3 SUPER EASY CHICKEN FAJITAS SERVES 4 PREP & COOK TIME 20 min 2 c. PERDUE SHORT CUTS Carved Chicken Breast, Original Roasted (9 oz.) Tbsp. olive oil red bell pepper, sliced green bell pepper, sliced tsp. fajita spice blend 2 c. picante sauce or salsa 4 medium flour tortillas, warmed (8-inch) OPTIONAL Sauteed onions Lime wedges Shredded lettuce Shredded Cheddar or Monterey Jack cheese Sour cream Avocado STEP : Sauté In a large skillet, heat olive oil over medium-high heat. Add bell peppers and cook, stirring frequently, 5 minutes. Add chicken and fajita seasoning and cook another 2 minutes, until chicken is heated through. STEP 2: Combine To skillet, add picante sauce and cook, stirring occasionally, 3 to 5 minutes. STEP 3: Serve Spoon chicken mixture into warmed tortillas. Top with sautéed onions, picante sauce, lime wedges, shredded lettuce, shredded cheese and sour cream, if desired. Fold to enclose fillings and enjoy. 4 CHIPOTLE LIME GRILLED CHICKEN WITH STRAWBERRY SALSA SERVES 4 PREP & COOK TIME 40 min 4 PERDUE PERFECT PORTIONS Boneless, Skinless Chicken Breast, All Natural (.5 lbs.) 4 tbsp Olive Oil, divided 2 Limes, zested and juiced Chipotle Pepper in Adobo Sauce, chopped 2 tbsp Adobo Sauce 2 tsp Salt, divided 2 c. Strawberries, diced 3 c. Red Onion, finely diced 2 Tbsp. Cilantro, chopped 2 tsp Honey STEP : Marinate In a resealable plastic bag, combine the chicken breasts, 3 tbsp. olive oil, lime zest and juice, chipotle pepper, Adobo sauce and 4 tsp. salt. Toss to coat, and refrigerate for at least 30 minutes. STEP 2: Combine In a bowl, combine the diced strawberries, red onion and cilantro to make salsa. In a bowl, stir together the remaining tbsp. olive oil, lime zest and juice, 4 tsp. salt and honey. Pour over salsa and toss to combine. Chill until ready to serve. STEP 3: Grill Heat a lightly greased grill or grill pan to medium-high heat. Remove chicken breasts from the marinade and discard the marinade bag. Grill the chicken breasts for 4 to 5 minutes on each side. Chicken is done when it feels firm to the touch and a meat thermometer inserted in the center reaches 70 F. Remove from the grill and let rest for 2 to 3 minutes before serving. STEP 4: Serve Place a grilled chicken breast on a plate and top with strawberry salsa. 5 SIMPLY SMART ASIAN CHICKEN SALAD SERVES 4 PREP & COOK TIME 35 min bag PERDUE SIMPLY SMART Lightly Breaded Chicken Strips (0 oz.), fresh 3 cup vegetable oil 4 cup rice vinegar 2 Tbsp lime juice, about 2 lime 2 tsp light brown sugar 2 tsp fresh ginger, grated 2 cups napa cabbage, chopped 2 cups romaine lettuce, chopped 2 cup red cabbage, shredded 2 cup carrots, shredded 2 cup snow peas (cut in half) 4 cup toasted sliced almonds 4 cup wonton strip salad topping STEP : Bake Preheat oven to 425 F. Spray baking sheet with cooking spray. Place the chicken strips in a single layer on the baking sheet. Bake on the middle oven rack for 6 to 7 minutes or until heated through. Turn chicken halfway through heating time. Let stand for to 2 minutes before serving. Chop strips into 4 to 6 chunks. STEP 2: Whisk In a large bowl, whisk together the vegetable oil, rice vinegar, lime juice, brown sugar and ginger. Whisk until the sugar dissolves, then set aside. STEP 3: Toss Into the bowl, add the Napa cabbage, romaine lettuce, red cabbage, carrots and snow peas. Toss the salad with rice vinegar dressing. STEP 4: Serve Divide the salad between 4 plates.
