3 WSKG and Working on Wellness (WoW) partner Lourdes Hospital are very excited to bring this collection of recipes to you from our After School Fuel Recipe Contest. These original, nutritional recipes were submitted from students across WSKG's twenty-one county coverage area. Recipes reflect original submissions with limited editing for clarity purposes. The WoW program is supported by the Conrad & Virginia Klee Foundation and the Corporation for Public Broadcasting. WoW focuses on the topic of childhood obesity offering resources and tools to families, students, and teachers. We hope you enjoy making these creative, nutritious after school snacks. 6 Shakes and Smoothies Berry Sweet Shake! Blender Measuring Cups Serving Cups Recipe by Emma & Ava School: Chenango Forks Middle School Teacher: Mrs. Breck Grade: 7 th Emma and Ava say this recipe is healthy because instead of using ice cream, we use frozen yogurt, which has less fat. Plus, we use two fruits that are fresh and delicious! Lastly, we use fat free milk rather than 1% or 2% milk. 4 Cups Your Choice of Frozen Yogurt 1/2 Cup Semi-Sweet Chocolate Chips, Minis 1 Cup Strawberries 1 Cup Raspberries 2 Cups Fat Free Milk 1. Put all ingredients in the blender except chocolate chips. 2. Blend ingredients in blender. 3. When smooth, pour equally into four glasses. 4. Now garnish each glass with the chocolate chips. 7 Shakes and Smoothies Fruity Citrus Smoothie Blender Measuring Cups Measuring Spoons Serving Cups Recipe by Julia School: Delhi Elementary School Teacher: Mrs. Coleman Grade: 5 th Julia says this is a nutritious recipe because it has juice, fruit, and yogurt, along with milk. All of these things are nutritious and keep your body running smooth! It is a great after school snack that is healthy for you. 1/2 Cup Milk 3 Tbsp Sugar 2 Cups Low Fat Yogurt (Any Flavor) 1 Cup Crushed Ice 1 Tbsp Lemon Juice 1/2 Cup Berry Punch 1 Banana 1 Cup Orange Juice Prep Time: About 5 minutes Blend all ingredients together until thick and smooth. 8 Shakes and Smoothies PB&A with Bananaberry Smoothie Blender Knife Measuring Cups Measuring Spoons Serving Cups Serving Plates Recipe by Shayna & Tomiko School: Thomas Jefferson Elementary School Teacher: Ms. Carr Grade: 4 th According to Shayna and Tomiko, Fruit is nutritious and apples, berries, and bananas are fruit. Milk has calcium. Natural peanut butter is high in protein. Cheese has calcium, same with yogurt. Honey is a natural sweetener. PB&A Sandwich Organic Apples Cheese Natural Peanut Butter Bananaberry Smoothie - Serves 2 People 1 Cup Frozen Berries 1/2 Organic Banana 1 Cup Vanilla Yogurt 1/2 tsp Honey 1/4 Cup Milk How to make a PB&A Sandwich: 1. First you cut the apple right side up. 2. Then you slice the cheese. 3. Then you spread the peanut butter on a slice. 4. Last, put it together and enjoy. How to make a Bananaberry Smoothie: 1. First pour frozen berries into blender. 2. Then you put a banana in the blender. 3. Then pour vanilla yogurt into the blender. 4. Then put in the honey. 5. Then you pour the milk into the blender. 6. 9 Shakes and Smoothies Tropical Delight 2 Blender or Food Processor Can Opener Ice Cream Scooper or Spoon Measuring Cups Serving Cups Recipe by Kelly & Olivia School: Chenango Forks Middle School Teacher: Mrs. Breck Grade: 7 th Kelly and Olivia say this is a nutritious recipe because everything in it is healthy. The fruits have lots of vitamins, as well as contributing to your 5 fruits and veggies a day. Also, the healthier milk and ice cream provide vitamin D and calcium for strong bones. This recipe is also a great way to show your kids that a quick snack doesn t have to be unhealthy. 1/2 Cup Fat Free Milk 3 Rings of No Sugar Added Pineapple, Canned 10 Frozen Mango Chunks, Thawed 15 Mandarin Orange Sections, Canned in Light Syrup or Fruit Juice 3 or 4 Peach Slices, Fresh or Frozen 3 Scoops Vanilla Ice Cream 1. Add all ingredients to a blender or food processor, chunkier items down closest to the blades. 2. Blend until smooth. 3. Pour some out to taste test. 4. Kori says, it has many fruits and you can make it fast and easy. 3 or 4 Strawberries 10 Grapes 1 Cup Cherries 1 Cup Blueberries 1/2 of a Watermelon, Chopped Up 1 Apple, Chopped Up 1 Cup Low Fat Banana Yogurt 1 Cup 1% Low Fat Milk 1 Cup No Sugar Added Orange Juice 1 Cup No Sugar Added Apple Juice Mix all ingredients in a blender. 12 Frozen Treats Tropical Smoothiesicle 2 Aluminum Foil Paper Dixie Cups Popsicle Sticks Recipe by Kelly & Olivia School: Chenango Forks Middle School Teacher: Mrs. Breck Grade: 7 th Kelly and Olivia say this is a nutritious recipe because everything in it is healthy. Cover each cup with aluminum foil then poke a popsicle stick through the foil (one per cup). 4. Put the cups in the freezer and let them freeze over night (or for a few hours until frozen). 5. To enjoy, carefully remove the foil but not the popsicle stick. 6. Using the seam up the side of the cup, peel off the cup. 7. Enjoy. After School Fuel Recipe Book 12

