3 3 Editorial A successful start The past spring and summer season will always be unforgettable for all of us. It's not every day that one gets to experience and shape the successful launch of a unique motor yacht. Although we had diligently prepared everything for months in advance, we still anticipated the festive maiden voyage of MS «Diamant» with a combination of great excitement and slight jitters. We knew that everyone would be watching us, not just regionally, but also nationally. After all, such a spectacular ship won't go unnoticed and was always intended to draw additional attention to Lake Lucerne. Thanks to the determination and hard work of our entire team, we managed to hit the ground running and impress our guests with smooth services. In doing so, we actually got to exceed our own expectations and reach new pinnacles of hospitality. Under the watchful eye of VIPs, journalists, television teams, international travelers and private charter clients, we were able to demonstrate our dedication to ingenious innovation, classic customer care and high quality catering. Naturally, behind the scenes, we still had some hectic moments and sometimes had to tweak our way of doing things, but this «running in» period has allowed us to perfect our processes. With this knowledge and experience under our belt, we look forward to the upcoming autumn and winter seasons aboard MS «Diamant», the jewel of Central Switzerland. 17 17 Recipe: Angus beef patties Beloved by young and old Angus beef patties with mashed potatoes and two kinds of carrots Our traditional beef patties are one of our most popular items, both on Lake Lucerne as well as at our establishments ashore. Thanks to the premium quality Angus beef of regional provenance and the fine flavor of the added herbs, they are beloved by young and old. Preparation 1. Mix the minced meat with the softened bread rolls and the fine chopped parsley and carrot. Let it form a consistent and well mixed mass before adding the egg and spices. Sample to ensure that everything tastes satisfactory before roasting the beef patties in a greased pan at a medium flame. If you like, you can serve the beef patties on red wine jus. We recommend our house wine Tavola rosso. 2. Cook the potatoes until they become very soft and almost disintegrate. Then dry them on a tin tray in the oven, using a temperature between C. Warm up the milk and double cream, before adding the spices to them. Mash the potatoes using a wooden pounder and then add the liquid mix of cream and milk. At the end, include the cold butter and sample taste to ensure that everything is just right. 3. Briefly cook the carrots in water, but ensure that the flame is not too high and that they do not become too soft. Then melt the butter in a cooking pan and quickly steam the pre-cooked carrots for 2 to 3 mins. Add sugar and water during this process and make sure the carrots absorb the sugar. At the end, add the salt and pepper. 20 20 More than a mere vessel Our new super yacht MS Diamant has been the star of the season No doubt about it, our brand new, state-of-the-art motor vessel «Diamant» (Diamond) has been the talk of town and particularly popular with young and old, ever since it was launched in May After just a few months of service, the feedback from local as well as global travelers has been overwhelmingly positive and the high level of excitement continues to exceed all expectations. 23 23 Historic ramparts A landmark towers tall As one of several cities in Switzerland, Lucerne still has its old ramparts in place. The Musegg Wall appears prominently on postcards and when walking along the River Reuss, it is easily spotted. Rising resolutely above the rooftops of the old town, the nine different towers reach for the sky and provide pride of place. A remnant of the late Middle Ages, the wall is 870 m long, about 9 m high and around 1.5 m thick. With the exception of a 40 m long section at the eastern end, the whole structure has been preserved. The entire ensemble is well visible from any boat on the Bay of Lucerne, as the soaring spires form part of the city's skyline. In a previous interview with a local newspaper, the cantonal archeologist Jürg Manser emphasized the representative rather than defensive purpose of the ramparts, highlighting their symbolic stature for a prospering trade hub. Construction is said to have begun «The wall was always a prestige structure, much more than a military barrier.» Jürg Manser, Cantonal Archaeologist around 1370 and lasted well into the 16th century. In more recent history, over 12 million CHF were invested into the complete renovation of the Musegg Wall, with the restoration works lasting about a decade. Since then, visitors and locals alike can enjoy the resplendent beauty of this architectural icon of national significance. Indeed, the tall towers also provide shelter for numerous rare species, such as jackdows, hawk swallows and bats. As the tallest of the lot, the Luegisland Tower rises some 52.6 m above ground. During previous centuries, the towers often proved their practical value for local merchants or farmers, who used them as supply warehouses to store goods like wood, hay, fuel or even gunpowder. For generations, the Musegg Wall has been a traditional excursion destination for regional schools, as the children learn to remember the proper sequence of all nine towers by reciting a popular poem.

