1 PRODUCTION All cava is made in the método tradicional (like champagne), and fermented in deep underground caves and tunnels that give cava its name. It s a long and laborious process, but results in a wondeful product with character, depth and complexity. RANGES Over 95% of cava comes from Catalunya in north eastern Spain, half an hour south of Barcelona. Other regions include Aragón, Navarra, La Rioja, País Vasco, Valencia and Extremadura.