It is healthy and nutritious. Give it a try. Yogurt (Any Flavor) Fresh Fruit (I like strawberries, but you can use any kind.) Sunflower Seeds 1. First get a bowl and put in all of the yogurt. 2. Cut up the fruit and place in yogurt. 3. Add the sunflower seeds. 4. Enjoy your delicious, nutritious snack. After School Fuel Recipe Book 15

16 Yogurt-y Snacks Yogurt Surprise Blender Measuring Cups Serving Cups Recipe by Tyler & Colin School: Chenango Forks Middle School Teacher: Mrs. Breck Grade: 7 th Tyler and Colin say this recipe is nutritious because it has dairy and fruit so you get vitamins and minerals. 1 Banana, Cut Up 2 Small Boxes Raisins (about 1 Cup) 2 Cups Milk 1 Cup Yogurt 1 container Blueberries (about 1 Cup) 1. Put the banana and raisins in a blender. 2. Add milk and yogurt. 3. Blend until smooth and done. 4. Add blueberries for the sweet and sour taste. After School Fuel Recipe Book 16

18 Dips Carrot Hummus Can Opener Knife Measuring Cups Measuring Spoons Potato Masher Sauce Pan with Cover Serving Bowl Recipe by Alex Andria School: Faith Mountain Christian Academy Teacher: Mrs. Frantz Grade: 8 th Alex says, The abundance of betacarotene in the carrots and the fiber in the chickpeas makes this dip a great immunity booster. It also fights cancer, helps arthritis, increases energy, and controls blood sugar. 1 Cup Chopped Carrots 1 15 oz can Chickpeas 1/4 Cup Tahini 2 Tbsp Lemon Juice 2 Garlic Cloves, Chopped 1/2 tsp Ground Cumin 2 Tbsp Parsley and Basil Water Tortilla Chips 1. In a small sauce pan, cook carrots in a small amount of water until tender (about 6 minutes). 2. Drain. 3. Mash chickpeas and carrots with a potato masher. 4. Add the rest of the ingredients and stir. 5. Serve at room temperature with tortilla chips. After School Fuel Recipe Book 18

19 Dips Fruit Fluff Mixer Serving Bowl Recipe by Katelyn School: Chenango Forks Middle School Grade: 6 th This fruit dip can be served with any fruits: apple, pineapple, grapes, bananas, strawberries, etc., says Katelyn. It s a fun way to eat fruit and great in the Spring and Summer. 1 Jar Marshmallow Fluff 1 8oz Brick of Cream Cheese, Regular Apples, Grapes, Strawberries, Etc. 1. Make sure cream cheese is soft. 2. With a mixer, blend fluff and cream cheese together. 3. Serve with fruit. After School Fuel Recipe Book 19

20 Dips Super Creamy Bean Dip Can Opener Food Processor Garlic Press (or Knife) Measuring Cups Measuring Spoons Serving Platter Recipe by Ian School: Home Schooled Teacher: Mrs. Bender Grade: 3 rd Ian says this is a nutritious recipe because beans are high in fiber and protein. Olive oil has healthy unsaturated fat and antioxidants. Garlic is high in antioxidants and it helps the immune system. Lemons are low in sugar and are full of vitamin C. Super Creamy Bean Dip is one of six winning entries from the After School Fuel Recipe Contest. 1 Can Great Northern Beans (15.5 oz), Partly Drained 1/8 Cup Extra Virgin Olive Oil 3 Small Garlic Cloves, Minced 1 1/2 tsp Fresh Lemon Juice Salt & Pepper to Taste 1 Shake Cayenne Pepper Raw Veggies, Crackers, Corn Chips, or Whole Wheat Pitas 1. Put all ingredients in a food processor. 2. Blend until very smooth. 3. Serve with raw veggies, crackers, corn chips, or whole wheat pitas. After School Fuel Recipe Book 20

