentic and rustic ham for the connoisseur. Gluten free. TRADITIONAL HAM Made from premium quality pork leg, our signature ham has a delicate smoked flavour and is a regular purchase for all families alike. EASY CUT HAM This ham is made from premium quality lightly cured legs of pork. It is smoked then slowly cooked in a pot to retain its natural juices to produce a succulent, juicy ham. Due to its unique shape, slicing is easy and economical with no wastage. GYPSY HAM Using the finest cut of pork leg, this lean ham is dipped in a caramelized glaze then naturally smoked, giving it a delicious smoky flavour.

3 continental smallgoods Fabbris' dry cured products are made from the finest of Australian pork. The pork is salted and matured for up to six months in atmospheric controlled rooms and assessed daily to ensure that every piece has that famous taste that people have come to love. PROSCIUTTO Thirty years of experience has resulted in Prosciutto being our signature product for which we are renowned. Prosciutto is cut from the female pork leg. With its rich burgundy colour, silky texture and sweet aroma, Fabbris Prosciutto is a pleasure to eat. CAPOCOLLO Capocollo is cut solely from the pork loin, making it extremely lean and is a must to any authentic antipasto platter. Available in mild and chilli. FLAT PANCETTA Made solely from the pork belly of large mature pigs over 120kg, ensuring optimum flavour, this product is salted then matured for over 12 weeks. Available in mild and chilli. PANCETTA SCHIACCIATELLA (ROUND) Originating from the pork belly and loin, Fabbris pancetta is tastefully infused with our specially prepared salt and cracked black peppercorn recipe to create a great addition to many cooked Italian pastas and sauces. Available in mild and chilli.

4 salami Our salami are made using Australian Pork which is cured and fermented for up to 60 days. Fabbris' range of salami is seasoned with special spices making them rich in taste and deep in flavour. CACCIATORE SALAMI This smaller sized hunter s style salami is produced with the perfect combination of spices and matured slowly to create a rich, full flavoured salami which always has you coming back for more. Available in mild and hot. TRUFFLE ARTISAN SALAMI Fabbris uses the finest pork to produce this specialty salami which is infused with truffle oil to give a unique and distinctive flavour, all enclosed in a natural casing. SOPRESSA ARTISAN SALAMI With its coarsely minced high quality pork and special blend of herbs and spices, the Fabbris Sopressa Artisan salami is enclosed in a curved natural casing and matured for up to 60 days to create this delicious salami that s rustic in its appeal and taste. CALABRESE SALAMI SOPRESSA SALAMI FELINO SALAMI Originating from the Southern Italian region of Calabria, the Fabbris Calabrese salami is made from coarsely ground pork, combined with spices, chilli and the capsicum flavour typical of Calabria. This combination results in a robust and spiced-up salami. Sopressa salami is easily identifiable by its larger diameter. It is made from coarsely minced pork, black peppercorns and other spices to create a full-flavoured salami. Available in mild and hot. The Felino salami is one of the treasures of Italian-style cured meats. Aged very slowly, our salami is extremely flavourful, balanced and smooth in texture. It s often called the King of Salumi. 5 bacon Prime quality Australian pork middles are cured to perfection and naturally wood smoked. The rind has been removed and the middles sliced to produce first quality rindless bacon rashers; ideal for tasty breakfasts, hot sandwiches and burgers. SHORT RINDLESS BACON A lean and premium bacon which has been cured and smoked for extra flavour. The rind has been removed. Available in rashers or full. KAISER FLEISCH This is the pork belly which has been cured and smoked to create a subtle salty flavour. Ideal for use in a Caesar salad or in your favourite pasta dish. beef Our beef line consists of three products that are salt-cured: the Corned Beef, the Eye Corned Beef and the multi award-winning Wagyu (9 Score) Bresaola. CORNED BEEF Corned Beef is terrific for your children s lunches as well as a refreshing addition to any salad on a hot summer s day. EYE CORNED BEEF e of products, including pre-sliced retail packets. Eye Corned Beef comes from the eye of the silverside and is the most lean of the Corned Beef products. WAGYU (9 SCORE) BRESAOLA With the highest possible marbling scoring of 9 which ensures the ultimate in tenderness and enhanced flavour, this Bresaola is made from high quality Sher Wagyu beef which is air dried to perfection to create a product that literally melts in your mouth.

PIZZA TOPPING CALABRESE SALAMI DICED BACON A julienne-cut pizza topping made from finely minced beef and pork, and combined with spices and flavours, has become popular amongst many of Australia s pizza shops. Produced using 100% pork, this feisty, succulent salami is a favourite amongst discerning pizza and meat lovers and those who look for that intense flavour. Available in mild and hot. continental sausages These small cubes of lean bacon are used most notably as a pizza topping, but are also used as a cooking ingredient in pastas and salad dishes, making our diced bacon so versatile. Shaved bacon also available. Our sausage selection is made using the freshest Australian pork and beef with a blend of carefully selected herbs and spices, all enclosed in a natural casing, giving the sausages an authentic European flavour. KRANSKY A sausage made from pork, beef, garlic and other delicious spices, our Kransky s are smoked and cooked only the way John can make them. Also available as Kransky with cheese. CHORIZO Made from beef and pork then seasoned with paprika and spices, our Spanish-style Chorizo is enclosed in a casing and lightly smoked. 8 about us Fabbris Smallgoods is a Melbourne family owned and operated business, established in Our products are distributed nationally and throughout New Zealand, and include Hams, Bacon, Frankfurts, Silverside and specialty lines such as Prosciutto, Salami, Capocollo, Pancetta, Kaiser Fleisch and more. At Fabbris, we are passionate about producing high quality smallgoods. Our products are more hand-made than mass produced and have come about from three generations of butchering and smallgoods culinary skills. We use traditional methods to maintain an authentic, rustic look and taste throughout the entire product range. We use only Australian pork and beef in all of our products and we are licensed and audited by Primesafe Victoria for the manufacture, storage and distribution of smallgoods. The HACCP (Hazard Analysis Critical Control Point) based food safety system of Fabbris Smallgoods ensures control at each phase of production.
