1 Page 1 of 7 TCAT FRUITS: VARIOUS TYPE (FOR SFS) 1. SCOPE This specification lays down the requirements for the supply of fresh fruits to the customer. 2. APPLICABLE DOCUMENTS The latest edition of all applicable documents as listed below is to be used at the time of tender. 2.1 The Singapore Food Regulations 2.2 The Singapore (Amendment) Regulations 3. DEFINITION For the purpose of this specification, the term fruit shall refer to all types of fresh, wholesome fruits approved for issue to customer. 3.1 Types Of Fruit a. Apple Red & Green of various species and varieties b. Bananas Pisang Emas, Tali, Hijau, Raja, Berangan species c. Honey Dew Melon / Rock Melon d. Kiwi Fruit e. Mandarin Orange f. Mango g. Orange h. Papaya i. Pear China & Australia Varieties j. Persimmon k. Pineapple l. Plum m. Watermelon Red & Yellow (Seedless or with seeds) n. Nectarine o. Dragon Fruit p. Pomelo q. Others, as approved by authority 4. REQUIREMENTS 4.1 General Any type of fruit supplied to the customer shall conform to the following general requirements:

2 Page 2 of Shall be sound, mature and not diseased, injured or otherwise in an abnormal condition Shall be of good average size, reasonable uniform in quality, colour, shape and ripeness for its variety and class Must be at a stage of ripeness suitable for the day of consumption The pesticides contents of the fruits must also comply with the requirements as specified in the Singapore Food Regulations The detailed requirement for each type of fruits is specified in Para Inspection The mode of inspection shall be a random sampling of 10% or more of the consignment for visual as well as organoleptical assessment Any defect such as rotten, bruises, discolouration, unripe, soft wilted, diseased/infested by insects, fungus, virus, bacterium or parasite would be considered as a defect to each fruit inspected The percentage of defectives shall be compensated in kind (or other suitable means) as specified by authority to each indent made by customers (where applicable) The percentage (%) defectives is calculated as follows % Defective = No. Of Fruit Found With Any Defect x 100% No of Sample Drawn Para to Para are not applicable to local fruits i.e. Banana, Pineapple and Watermelon. In this case, visual checks on external appearance for defects such as rots, bruises, discolouration, soft, wilted, diseased/infested by insect, fungus, virus, bacterium or parasite, and ripeness shall be carried out. Any rejection shall be replaced before issue to units All fruits offered to authority shall be subjected to physical checks such as weight and measurement as specified in this specification. 5. QUALITY ASSURANCE PROVISIONS 5.1 Responsibility For Inspection The supplier shall be responsible for the performance of all inspection requirements as specified. authority has the authority to perform any of the inspection as set forth in this specification to ensure that the supplies conform to the requirements as laid out.

3 Page 3 of Approval For Acceptance Authority Quality Assurance (QA) Officers shall verify the acceptance of all supplies unless otherwise agreed upon. Any consignment, if in the opinion of the QA Officer is inferior in quality or differ in any respect from the specification, may be rejected The unit shall have the right to inspect the fruit delivered. Any fruit found to differ in any respect to the requirements as stipulated in this specification, shall be rejected. All cases of rejections by units must be replaced by the supplier on the same day unless agreed upon by the unit concerned and the supplier. 5.3 Sampling Sampling plan and procedure of inspection shall be at the discretion of the DSTA QA Officer. 6. PREPARATION FOR DELIVERY 6.1 Packing All deliveries shall be made in clean baskets lined with brown paper/suitable paper or suitable carton board for the types of fruits. The packaging must be able to give proper and adequate protection against further damage/injury to the fruit during transportation to the units. The fruit must also be protected from adverse conditions of rain, heat and contamination by any mean The basket/carton must not be over-filled or over-crowded so as to minimize the damages caused to the fruits at the lower part of the basket/carton The top layer of the fruit in each basket/carton must be a true indication of the average quality. 6.2 State Of Storage And Delivery The fruit may be kept/stored in chilled or other conditions suitable to the type of fruits Only local fruits may be delivered in clean, well-covered truck/vehicle to each camp in such a manner that it remains in good condition ie. not damaged or injured or overripe. Whole fruit referring to apples (red & green), orange, pears etc. shall be delivered in chilled condition in insulated/refrigerated truck to the customer. Other form of delivery shall be approved by authority. 7 DETAILED REQUIREMENTS 7.1 Apple (Red & Green) a. Shall be fresh, wholesome and of its characteristics colour according to the species/variety. b. Shall be ripe, and of its characteristics state at the point of consumption. c. Shall not have extensive blemishes and must be free from damage.