22 Wraps and Fold-Ups Better Than Candy Snack Knife Measuring Cups Measuring Spoons Mixing Bowls Serving Plates Recipe by Riley School: Home Schooled Teacher: Mrs.Bender Grade: 4 th Riley says this is a nutritious recipe because peanut butter is high in protein and vitamin E. Dates are a good source of fiber and potassium. Coconut is high in protein. Honey is an antioxidant and is an immune booster. Whole wheat is high in fiber and manganese. This recipe is an honorable mention recipe in the After School Fuel Recipe Contest. 6 Whole Wheat Medium-Sized Wraps 1 Cup Dates, Chopped 6 Tbsp Coconut, Unsweetened and Shredded 3/4 Cup Natural Peanut Butter Honey 1. Layout wraps. 2. Spread 2 tbsp of peanut butter on each wrap. 3. Sprinkle 1 tbsp of coconut on each wrap. 4. Sprinkle an even amount of dates on each wrap. 5. Drizzle lightly with honey. 6. 23 Fruit Fold-Ups Wraps and Fold-Ups Knife Microwave Microwave Safe Bowl Microwave Safe Plate Plastic Bag Serving Plate Spoon Recipe by Ella & Sela School: Thomas Jefferson Elementary School Teacher: Miss Herba & Miss Taylor Grade: 5 th Ella and Sela say this is a nutritious recipe because it has fruit, which has natural sugars. Also, it contains peanut butter, which is extremely high in protein and low in carbohydrates. Cheese is high in both protein and calcium. Fruit Fold-Ups is one of six winning entries from the After School Fuel Recipe Contest. 1 Jar Peanut Butter Assorted Fruit (Apples, Bananas, Raisins, Strawberries, Etc.) Small Whole Wheat Tortillas Sharp Cheese (Cheddar, Monterey Jack) 1. Put tortillas on plates and warm them up in the microwave for 30 seconds. 2. Take the lid off the peanut butter jar and warm in the microwave for 15 seconds. 3. Take the peanut butter out of the microwave and spread over the tortillas. 4. Thinly slice the fruit. Each slice should be about 1/4 inch thick. 5. Press the fruit into the peanut butter on the tortilla. 6. Cut off part of the cheese. little pieces and put them into a small bowl. 8. Microwave cheese for one minute. 9. Use a spoon to drizzle the melted cheese on the tortillas. 10. Fold in one side, then the other side so that the Fold- Up looks like a burrito - don't be afraid to press down even if the apples snap in half. 11. Cut Fold-Ups into inch-wide slices. 12. 25 Fun Snacks Apple Canoes for Two Knife Serving Plates Recipe by Megan & Katherine W.R. Croman Elementary School Teacher: Ms. Lee Grade: 4 th According to Megan and Katherine, this recipe is nutritious because the apples are high-fiber. An apple with skin has about 3 grams of dietary fiber. Vitamin C is its most important vitamin. Peanut butter has calcium, vitamin E, and protein. Cheerios have a good source of fiber, calcium, vitamins, and minerals. Apple Canoes for Two is one of six winning entries from the After School Fuel Recipe Contest. 1 Apple Peanut Butter 12 Five Grain Cheerios 6 Small Pretzel Sticks 12 Raisins 1. First, take your apple and cut it into six slices. 2. Next, put two small globs of peanut butter on each apple slice (one in the middle and one near the end). 3. Take the cheerios and put one on each glob of peanut butter to make heads. 4. Now, the pretzel sticks go on the apple slice in the peanut butter in front of the first person of the canoe. 5. Put some more peanut butter on the ends of the pretzel sticks. 6. Finish it off by sticking raisins on the ends of the pretzel sticks. After School Fuel Recipe Book 25

26 Fun Snacks Banana Crunch Pop Knife Stick Serving Plates Recipe by Brennan & Abby School: Thomas Jefferson Elementary School Teacher: Mrs. Brown & Mr, Walker Grade: 3 rd & 1 st Brennan and Abby say this is a nutritious recipe because peanut butter has protein. Banana has vitamins. Granola has fiber. This recipe is an honorable mention recipe in the After School Fuel Recipe Contest. Banana Granola Nutella or Peanut Butter 1. Peel banana. 2. Spread Nutella or peanut butter on banana. 3. Roll the banana in granola. 4. Put the banana on a stick. 5. Eat it. After School Fuel Recipe Book 26