25 25 Recipe: Urbräu beef roast Wonderful autumn and winter dish Urbräu beef roast on its own sauce Steak and ale pies and pasties are very popular in the UK and our cooks have now created a Swiss version of the classic beer roast. As our exclusive house brand, the Urbräu beer is actually very well suited for cooking, due to its cloudy consistency and full-bodied flavor. By using Urbräu to enrichen the jus of a savory beef roast, a wonderful autumn and winter dish has been created. This meal is best served with mashed potatoes and root vegetables on the side. Preparation 1. Remove the strips of fat from the beef shoulder fillet, in case the butcher has not already done so. To prepare the marinade, place all of the ingredients in a bowl and then mix them together. Apply the finished marinade to the beef, covering all surfaces. 2. Then take a pan with olive oil and butter in it and roast the meat for about 10 minutes. 3. Add the carrots and onion cubes and roast the meat with the vegetables for another 10 mins. 4. Then use half of the beer to extinguish the roast. 5. Make sure that the beef roast is covered in enough jus before letting it simmer in the oven for 1.5 to 2 hours at a temperature of 140 C. 6. At the end, take the meat out of the sauce before adding the remaining beer to the jus in order to achieve your desired thickness. Indeed these wholesome products of regional origin and highest quality have been custom-crafted just for our guests! When only the very best is good enough, it sometimes isn't possible to find the desired object «off the shelf». That proved true in our search for a truly special local beer and so we partnered up with an experienced brewmaster to create the old-style Urbräu. With its mild yet flavorful taste, Urbräu is really refreshing, no matter what the season. The cloudy consistency and slight bitterness reflect the traditional brewing style in which it has been handcrafted at the Brauerei Rosengarten AG in Einsiedeln. For the past 145 years, this microbrewery in the famed monastic town has created noteworthy specialty beers in small batches and when we asked them to produce one just for us, they were happy to oblige. As an innovative company that is as dedicated to quality and sustainability as we are, we knew we had found the right partner with Brauerei Rosengarten AG. Family-owned for over 100 years, the brewery is now managed by Alois Gmür, who doubles both as award-winning brewmaster in Einsiedeln as well as member of parliament in Bern! In addition to «our» Urbräu, Brauerei Rosengarten AG also produces a light lager, a dark beer and seven kinds of speciality brews, including beers made of wheat, spelt and corn. From Einsiedeln via Alpnach to Lucerne Every year over 200'000 bottles or 66'000 liters of Urbräu make their way from the brewery in Einsiedeln to our establishments in and around Lucerne. Initially, the bottles are stored at the distribution facility of our other principal partner Pilatus Getränke AG in Alpnach. Located at the foot of Mount Pilatus, the namesake beverage company employs 25 people and has a staggering product portfolio of 2000 different drinks, including 25 house brands About 200'000 bottles are brewed each year at Brauerei Rosengarten AG. This whopping list is complemented by several hundred beers and wines from around the world, plus about 300 different spirits, including 100 kinds of whisky and grappa. Our house wine Tavola rosso from Emilia Romagna is another example of a fine product that makes a brief stopover in Alpnach, before reaching its final destination on our boats and restaurants. Complex logistics On a demand basis, the Urbräu then moves from Alpnach to our own warehouse at the shipyard in Lucerne. From there it is dispersed on a «just in time» basis to our different establishments. At peak periods during the busiest times of the year, no less than six employees work in our warehouse. These logistics specialists ensure that everything works like a Swiss clock, closely coordinating distribution deliveries for the sake of resupply, as well as the collection of empty bottles and other waste, once the refined refreshments have been consumed. Aside from drinks and beverages, they are also in charge of all food deliveries from our central kitchen, a highly complex matter when fresh cooked items or perishable goods are involved! It is thanks to the experience and professionalism of this crack team, that our guests never even notice the complexity of our «behind the scenes» supply network. 33 33 Lake Lucerne 12 billion cubic meters of water and many bays make this lake With its fjord-like features and distinctive shape, Lake Lucerne is like no other land-locked body of water in Western Europe! Shaped by the ice age and the Reuss glacier, the harmonious fusion of different landscape elements makes the place so pretty. The countless panoramic peaks, which dot the shoreline, allow for an exciting combination of travel by land and water, for the sake of Alpine adventure. Named after the region's principal city in English, the German version of «Vierwaldstättersee» gives reference to the four «Forest Cantons» of Uri, Schwyz, Unterwalden and Lucerne. Three of these were also the founding states of the Swiss Confederation in 1291 at the mythic Rütli meadow. Aside from the River Reuss, which is the lake's primary tributary, the Muota, Isenthalbach, Engelberger Aa and Saarner Aa are other streams that flow into the lake. The Reuss remains the only outflow though and thus it is used to regulate the water levels of Lake Lucerne. Many of the river estuaries are natural preserves and valuable nesting grounds for local wildlife. The roughly 12 billion cubic meters of water stay in the lake for an average of three years. The water quality is outstanding and so pure, it makes for ideal, unfiltered drinking water. For decades, the water quality levels have remained consistently high. During the summer months, the water temperatures reach an agreeable 22 degrees Celsius ideal conditions for swimming at one of the countless public beaches. The lake hasn't been frozen solid since 1830, although in the legendary winter of 1963, the Bay of Lucerne and Lake Alpnach were covered by a sheet of ice. According to historic records and local lore, a strong earthquake caused an outright tsunami in Landslides and a debris avalanche from the Bürgenstock are said to have created 4 meter high waves. Until the construction of the strategic Axen Road from 1863 to 1865, the waterway from Lucerne to Flüelen represented the fastest travel link and primary trade route between north and south, connecting with the Gotthard Pass. Today, the lake offers a more relaxed travel pace, creating ideal leisure opportunities for visitors from far and near.

