A product resulting from a traditional mode of production, processing or composition Or Produced from raw materials or ingredients that are those traditionally used "Traditional" = at least 30 years area It is not linked to any geographical (May be produced anywhere in the world but the registered name (TSG) may be used only if the recipe complies with the approved product specification.) 6

9 Criteria PDO Product s qualities or characteristics are essentially or exclusively due to the geographical environment with its natural and human factors Raw materials and all stages of production take place in the geographical area 9