27 Crickets on Sand Fun Snacks Can Opener Food Processor Knife Measuring Cups Measuring Spoons Serving Bowls Serving Plates Recipe by Brittany & Bryce Horseheads Intermediate, Center Elementary Teacher: Mrs. Hartman & Mrs. Karastury Grade: 6 th & 4 th Brittany and Bryce say, this is a nutritious recipe because it is high in fiber, protein, vitamins, and minerals. The combination of the rice cakes, hummus, and edamame supplies you with a super snack full of crunchy healthy GOODNESS, TASTESS! Crickets on Sand is one of six winning entries from the After School Fuel Recipe Contest. Plain Rice Cakes or Small Multigrain Tortilla Chip Bowls Edamame Hummus Ingredients: 3 Cups Chickpeas (2-15 oz cans), Reserve Liquid 6-12 oz Roasted Red Peppers 1 Roasted Garlic Bulb 1/2 Cup Sesame Paste 2 Tbsp Olive Oil 2 Tbsp Chickpea Liquid Roasted Red Pepper Hummus (See below.) or Water 4 tsp Lemon Juice (1/2 Small Lemon) 1/2 tsp Sea Salt 1/4 tsp Cumin 1/4 tsp Paprika 1/8 tsp Black Pepper 1. Roast red peppers in oven until charred. 2. Peel and cut the peppers. 3. Put chickpeas in a food processor. 4. Run food processor until chickpeas are mushy. 5. Add remaining hummus ingredients to food processor. 6. Blend until smooth. 7. Chill mixture. 8. Spread hummus on rice cakes or fill tortilla chip bowls. 9. Top with edamame. 10. Enjoy! Store left over hummus in refrigerator for up to 7 days. You can also use store-bought hummus to make Crickets on Sand. After School Fuel Recipe Book 27

28 Fun Snacks Fruit Balls Bowl Knife Measuring Cups Measuring Spoons Mixing Spoon Serving Bowl Wax Paper Recipe by April School: New Albany Elementary School Teacher: Mrs. McMann Grade: 5 th April says this is a nutritious recipe because it has whole grain, fruit, and vitamins, and I use Splenda instead of sugar, and honey is good for you also. Fruit Balls is one of six winning entries from the After School Fuel Recipe Contest. 4 Cups Whole Grain Cheerios 2 Cups Strawberries 3 tsp Splenda 1 Cup Honey 1. Put 4 cups of Whole Grain Cheerios in a bowl. 2. Add diced strawberries, Splenda and honey. 3. Mix all the ingredients together really good. 4. Put a spoon full in your hand and roll in your hand like you are making a meatball. 5. Roll it tight then let it sit on wax paper for 5-10 minutes. 6. It s quick and easy and delicious. 1/2 of a Graham Cracker 1 Tbsp Cream Cheese 1 Tbsp peanut butter Fresh Fruit (Strawberries, Blueberries, Banana, Clementine Orange Slices) 1. Spread cream cheese on cracker. 2. Spread peanut butter on cream cheese. 3. Top with the fruit of your choice. 4. Eat and enjoy. After School Fuel Recipe Book 29

30 Fun Snacks Fruit Trail Mix Measuring Cups Ziploc Bag Recipe by Becky School: Chenango Forks Middle School Mother: Christell Grade: 7 th Becky says this is a nutritious recipe because it has vitamins from a variety of fruits and protein from the peanuts. Fruit Trail Mix is one of six winning entries from the After School Fuel Recipe Contest. 1/2 Cup Craisins 1/2 Cup Raisins 1/2 Cup Dried Blueberries 1/2 Cup Banana Chips 1/2 Cup Peanuts Measure all ingredients into a zip-to-seal storage bag. 31 Fun Snacks Mediterranean Tomato Bites Baking Sheets Knife Serving Plate Recipe by Alex Andria School: Faith Mountain Christian Academy Teacher: Mrs. Frantz Grade: 8 th Alex Andria says, This recipe contains very little sugar, tomatoes contain vitamin C, and oregano is an immunity booster. 1 Package (17 1/3 oz) Frozen Puff Pastry 6 Plum Tomatoes, Thinly Sliced 4 oz Feta Cheese, Crumbled Fresh Basil, Minced Fresh Oregano, Minced 1. Preheat oven to 400 degrees. 2. Grease baking sheets. 3. Unfold puff pastry and cut into 16 bite-sized squares. 4. Put pastry squares on baking sheets. 5. Top with tomatoes and feta cheese. 6. Bake minutes or until golden brown. 7. Top with herbs. 8. Serve warm or at room temperature. After School Fuel Recipe Book 31

Parker Elementary School Teacher: Mrs. Kelemen Grade: 2 nd Zachary says, This is a nutritious recipe because it incorporates different food groups and is filling and delicious! It is a great source of energy. 1 English Muffin, Split in Half 1 Tbsp Peanut Butter 1 Crushed Cinnamon Graham Cracker Craisins 1. Split the English muffin and toast it lightly. 2. Spread the peanut butter over both sections of the muffin. 3. Crush and sprinkle the cinnamon graham cracker over the muffin also. 4.