49 49 Recipe: Swiss cheese soup Wholesome soul food Swiss cheese soup RECIPE FOR 4 PEOPLE An old cook book dating from 1920 mentions a hearty recipe for a thick cheese soup with added bread chunks. Back then, there was a tendency to make soups especially filling, as they would serve as stand-alone meals for farmers and workers. We have taken inspiration from this century-old recipe but given it a contemporary update. With a thinner and more refined consistency, it is actually quite exquisite, yet still full of flavor and nourishing goodness. Ingredients 50 g butter 80 g onions cut in small cubes 80 g white leeks cut in fine strips 60 g flour 500 g Swiss mountain cheese cut in cubes 1.75 l vegetable broth 750 dl double cream a touch of salt and pepper a drop of lemon juice Preparation 1. Precook the onions and leeks in butter, so that they become nice and soft. Then add the flour and continue steaming everything for 1 to 2 mins. 2. Add the vegetable broth and stir everything before adding the cheese cubes. At that point, let the soup cook at a low flame for about 20 mins. Continuously stir the soup during this time, to ensure that nothing gets burnt. 3. Add the double cream and spices. 50 50 Kids Page The plants and animals of our region Cruising on Lake Lucerne, there's a lot to see, as the scenery constantly changes. But aside from the obvious sights like the little villages or mighty mountains that frame the shoreline, there are a lot of less prominent our outright hidden attractions too! We are glad to introduce you to some of the natural wonders of the area here. Beneath the surface of the deep blue water or in the reed along the shore, countless different animals have their habitat. As such, the lake is a highly complex ecosystem and supports a large number of different species. Let us introduce you to some of the animals and plant types that you will encounter here and with a little luck might even spot during a cruise! The lake is home to no less than 30 different types of fish. These include carp, pike and perch, which tend to swim nearer the shoreline, while trout and samlet prefer the open water, where there lake is deeper and there is less daylight further down. The most commonly caught fish from Lake Lucerne is cisco and you will also find this delicacy on our menus.

Birds and amphibian animals that live both in the water and on land like frogs and ducks are common too. You will find them along densely wooded sections of shoreline or sometimes a bit further inland, but always close enough to the water in places like bogs, swamps or ponds. That's also where newts, toads and salamanders make their home. So far, only six different types of reptiles have been spotted around Lake Lucerne, including grass and dice snakes. They prefer dry land and areas with sand, where it is easy to hide; that's also where they nest and reproduce. Unlike other areas in Europe, Central Switzerland is not located along a major migration path for birds and actually less birds live in the region than in other parts of the country. The local ducks, swans and coots do benefit from the fact that the water does not freeze over in winter though. Finally, the fauna and flora of Lake Lucerne is completed by remarkable plants, mushrooms, algae and even bacteria, both in the water and beyond.

Fabienne Büchler Chef de Service Since joining Tavolago in 2009, Fabienne has held a number of positions, thereby gradually rising through the ranks. She completed specialized courses on management and sales, while also learning how to best handle customer complaints. Today, Fabienne is Chef de Service on our flagship «Stadt Luzern» and a member of the extended leadership team. Tavolago has always encouraged Fabienne to take the next step and supported her professional development throughout. Milagros Furrer Waitress Milagros has been working as a buffet assistant on our ships since In winter of 2017 she was able to successfully complete the Progresso training course and earn her first professional certificate. The Progresso courses are specifically designed for waitstaff without formal training but only previous practical experience. The course format features learning modules on service, cooking and accounting. Thanks to her newly gained knowledge, Milagros was able to successfully complete her probation period and become a permanent employee.

57 57 IRC: Customer survey We value your feedback It is our ambition to exceed expectations every day and delight guests from around the world with our uniquely Swiss service. In order to even better meet the needs and wishes of our customers, we are now conducting a query. Thank you for sharing your opinion with us. We know that the best sort of publicity spreads word-by-mouth and often previous guests have recommended us to their friends and family. While we really appreciate this form of flattery, of course we are also happy to receive direct input, so that we may conscientiously enhance our approach and align our services even more with the requirements of our visitors. We take all customer feedback very seriously and have already implemented many of the suggestions that were shared with us in the past. To take the next step in our pursuit of perfection, we have decided to work with the professionals from the IRC institute to develop a comprehensive electronic customer survey that covers all of our catering venues and fine dining establishments. After weeks of careful conception, this survey is now ready for response. In order to ensure a modern methodology, the electronic survey has been loaded on tablets that our wait staff will be happy to hand out, allowing everyone an easy and interactive touchscreen interface for delivering their input. The structure of the survey allows you to tell us your opinion about the quality of meals and beverages, as well as the level of service. We also want to know what you think about our valuefor-money ratio and the general look and feel of our establishments. We are truly grateful for each reply and thank everyone for their participation. Filling out the survey will take about 5 minutes.
