6 The 2016 Annual Grand Portfolio Tasting marks the beginning of the next chapter in the Domaine Select history. Through the formation of a new partnership, Domaine Select & Spirits (DSWS) emerges as the parent company that now houses several divisions, each with a unique and defined purpose. Diverse roots have always been a celebrated source of inspiration and motivation for Domaine Select. Imbedded in cultures around the world and expressed in many different forms for thousands of years, wines & spirits challenge our senses. In their best form they provide a means of creating enhanced awareness of the sheer beauty and simplicity of the earth by way of respect for tradition, honesty and quality. Around the world, harvest time universally recognizes the culmination of a year s agricultural work and the transition period from farm to cellar in the production process of a wine or spirit. Today, we similarly recognize the Domaine Select s 15 year history, while celebrating the promising future of Domaine Select & Spirits. Passion for fine wine, boutique spirits, artisan sake and beer coupled with extensive experience in hospitality, sales, marketing, brand building, and financial acumen unite the DSWS partnership. Eagerly pursuing dynamic and enduring growth, this entrepreneurial synergy is the vehicle for DSWS to realize the next stages of development, as already evidenced this past year. Through this positive evolution, Domaine Select & Spirits remains absolutely committed to maintaining the company s founding philosophy and mission which we are proud to witness today. The Gala Dinner is a celebration of wine, spirits, and sake, and all of our suppliers, customers and the DSWS Team, many of whom have traveled great distances to be with us for the Grand Portfolio Tasting. The Cast this evening is comprised of the talented and passionate personalities behind the products we are proudly featuring. PAOLO DOMENEGHETTI & ALLISON DOMENEGHETTI

8 88 Ad Vivum Napa Valley, United States A wonderful confluence of people, events and circumstances created AD VIVUM. Chris Phelps, a renowned Napa Valley winemaker, is a man who knows great fruit when he tastes it, and he has an intimate understanding of how to coax superb wine from great grapes. Chris and Larry Bettinelli, a fifth generation farmer and a scrupulous vineyardist have worked together for many years, discussing trellising, sun exposure and ripeness levels for Cabernet and Merlot grapes from Larry s various properties. Chris made experimental wines to test their theories. In 2005 Chris walked through the sloping benchland at the Bettinelli Family Sleeping Lady Vineyard in Yountville. More experiments followed, and more small lots of wine were made. As Chris began working with Sleeping Lady Cabernet, he knew he had found something truly significant. Sleeping Lady, which sits just south of Dominus, was turning out to be more than just a very good site. The site rivals the best vineyard ground that exists in Napa Valley, and it consistently produces grapes with a unique purity and intensity of aroma, as well as a beautifully distinctive flavor. 9 60 Aidura Basque, Spain Bixente Eizaguirre, fifth generation grower founded the winery in 1992 after great efforts in establishing the Denomination of Origin for Txakoli de Getaria in 1989 making it the first winery built exclusively for Txakoli complying with all the dispositions of the law regarding Guarantees of Origin and according to the parameters required for a Chateau. Since its founding, Bixente Eizaguirre has been member of the Txakoli de Getaria Guarantee of Origin Control Board. The Eizagirre family crafts Aidura from their small estate in the village of Zarautz, perched on the Basque mountains and yet a stone s throw away from the idyllic Bay of Biscay and the beautiful and exquisite city of San Sebastian. There are twelve planted hectares dedicated to the Hondarribi grapes under the Denominacion de Origen Getariako Txakolina that comprises a privileged area of the Guipuzcoan coast that was granted its own DO status in Today, young and talented Onditz Eizagirre runs the family s estate along with her sister Itziar who belong to the fifth generation of Txakoli-makers. Aidura translates to sea breezes in the Euskera language, as Txakolina has always been so intimately related to the sea. 10 88 Albert Seltz Alsace, France Albert Seltz is situated in the heart of Mittelbergheim in the Bas-Rhin of Alsace. Seltz, the 14th generation owner and winemaker, took