2 AÑEJOS? In the Country of Mexico the use of the word AÑEJO is most often associated with the quality of tequila, meaning aged, or brought to perfection. We have named our Restaurant AÑEJOS to reflect, not only, on the fine taste of our margaritas, but also to reflect on the experience our staff brings to the preparation and presentation of your dining experience. The AÑEJOS staff has over 70 years of combined experience in preparing and serving fine Mexican cuisine. ALL tequila is distilled from the blue agave plant grown on the blue volcanic soils in the highlands near the City of Tequila in the State of Jalisco, Mexico; no where else. Tequila was first bottled in the 16th century when King Carlos IV of Spain gave the first license to distill and bottle tequila to the Cuervo family. There are five categories of tequila: Blanco Joven Reposado Añejo Extra Añejo Not Aged (Silver) Blanco colored with caramel (Gold) Aged a minimum of 2 months in oak barrels (Aged) Aged a minimum of 1 year in oak barrels (Extra Aged) Aged a minimum of 3 years in oak barrels (Ultra Aged) With aging the harshness of the alcohol in tequila mellows. The tequila is then enhanced taking on the flavors and aromas of the oaken barrels. There also is a Mixto tequila made with 51% agave sugars and 49% other sugars. MARGARITAS Unlike most all restaurants, the AÑEJOS margaritas are made from a secret family recipe featuring freshly squeezed lime and orange juices. No concentrates are used. Our house margaritas are prepared with a nice reposado tequila enhanced with the flavor of a mixture of liqueurs. At AÑEJOS we offer our patrons the rare opportunity to enjoy a margarita mixed with a quality, Añejo, or Extra Añejo tequilas including 250 anniversario Jose Cuervo Limited Edition* Please ask your wait person for prices for each. If there is a tequila you prefer that is not on our list, please tell your wait person and we will add that tequila to our inventory. *This 250 anniversario Jose Cuervo Limited Edition, extra añejo tequila sells at a list price of $2,250 per bottle. There were only 2 bottles of this very fine tequila made available for sale in the State of Minnesota.
