The Delta R2 Vistalys can sort up to 10 tons/hour. - Michael Scholz opts for 4 to 6 tons/hour to further enhance quality. 14 St. Supéry Estate Portfolio: Napa Valley Collection Our estate tier showcases the intense varietal aromas and flavors of Napa Valley fruit. The grapes are harvested entirely from our family owned, sustainably farmed, Napa Green certified estate vineyards. 14

15 2014 St. Supéry Napa Valley Estate Sauvignon Blanc All of our white wines are sourced from our Dollarhide Estate Vineyard. To maintain the bright flavors for which our Sauvignon Blanc wine is known, we harvest the grapes at night, ferment only in stainless steel tanks and keep the wine chilled up to bottling. Accolades: 92 Points: Wine & Spirits Tasting Notes: Brilliant pale yellow hues are speared with youthful hints of green. Aromas are rich and enticing. Grapefruit, green lime, caper, and citrus tones couple with a vibrant note of lychee. Flavors present incredible intensity of grapefruit, lime and lemon zest, all with a subtle thread of fennel. The 2014 vintage produced a powerful and intense Sauvignon Blanc. 15

16 2013 St. Supéry Napa Valley Estate Cabernet Sauvignon Rich and ripe, this Cabernet Sauvignon is a blend of grapes from our two Napa Green Certified Vineyards - Dollarhide Estate in the northeast hills of Napa Valley and the Rutherford Estate that surrounds our winery. Tasting Notes: Dark, vibrant purple and red hues present in this wine. Blackberry and black plum aromas combine with graphite, espresso, dark chocolate, mocha, cedar, and white pepper. Flavors of black plum, black cherry and currant intermingle with dark molasses and a light vanillin oak with dusty fine grain tannins. This is a structured Cabernet Sauvignon with length, flavor and style. 16

Sorting 2012 marks the first vintage that we sorted all of the fruit in the Napa Valley Estate Cabernet Sauvignon.

17 St. Supéry Napa Valley Estate Cabernet Sauvignon: A Wine & Packaging Evolution The Wine Vineyards Sourced entirely from our Dollarhide and Rutherford Estate Vineyards. Fruit from our higher elevation Dollarhide vineyards provide structure, while fruit from our Rutherford vineyards provide the soft, supple qualities of the Rutherford Bench. Sorting 2012 marks the first vintage that we sorted all of the fruit in the Napa Valley Estate Cabernet Sauvignon. Both optical and double hand sorting were employed, resulting in a greater purity of fruit, excellent layers of flavor and fantastic structure. Oak Maturation Barrel aged for 18 months in 100% French oak, 34% new French oak. Vintage Excellent rainfall in March relieved the long dry spell that persisted throughout the winter. A warm spring and moderate to hot summer followed, providing excellent ripening weather. September and October were also warm, allowing for an even and progressive harvest. The Package Designed by Jeanne Greco Bottle A sleek, subtly tapered bottle that widens at the shoulders, chosen with environmental awareness in mind. Capsule A matte black with the St. Supéry monogram embossed in gold on the top. Front Label Inspired by St. Supéry s Dollarhide Estate Vineyard at dawn during harvest, the colors draw from the deep blues, purples and greens on the hills as the sun begins to rise over the ranch. The image of the vineyard captures the soft, warm glow of the first rays of sun. Back Label 2012 marks the first vintage of red wine to carry the Certified Napa Green Land and Winery logos, demonstrating our commitment to sustainable farming and production practices. The fermentation process was completed entirely in stainless steel tanks at cool temperatures to enhance the natural flavors Tasting Notes: This Chardonnay presents with brilliant shades of pale yellows and green. Aromas of nectarine, white peach, lime, and kiwi combine with expressive orange marmalade. Flavors of nectarine follow with lime, honeydew and orange zest. This is a bright, exciting wine that finishes clean and crisp with lots of exotic flavors. 31

This wine always includes Semillon and Sauvignon Blanc, although the blend changes each vintage based on the winemaker s palate. Accolades : 5 Stars: Restaurant Wine Tasting Notes: Bright sparkling pale yellow hues present in this Semillon- Sauvignon Blanc blend. Citrus aromas of grapefruit and lemon rind combine with fresh quince, lemongrass and a smoky oak quality. Flavors are round and soft due to the sur-lie maturation, with orange rind, lemon zest, fig and pear with a layered complexity of a peat dried type of toasted oak. This is an elegant, delicate white wine with tremendous length and flavor.. 33

As with our Napa Estate Sauvignon Blanc, our winemaker, Michael Scholz, uses stainless steel fermentation to showcase the fruit. For our vineyard designated Sauvignon Blanc, however, he ferments 19% of the blend in French oak to add complexity and depth. Aromas of blackberry, dark plum, anise and charred oak couple with a subtle dusty thread. Flavors of blackberry, dark plum and espresso are complemented by toasted oak and a note of terroir. 41 In the early 1970 s, Robert Mondavi intrigued me with the beautiful varietal wines his winery, and others, were producing in the Napa Valley. It sparked an idea and a love for the uniqueness of this place. I spent the next eight years searching for the ideal property to plant and found our family s Estate Vineyards in Napa Valley. My vision was to draw on my family s winemaking history in Europe, incorporate new techniques and philosophies, and establish varietal vineyards and a winery in the best possible location in the Valley.