over from his father in 1980 when he was only 19 years old. At that time, Albert had already developed a sense of the potential of his estate and a passion for the variety of Sylvaner. Immediately, he reduced the production by two thirds, reduced the yields, and converted to strictly sustainable organic agricultural practices. In the cellar he practices minimal intervention, employing indigenous yeast and sur lie aging. In Alsace and beyond, Albert is known for his love of Sylvaner - so much so that he was instrumental in the national institute of d Origine s decision to allow a Grand Cru Zotzenberg Sylvaner. An ebullient and articulate champion of the leaner wines of the Bas-Rhin, Albert Seltz explains the Haut-Rhin is like a pretty girl with makeup - the Bas-Rhin is the pretty girl who doesn t need the makeup. He talks of his wines as if they were people whose talents had been underestimated just because you come from a modest background doesn t mean you re not interesting. 12 Álvaro Castro Dão, Portugal Álvaro Castro is widely acknowledged as the leading producer in Portugal s Dão region. Álvaro Castro inherited his 16th century family farm, on which his family had been making wine for centuries, in Under political regimes of the not-so-distant past, every farmer in the region was forced to sell their grapes to Co-ops. In the early 1980 s, Álvaro made a fulltime commitment to reestablishing the family tradition of winemaking. In 2000, after having worked at wineries in Bordeaux and in Portugal with Dirk Niepoort and José Neiva Correia, Maria Castro began working with her father, ensuring the future of the family winemaking legacy. With three farms on which to grow grapes (Quinta da Pellada, Quinta da Saes, and Outeiro), Álvaro is leading the Dao s viticulture movement. Álvaro Castro has harnessed the characteristics of the Dão to produce wines of great freshness and finesse without sacrificing complexity or depth. A long family legacy of winemaking, generations of grape growing and his drive to better understand his terroir culminate in incredibly expressive and pure wines that are never formulaic and reflect a constant evolution a feeling that has caught the attention of the world. 13 Armagnac Castarède Armagnac, France The Castarède house, currently owned and operated by the charming Florence Castarède, is the oldest business in Armagnac. Founded in 1832 by Jules Nismes, the estate and its cellars sit on the River Baise at Pont-de-Bordes in the Lot-et-Garonne department. The firm is owned by the Castarède family, who are also proprietors of Château de Maniban at Mauléon d Armagnac. The Maniban family were members of the legal aristocracy, who played an important role in developing Bordeaux s fine wine estates and was the first to introduce armagnac to the court of Louis XV. Now in its sixth generation, the Castarède family, under the auspices of Florence, runs the firm and maintains an eco-museum cellar dedicated to preserving their original 19th century spirit. The firm is not a distiller, but rather buys its armagnacs exclusively from the Bas Armagnac, most of which were distilled between 1900 and The Armagnacs are aged in 400 liter oak casks in the Castarède cellars until ready for bottling. To take a sip of a Castarède Armagnac is to experience the history of Armagnac. 15 Banzai Beverage Japan Banzai Beverage is an importer of specialty and craft brewed sake. Our company was founded in 2003 by our president, Takahiro Tokura, with the vision of introducing the finest Japanese sake into the American mainstream market. His vision is to spread the appreciation for premium sake by having people try the absolute best that is available. This is why Banzai Beverage exclusively imports hand crafted sake from small family owned microbreweries that would have otherwise never considered their products for export. Umenoyado Brewery [Founded in 1893] Umenoyado brewery was started in Nara, the land where many myths and legends are told of the place where sake was first brewed. From our beginning to this day, we have tried our hardest to make the best local sake of Yamato, keeping our priority: Small quantity, High quality. Using the Katsuragi mountain riverbed as the source for our mother water, and through our special Nanbu method, we have made the taste of our sake delicate and soft. Sakata Brewery [Founded in 1949] The brewery, Sakata Shuzo, is located in Sakata city, Yamagata prefecture, which has been historically known as one of the most