The whole point behind Eclipse is that it s for those who want to make the best wine possible- for those who say- just give me the very best. All Eclipse kits are 18 litres of varietal juice and concentrate from some of the best growing regions in the world including Napa Valley in California, the Mosel Valley in Germany and the Piedmont in Italy. The reds are 16 litres of varietal juice and concentrate and feature a 2 litre varietal grape skin pack. The grape pack gives an enormous amount of flavour and body to the wine. But it s not just a bag of grape skins. It s an engineered grape pack. We process the skins in our winery so they don t just deliver straight tannins which can cause astringency and bitterness. This would require you to age the wine for 2-3 years before it would drink well. We have modified the grapes skins so they release only the smooth, rich tannins that make great reds great. That way you can drink the wines in as little as 3 months and still get wines that will age out better than any of our other wine kits. It s the best of both worlds and really embraces modern winemaking technologies. The only exception for the red wines is our Pinot Noir. Because when we put grape skins in our Pinot Noir we could not achieve balance- we lost all of the delicacy you would expect from a fine Pinot Noir. In this case the finished wine is better without the skins. Again- the key is to make the best wine possible! The white wines are 18 litres of varietal juice and concentrate. There are no grape skins in the white styles because grape skins in a white wine fermentation result in a lot of bitterness from the tannins in white grape skins. But because the Eclipse kits are a full 18 litres of single strength, varietal juice, they are very full bodied and have incredibly rich aromas and varietal character.
