2 Formal Pork Bowtie Fajitas Pasta with with Spicy Sausage Chipotle and Adobo a Green Sauce Salad with Home and Spanish Made Vinaigrette Rice (for 2) 1 2 Wash pepper. Cut up 3/4 of a pepper and 3/4 of an onion into long slices lengthwise. Chop the remaining 1/4 of both the onion and the pepper into small dices. Keep separate. Slice pork into 1/4 inch strips, removing any fat. In a blender or food processor mix 1/4 cup mayonnaise, 1/2 Tbs. adobo sauce from chipotle chilies and up to 1 chipotle chilies (depending on preference of desired spice). This will be the topping for the fajitas. Refrigerate after blending. 3 4 In a medium pot with a lid heat 1 Tbs. of oil over medium heat. Add diced onion, diced pepper and uncooked rice. Sauté uncovered until rice starts to brown then add all chicken broth, 1/2 tsp. salt and 5 ounces of Rotel. Stir. Increase heat to high and bring to a boil. Once boiling cover and reduce heat to a low simmer for 20 min. While rice is cooking prepare a large frying pan or wok with 2 Tbs. olive oil. Once oil is heated on medium to medium-high heat, add onion slices and pepper slices. Sauté until onions are translucent and peppers are al dente. Remove from frying pan with tongs so that the oil is left in pan and set vegetables aside, keeping warm. 5 6 Add sliced pork to the frying pan with remaining oil. Sauté on medium to medium-high heat so that the meat browns. Cook until pork is cooked through then add 1 Tbs. fajita seasoning and 1 Tbs. water to pan. Stir frequently and sauté/ boil until liquid is reduced down but some still remains mixing with the seasoning like a sauce. Add onions and peppers toss together. Remove from heat, squeeze juice from one lime over pork, onions and peppers and cover to keep warm On a flat frying surface, heat griddle or frying pan to medium high heat. Carefully lay partially cooked tortillas on the griddle surface, one at a time. No oil is needed. Flip the tortilla when it starts to brown. Cook both sides until color is consistent on each side and is heated through. (Approximately 8 seconds on each side) Rice should be done. Serve fajitas individually and let each person create their own fajita, adding as much or little sauce as they would like. Serve Spanish rice on the side. Enjoy your Delicious Family Dinner!