prosperous ports in Japan. Sakata Shuzo was established from a coalition of five breweries which have been around since the Edo period. Currently, the president, Shoichi Sato, takes the leading role as the Toji, or master brewer, conducting the brewing process with dedication and uncompromising ways. Niizawa Shuzo Ten Brewery [Founded in 1873] Niizawa Sake Brewing, founded in 1873, is located in the Miyazi Prefecture s Oosaki plain. The area is well known as the birthplace for the Japanese famous branded rice. Hakurakusei mainly uses locally grown rice and focuses on brewing the sake which can match with food. They believe that good sake can bring out the flavor in good food, achieving harmony. Inoue Shuzo Brewery [Founded in 1922] Inoue Shuzo is located along the river bank with a beautiful scenery of the Mino mountain range and rice fields. Igarashi Shuzo Brewery [Founded in 1897] Igarashi Shuzo is headed by Kahori Igarashi-one of the very few female brewmasters in Japan. The brewery is located between two rivers in the mountainous region of Saitama. After the emperor climbed Mt. Rakan in 1882, the mountain was renamed Tenranzan or Emperor s Mountain. Brewmaster Kahori has continuously won top awards in her region and her sake making skills are highly regarded. Yonetsuru Shoten Brewery [Founded in 1704] Established during the mid-edo period, the brewery has over 300 yrs of history. 16 Basilisco Basilicata, Italy In 1992, Cutolo Family and his wife Nunzia began making wines from their 10 hectare estate in the territory of Barile, on the hillsides of extinct volcano of Monte Vulture at meters above sea level. The volcanic composition of the soil, rich in humus and mineral substances, and the particular microclimate with a great temperature range, make this land ideal for grape growing. In 2010, Basilisco was acquired by Feudi di San Gregorio, increaseing their vineyard site to 20 hectares. Vinification and cellaring occurs inside eight caves that were created in the fifteenth century by Albanian refugees who were fleeing the Turks. Today, under the guidance of Viviana Malafarina, Pierpaolo Sirch and consulting of Denis Dubardieu, they are producing wines that express the rich viticultural history of Basilicata. 17 Black Cottage Marlbourogh, New Zeland Black Cottage wines are made with passion, traditional old world craftsmanship and modern techniques. Combining select parcels of fruit with modern and alternative winemaking techniques, we strive to create very special wines which are approachable and delicious. The Black Cottage, situated in the heart of the Wairau Valley, is where winemaker David Clouston lives and spends quality time with friends and family. It is also the quiet space in which he contemplates and constructs the very special wines on which he has built a fine reputation. The long, consistent growing season, temperate pacific breeze and cool nights preserve the bright fruit characters which encourage classic Marlborough wines. Sauvignon Blanc is still the region s principal grape but the climate is cool and fine examples of Riesling and Pinot Gris have emerged. With care and nurture, Pinot Noir grown on the Southern Valley hillsides and in the reaches of the Awatere, offer great clarity and finesse. 18 Borgo M Friuli, Italy Borgo M is a Friulian project that was initiated in 2003 between the Fantinel family and DSWS. The estate s driving philosophy is to defy the standards of quality and value of Friulian wine, by producing wines that express variety, terroir, and tradition. All of the fruit comes from estate vineyards owned by the Fantinel family, the largest landholders of Pinot Grigio vineyards in Friuli. Production takes place at the winery of Fantinel, where precision and care goes into the entire process from harvest through winemaking. All of the vineyards are meticulously maintained and harvest takes place at the optimum time to ensure full ripeness. The winemaking philosophy is to express the purest flavors of the varieties. There is no oak used, so there is a very clean, bright berry style that remains consistent through each vintage. 