2 INTRODUCTION Our wine menu has been carefully selected to bring you wines from around the world and a range of grape varieties to suit all palates and preferences. This year we continue our Hilton Reserve Selection. Hundreds of the world s most respected wines have been sampled and a select few have been hand-picked from the very best producers and regions. Working with our wine partners we are proud to offer this range for you to enjoy and savour. These wines by their very nature are rare with limited availability and should your choice be unavailable we apologise in advance and will be glad to offer a suitable alternative. WHITE WINES FRESH, CRISP & DRY WHITES Wines in this section are refreshing and elegant, ideal as an aperitif and can be enjoyed with light salads, seafood and delicate white meat dishes. 1 Pinot Grigio Montemarino, Veneto, Italy, 2010/11 Bright and refreshing with a touch of pear and floral aromas, enjoy without food or with leafy salads and light fish dishes. 2 Chardonnay (un-oaked) Berri Estates, South-Eastern Australia, 2010/11 Vibrant ripe lemon and tropical fruit flavours combine to make this a very easy to enjoy wine. 3 Catarratto Sun Tree, Sicily, Italy, 2010/11 Touches of ripe peachy fruits combine with delicate citrus notes. 4 Sauvignon Blanc Monte Verde, Central Valley, Chile, 2010/11 Tantalisingly fresh with succulent gooseberry fruit flavours, enjoy with or without food. FRUITY, AROMATIC WHITES These wines exhibit distinctive fruity characteristics, great without food or perfect with chicken, creamy butter based sauces, Asian fusion cuisine and soft cheese. 5 Sauvignon Blanc Drylands, Marlborough, New Zealand, 2010/11 Herbaceous and vibrant, with flavours of passion fruit. 6 Marsanne/Viognier Rare Vineyards, Pays d Oc, France, 2010/11 Honeysuckle and peach aromas combine with soft ripe apple fruit flavours. 7 Chenin Blanc Cape 1652, Western Cape, South Africa, 2009/10 Refreshing melon and guava fruit flavours with a juicy finish. 8 Sancerre La Fuzelle, Adrien Maréchal, Loire, France, 2009/10 Elegant with graceful hints of green grass and grapefruit, a classic mineral vein to finish. 3 ELEGANT AND DISTINCTIVE DRY WHITES The wines below have been made without the use of oak ageing during production to fully display the characteristics of the grapes used. Enjoy without food or with light pork and chicken dishes, Caesar salad and deep sea fish dishes. 9 Chablis Gloire de Chablis, J. Moreau et Fils, France, 2009/10 Delicate green fruits and a flinty backbone deliver a complex range of flavours and aromas in this classic French wine. 10 Albariño Viña 24, Raimat, Costers del Segre, Spain, 2009/10 Aromas of dried flowers blend with refreshing subtle citrus and peach fruit flavours and a touch of vanilla spice. 11 Pinot Grigio Borgo Tesis, Fantinel, Grave del Friuli, Italy, 2010/11 Treat yourself to this fuller flavoured example of this popular grape, ripe peach and pear aromas combine with complex herbaceous flavours on the palate. 12 Chardonnay Emporium, Sicily, Italy, 2009/10 Soft green apples and ripe lemon fruit flavours fuse together perfectly with a lingering succulent finish. 13 Cloudy Bay Sauvignon Blanc, Marlborough, New Zealand, 2010/11 Simply iconic, Cloudy Bay is still the benchmark for New Zealand Sauvignon Blanc, with pure and striking flavours that combine notes of lemon zest, gooseberry and mango. FULL FLAVOURED, RICH, DRY WHITES This selection of wines suit dishes with pronounced flavours. Some of these wines are aged in oak barrels to deliver more powerful characteristics. Enjoy with dishes such as roasted, grilled and pan fried white meat and deep sea fish, creamy sauces, garlic and char-grilled vegetables. 14 Chenin Blanc Vineyard Selection, Kleine Zalze, Stellenbosch, South Africa, 2010/11 A full wine, exploding with soft green and tropical fruits and many complex flavour profiles. Barrel fermented to make it perfect with richer white meat dishes. 15 Chardonnay/Viognier The Bandit, Houghton, Western Australia, 2008/10 Aromas of peach, pear and almonds with flavours of apricot nectar, lemon zest and ripe melon, rounded off with a rich succulent finish. 16 Chardonnay Blackstone Winery, Monterey County, California, 2009/10 Bright refreshing citrus aromas combine with ripe tropical flavours and soft rounded smooth oak ageing. 17 Chablis 1er Cru Vaucoupin, J. Moreau et Fils, Chablis, France, 2007/08 From the gentle slopes of south-east Chablis, complex and expressive with delicate floral aromas and classic mineral flavours. Wine07/11/1