4 Page 4 of 7 d. Shall be crunchy and not soft or spongy. e. Shall be of a minimum weight of 120g per number. 7.2 Banana a. The species to be supplied include: a. Masak Hijau b. Raja c. Tali or Rastali d. Emas e. Berangan b. Shall be well-developed, firm, properly matured but not over-ripe. c. Shall be free from defect such as abrasions, withering and other damages caused by insects, disease or mechanical means. d. Must not be soft or spongy. e. The type to be supplied shall be of the same variety which is the consistent size and quality. f. The minimum criteria of the fingers for a comb of each species shall be as follows: Species Min. Length Circumference At The Centre (min) Masak Hijau 16cm 12cm Raja 15cm 10cm Tali or Rastali 12.5cm 10cm Emas 10cm 9.5cm Berangan 13cm 9cm NB: -Length refers to the measurement taken on the outer curvature from the basal end to apex. 7.3 Honey Dew Melon / Rock Melon a. Shall be greenish yellow or orangey yellow in colour. It may be smooth or slightly rough skin depending on the species. b. Shall be firm, mature and well-formed but not overripe. c. Shall not have any rot and extensive blemishes. d. Shall not have cracks, be broken or damaged. e. The flesh shall be of attractive greenish white colour which is the characteristic of a ripe fruit. f. Shall not be fibrous but be juicy and sweet. g. Shall weigh at least 1kg each.

5 Page 5 of Kiwi Fruit a. Shall be brown in colour and possess a velvet like skin. b. Shall be firm, mature and juicy and not overripe. c. The flesh shall be green in colour. d. Shall not have any rot and extensive blemishes. e. Shall be of a minimum weight of 80g per number 7.5 Mandarin Orange a. Shall not be abnormally puffy, ie. the rind loosened from the flesh. b. Shall be juicy and sweet. c. Shall not have any mould growth, bruises or damages. d. Shall be of a minimum weight of 120g per number. 7.6 Mango a. Shall be yellow to green in colour depending on the species. b. Shall be firm and able to withstand slight pressure exerted between the palms of the hands and at the right stage of ripeness. c. Shall be free from worms, rot, damage or injury. d. Shall have an average weight of 160g. 7.7 Orange a. Shall be mature, of its characteristics shape and appearance. b. Shall be juicy and sweet. c. Shall not have thick rind, mould growth, bruises or damages. d. Shall be of minimum weight of 120g per number. 7.8 Papaya a. Shall be yellowish green in colour on its skin. b. Shall weigh at least 1.2kg each. c. Shall be firm and able to withstand slight pressure exerted between the palms of the hands and at the right stage of ripeness.

6 Page 6 of 7 d. Shall not be soft, spongy or damaged or suffer any injury. e. Shall not be fibrous or have unpleasant taste. 7.9 Pears (of various species / varieties) a. The varieties supplied are 1. China Type (including fragrant and various species) 2. Australia Variety b. Shall be the characteristic colour for each type. c. Shall be crunchy, juicy and sweet. d. Shall not have broken skins, rancid or be seriously blemished or injured by disease. e. Shall be of a minimum weight of 120g per number 7.10 Persimmon a. Shall be mature, firm and not soft, of its characteristics shape and appearance. b. Shall be reasonably sweet. No mould growth, bruises or damages. c. Shall be of minimum weight of 120g per number Pineapple a. Shall be ripe yellow, juicy and sweet. b. Shall be firm and well-formed. c. Shall be free from any damage or injury, knobs or more than two tops. d. The skin must be dry. e. The eyes must be well-developed. f. The shape of the fruit must not taper to a point. g. The butt must not be damaged. h. Shall weigh at least 1.3kg each Plum (of various varieties) a. Shall be clean, sound, free from broken skins or other injury. b. Shall be juicy, fleshy and reasonably sweet. c. Shall be firm, mature and not over-ripe.

7 Page 7 of 7 d. Shall weigh a minimum of 65g per number Watermelon (Red / Yellow Flesh) a. Shall be light or dark green in colour. b. Shall be firm, mature and well-formed but not overripe. c. Shall not be cracked or broken or damaged. d. The flesh shall be attractive pink to reddish colour characteristics of a ripe fruit. e. Others species ie. seedless or yellow flesh may also be supplied. f. Shall not be fibrous, of dry centre or thick white part and must be juicy and sweet. g. Shall weigh at least 3.5kg each Nectarine (of various species / varieties) a. Shall be clean, sound, and free from broken skins or other injury. b. Shall be juicy, fleshy, of characteristic taste and reasonably sweet. c. Shall be firm, mature and not over-ripe. d. Shall weigh a minimum of 65g per number Dragon Fruit a. Shall be firm and well-formed, of the right state of ripeness. b. Shall be juicy and reasonable sweet. c. Be free from defects such as abrasions, bruises, withering or other damages caused by insects, diseases or mechanical means. d. Shall weigh at least 300g each Pomelo a. Shall be mature, of its characteristics shape and greenish appearance. b. Shall possess the thick rind but free from mould growth, bruises or damages. c. Shall be juicy and not too sour or bitter. d. Shall be of minimum weight of 500g per number.