19 Bowen s Spirits California, United States Nearly 25 years ago, Wade Bowen was fortunate enough to meet Bud, a fifth generation moonshiner. While others were experimenting at home making their own craft beers, he was more interested in spirits, particularly Bud s smooth whiskey that was poured from mason jars. Bud shared family secrets and methods with Wade as he was getting on in age and didn t want to see his knowledge and craft die with him. To keep Bud s spirit alive combined with Wade s own experience, they start with a 100% corn base, cut it with a proprietary structured water for purity and consistency, and age it to perfection in reclaimed, fire ravaged oak sourced from forests on central California s Piute mountain range. Because of it s corn base, Bowen s Whiskey is entirely Gluten Free. We are known as the whiskey that both scotch and whiskey drinkers appreciate. It appeals to so many people; whether their preference is straight up, on the rocks or mixed. Both women and men enjoy the smoky California campfire taste that is Bowen s Whiskey. Like other great whiskeys, Bowen s Whiskey neat, stands on it s own. However, it also does very well in new and traditional cocktails or other mixed drinks not normally using whiskey like a Bloody Mary or a Margarita. Our natural approach to marketing is straightforward, it just is what it is, a California whiskey. You either like it or you don t. 20 Brander Vineyards California, United States The Brander Vineyard, situated on over 45 acres of land just east of Los Olivos, was purchased by the Brander family in The site was chosen by Fred Brander due to its propitious combination of factors: a gently south-facing aspect, excellent soil and a climate ideally suited to growing the grape varieties normally found in the Bordeaux region of France. The wine production is located on the estate vineyard, mere yards from the nearest vines. This proximity allows them the great luxury of processing the grapes almost immediately after they are harvested in the fall, which has a tremendous beneficial impact on their wines. Brander is committed to maintaining environmentally sustainable viticulture and winemaking. They assiduously follow organic and biodynamic principles, both in the vineyard and in the cellar. They strive for their methods to be environmentally sound, economically feasible and socially equitable whenever possible. 21 Brooklyn ry New York, United States The Brooklyn ry concept was spawned from co-founders Brian Leventhal and John Stires, who made wine recreationally in New Jersey with former coworkers. Unsatisfied with the 9-to-5 where they plied their trades (and spurred by the incessant itch of the entrepreneurial spirit) they dreamed of opening their own winery; Brooklyn ry was born. Conor McCormack was brought on in the beginning to build and run the winemaking program, taking it from 2,500 cases in annual production to more than 8,000 cases per year. Sourcing grapes from 15 different vineyards from across the country, with more than 10 varieties, and making 18 to 20 different wines per year has plenty of challenges, but the passion and dedication from everyone involved from the farmer in the field to the winery production team, as well as the staff who pours wine for our guests makes it all worthwhile. Because the winery is not located in a grape-growing region (not many vines are located in NYC!) they contract their grapes directly with growers, some who only farm grapes while others also make wine. Sourcing fruit from esteemed growers around the country gives them the unique opportunity to showcase wine styles that reflect the diverse range of climates and growing conditions that are here in the United States. Brooklyn ry carefully chooses vineyards based on a variety of parameters, including soil type, trellis and canopy management, rootstock and variety match, but most importantly, the people who farm the land. 22 90 Casa E. di Mirafiore Piedmont, Italy The winery was founded in the 1870s by King Vittorio Emanuel II of Savoy and named for his son (with Countess Bela Rosin), Emanuele, Count of Mirafiore within the Fontanafredda village in Serralunga d Alba. The name was lost from the estate in the 1940s and passed through several owners until Oscar Farinetti bought the Mirafiore name once again. The wines of Casa E. di Mirafiore are made exclusively from the traditional varieties of the Langhe. Respected winemaker Danilo Drocco follows traditional Piemontese vinification practices including long maceration and aging in large oak casks. The essence of Casa E. di Mirafiore comes to life at the estate in the Fondazione E. di Mirafiore, which includes a restaurant, library, and theater where the winery hosts poetry, music, and speaking events. 