4 RED WINES LIGHT, FRUITY REDS Wines in this section range from light and delicate to soft and juicy on the palate. They can be enjoyed without food or with light pork and chicken dishes, tomato based pasta sauces and smoked cheese. 18 Merlot Monte Verde, Central Valley, Chile, 2010/11 Soft and juicy with hints of red berries and plums, enjoyable without food or with roasted and grilled meat dishes. 19 Cabernet Sun Tree, Veneto, Italy, 2010/11 Smooth with hints of ripe blackcurrant and a mellow refined finish. 20 Montepulciano d Abruzzo Marchesini, Abruzzi, Italy, 2010/11 Lovely rounded wine with soft berry fruit and a touch of savoury spice. 21 Fleurie Château de Fleurie, E. Loron et Fils, Beaujolais, France, 2009/10 (2009) A fine example of this classic Cru Beaujolais, ripe strawberry fruits and soft succulent flavours. MEDIUM BODIED REDS These distinctive wines range from soft and fruity to soft and savoury. They ideally partner char-grilled, roasted and pan fried red meat dishes, firm cheese, charcuterie and tapas. 22 Rioja Crianza Don Jacobo, Bodegas Corral, Spain, 2006/07 Smooth savoury flavours with hints of wild mushrooms (2007) and warming vanilla oak. 23 Pinot Noir Robert Mondavi Winery, Carneros, California, 2008/09 Bright cherry and wild strawberry, silky smooth, with an appealing hint of spice on the finish. A perfect all round wine. 25 Tempranillo Condesa de Leganza Crianza, La Mancha, Spain, 2008/10 Velvety smooth with ripe blackcurrant fruits and a soft refined finish. 26 Chianti Piccini, Tuscany, Italy, 2009/10 Soft cherry fruit with a velvety texture and an elegant delicate finish of spicy cherry. 27 Côtes du Rhône Gentilhomme, Ogier et Fils, France, 2009/10 Smooth rich savoury wine with hints of pepper spice and a soft berry fruit. 5 FULL FLAVOURED, SPICY, ROBUST REDS These wines have bold and powerful flavours. The savoury characteristics and rich structure make these wines ideally matched to roasted, slow cooked and pan fried beef, lamb or game dishes and strong cheese. 28 Cabernet/Shiraz/Malbec Longitude, Flagstone, Western Cape, South Africa, 2009/10 Bursting with brambles, blackcurrant and black cherry fruit flavours, rich and juicy with a luscious finish. 29 Malbec Reserva Oak-Aged, Finca Flichman, Mendoza, Argentina, 2009/10 Intense and rustic with vanilla and raspberry notes, aged for 6 months in oak barrels. 30 Shiraz Solstice, Sicily, Italy, 2008/10 Abundant ripe cherry fruits with hints of black pepper and a lingering smoky finish. Great with something from the grill! 31 Primitivo/Negroamaro Villa Bruccio, Puglia, Italy, 2009/10 Bold and spicy packed with wild bramble and black cherry fruits, firmly structured with a rich deep finish. 32 Châteauneuf-du-Pape Domaine de l Arnesque, Rhone, France, 2008/09 A fine example of this famous wine, full flavoured ripe and juicy. Aged for 8 months in oak casks. 33 Shiraz Hungerford Hill, Hunter Valley, Australia, 2009/10 A highly regarded producer in the upper Hunter Valley, complex pepper and spice with bold, succulent cherry fruit flavours. FULL FLAVOURED, SMOOTH, MELLOW REDS The wines below are all full bodied, and although the flavours are pronounced, they have a refined and elegant backbone. These wines can accompany full flavoured vegetable dishes, fillet, sirloin and rump steak, roasted lamb, beef, pork and game. 34 Cabernet Sauvignon Mapuche Block, Errázuriz, Aconcagua Valley,Chile, 2009/10 Juicy blackcurrant fruit flavours and a touch of vanilla spice on the palate. 35 Lussac Saint-Émilion Château Lyonnat, Bordeaux, France, 2006/08 Hints of cedar wood, plum and blackcurrant, combine with a refinement and elegance, perfect claret with red meat dishes and cheeses. 36 Faustino Rioja Gran Reserva, Spain, 1999/2000 This iconic Rioja spends 30 months in the barrel and a minimum of 3 years ageing in the bottle before release. Velvety smooth with aromas of wild mushroom and vanilla with a silky finish. 37 Carignan Vieilles Vignes, Rare Vineyards, Pays d Herault, France, 2010/11 40 year old vines deliver more concentrated and complex flavours, rich with hints of dried fruit and herbacious aromas. 38 Margaux Château Notton, Margaux, Bordeaux, 2006/07 A superb Margaux from the highly respected Henri Lurton. The palate is supple and elegant with ripe strawberry fruit, discreet oak notes and a hint of liquorice. 39 Pinotage Writers Block, Flagstone, Western Cape, South Africa, 2008/09 (2008) A really impressive wine, giving ripe and generous blackberry and plum jam flavours, supported by toasty oak.
