Exquisite elegance of its body is given by the numerous and condensed ripe tannins, which confer a silky texture to the wine. The flavours developed are of fresh hot plum jam, blackberries and cinnamon. Medium-intens color is accented by purple shades. HARVEST oo} ¾ "" The grapes are hand picked and put in small capacity crates (8 kg) in the first decade of October, then stored in refrigerated rooms to get to a low temperature of about 4 C. WINERY l JIDt As soon as they reached the optimal temperature, the grapes were gently removed from the stems to prevent crushing. Then they were carefully sorted using a vibrating table. The whole berries went straight into stainless steel containers and were left for pellicular cryo-maceration with carbonic ice, for 6 days. After cryo-maceration was done, pulp seeding with selected yeasts was performed. The must made alcoholic fermentation at 27 C. After the fermentation was finished, the free run wine was separated from the press wine. MATURATION J1 The wine had the secondary malo-lactic fermentation in stainless steel containers at 21 C, for 3 months. During this time the wine was carefully matured on fine lees. The Second part of the maturation was done in other 6 months in new French oak barrels (50%) and second year barrels (50%). ALCOHOL VOLUME 13.5% ORGANOLEPTIC CHARACTERISTIC Colar: red with medium-intense violet shades Nose: flavors of fresh hot plum jam, blackberry and cinnamon. Taste: aromatic notes of plum jam felt in a medium to long finish. The numerous and condensed ripe tannins confer a silky texture to the wine. RECOMMANDED SERVING TEMPERATURE l 8 C, RESERVA
4 RESERVA MERLOT Reserva Merlot is a wine, made from healthy and vigorous grapes, carefully hand-picked. Thus, we got a complex wine, but at the same time, young and raw, aged for 60 days on fine lees, developing flavors of dark chocolate, vanilla liqueur, blackberry and plum marmalade. As soon as the grapes reached the optimal temperature, they were gently removed from the stems to prevent crushing. Then they were carefully sorted using a vibrating table. The whole berries went straight in stainless steel container and were left for pellicular maceration about 6 hours in a protected environment with inert gas. The free run must was fermented at a controlled temperature of 16 C for 10 days. MATURATION The maturation was done on fine lees in stainless steel containers. A batonage operation was performed every 14 days for 3 months. The secondary maturation was done for 6 months in new French barrels. ALCOHOL VOLUME 13% ORGANOLEPTIC CHARASTERISTICS Colar: light yellow Nose: first olfactive impact is highlighted by vanilla flavors; aromatic notes of vanilla, caramel, lime are combined with exotic fruits, pineapple, coconut, pear and peach. Taste: Reserva Sauvignon Blanc & Chardonnay carefully combines the perfection of nature in a bottle with a balanced wine, full of personality. From the first impact on our taste buds this wine offers a full body sensation in the mouth, supplemented by notes of ripe pear and peach and later it develops dried fruit flavours. 8 RESERVA SYRAH Reserva Syrah is a wine, made from healthy and vigorous grapes, carefully hand-picked. We made a wine with high acidity, typical for year 2015 in Dobrogea. Thanks to the ripe tannins and the fulfilment of the aromatic potential, Reserva Syrah develops flavours of ripe wild blackberry, chocolate and a bouquet of black fruit, combined with a blend of spices.