23 90 Casa Marín San Antonio Valley, Chile Casa Marín s story is the dream of María Luz Marín. After proving herself an exemplary winemaker in male-dominated, established wineries of Chile, she looked to her next frontier. She drea med of making wine in Lo Abarca, a small town in the San Antonio Valley of Chile with a brutal climate for grape growing. Against her colleagues and local experts advice, María became the first winemaker in Lo Abarca, never doubting the potential of the land and her abilities. Despite the difficulties of early frosts and persistently cool temperatures, or rather because of them, María Luz Marín succeeded in showing the great heights that passion and dedication can reach. The climate of this beautiful land sets strict natural parameters on viticultural growth, and the result is ultra-low natural yields. From the vineyard to the cellar, all work is done by hand; a final rigorous selection process results in minuscule amounts of concentrated wines with deep complexity, extreme elegance and great balance. There is no counterpart in Chile to María Luz Marín and all that she has achieved in the Lo Abarca Valley. Today, her wines hold worldwide acclaim. 29 Certosa di Belriguardo Tuscany, Itlay has always been one of the passions of Gianna Nannini who, engaging the services of qualified winemaking experts, first and foremost the oenologist Renzo Cotarella, has ensured that Certosa di Belriguardo has become one of the most renowned and interesting estates in the area. The Belriguardo Charterhouse stands on the hills surrounding Siena, about 7 km from the city center. The context is one of typical Tuscan beauty: a landscape where vines and olive trees alternate in an array of colors, creating the atmospheres that have traditionally earmarked this land as being perfectly suited to winegrowing. The estate (which occupies an area of about 75 hectares, 8 of which are cultivated as vineyards) is located in the Chianti delle Colline Senesi region, where the Sangiovese grape variety holds the role of undisputed protagonist. The Cellar Registers date back to the end of the 16th century and testify to the existence of a bracelet pergola and of an abundant and prestigious production of wine sold on the Siena market. There is written evidence of the existence of varieties such as Moscatello, Rosso and Bianco di Clausura. These time-honored names, originally given to the wines made by the monks, have been partly revived to emphasize the close link between the estate s present-day production and that of its historical past. 30 94 Champagne David Léclapart Champagne, France David Léclapart is a fourth generation Champagne house located in the Premier Cru village of Trépail in the Montagne de Reims. When his father passed away in 1996 and his mother asked him to take over the estate, he agreed to do so only on the condition that he would be able to farm them biodynamically. Since the 2000 vintage the estate has been certified biodynamic by both Ecocert and Demeter. David, himself, biodynamically farms his three hectares of land divided among 20 parcels, guided by the principles of purity, energy, pleasure and ecology. He believes the creative forces behind biodynamics (water, earth, wind, and fire) works in perfect accordance with his four principles to show how nature expresses itself through Champagne. These practices are translated in the cellar, where there is minimal intervention. Dedicated to transmitting the individual characteristics of each vintage into his wines, David does not use any reserve wines. 32 Champagne Fleury Champagne, France Champagne Fleury has been run by the Fleury family for over a century, with each generation contributing to its reputation for innovation. In 1901, Emile Fleury became the first grower in Champagne to replant Pinot Noir after phyloxerra. His son, Robert Fleury, then made the unusual decision to bottle his own champagne in In the 1970s, Jean-Pierre Fleury became concerned about the effects of chemical agriculture on the environment and began experimenting with manual tilling and composting followed by a trial of biodynamy on 3 hectares of the estate in Within 3 years he decided to apply those principles to the entirety of his vineyard holdings. In 1993, Gault-Millau elected Jean-Pierre winemaker of the year and the international recognition has continued. 36 Cliffton Dry New York, United States Founding partner Shelagh D Arcy-Hinds, a New Yorker who hails from South Africa, was inspired to create Cliffton Dry when she noted that a fresh, sparkling beverage like the sparkling apple wine she had enjoyed in her college years in Cape Town was missing in the United States. She sought to create a light, healthy, 100% cold pressed drink that would fulfill a desire among a new generation of drinkers who are looking for an all natural, more delicate, crisp, dry taste. Akin to a dry prosecco, Cliffton Dry finds its captivatingly clean and refreshing taste through production in a vineyard, as opposed to a cider mill or brewery. Cliffton Dry s unique taste is due to its being fermented naturally in stainless steel tanks for up to two months. During fermentation, our golden juice goes through three cycles of PH testing -until the sugar has burned off and we re left with a light golden color, that is delicate and dry, with hints of citrus and slight apple notes, giving you a refined, refreshing, clean taste. 39 COS Sicily, Italy Azienda Agricola COS was founded by Giambattista (Titta) Cilia, Giusto Occhipinti and Cirino (Rino) Strano, three friends who wanted to recreate the work of their ancestors. The acronym (Cilia-Occhipinti-Strano) not only represents the company s name, but also the beginning of a remarkable partnership. In 1980, the trio became the youngest winemakers in Italy when they bought Joseph Cilia s old family winery. Located in the historic town of Bastonaca, the vineyard measured just over a mere three hectares. Their first harvest on October 5 produced only 1470 bottles; nevertheless, this marked the beginning of their adventures and the radical restructuring of the region of Cerasuolo di Vittoria. Fascinated by ancient cellar practices, COS decided to work with amphoras, clay jars that were used by the ancient Greeks. The first shipment came from Spain in September 2000, and thus, Pithos was born and a new COS identity was created was the first vintage bottled in the new cellar. The old oak barrels were replaced by 150 amphoras, one of the largest collections in the world, and they began making Pithos Bianco with the local Grecanico grape. Today, COS is synonymous with Cerasuolo di Vittoria. Their love of the region and its singular terroir produces some of the finest wines Italy has to offer. 41 Cupano Tuscany, Italy Cupano sits on a rolling plain at the far edges of Montalcino, south of Siena on a stony hill above the Ombrone River. Under the guidance of several winemaking masters, Ornella Tondini and Lionel Cousin, came together to produce wines that embody the memory, the landscape, the season, and the story of their enchantment with this special estate. Henri Jayer instilled many of his beliefs including not using chemical fertilizers or pesticides, limiting yields, strict selection on the sorting table with removal of any unripe or moldy grapes, autochthonous yeasts, and malolactic on the lees in new French barriques. Carlo Ferrini selected the land for the vines and the vine-stocks, the growth system and the height of the vines. François Bouchet initiated biodynamy and only when Giulio Gambelli, glass in hand, gives the thumbs up, are the wines bottled. Their beautiful, terroir-driven wines - Brunello di Montalcino, Rosso di Montalcino and their Bordeaux-style blend, Ombrone Sant Antimo - embody the wisdom of that decision in their purity, complexity and specificity of place. 42 Dehesa de los Canónigos Castilla y Leon, Spain It is now 26 years since 1989, when Luis Sanz Busto made the decision to put the very first Dehesa de los Canónigos wine on the market. The estate was home to a farm, originally owned by an order of monks (the Canons and that is the origin of the name of the property and our wines) but, thanks to diverse awards and positive consumer reviews, it is now best known as producer of some of the finest wines available in the Ribera del Duero D.O. The estate belonged to the Lecanda family in the 19th Century, together with Vega Sicilia-and here stood the first vineyard in Spain to be replanted with vines brought from Napa Valley in California, after the devastation caused by phylorexia. In 1931 ownership passed over to Idelfonso Cid and Vicenta Sanchez, the grandparents of Maria Luz Cid, who is the current owner and founder of the winery, together with her husband, Luis Sanz. Today, two of their children, Belen and Ivan Sanz Cid, have taken on the responsibility of carrying on the family tradition. Ivan is the winery's Managing Director and Belen, one of Spain's few female enologists, irrefutable proof of how she has inherited her father's passion for wine and of the effort she has put into her career. Dehesa de los Canónigos stands out for the exquisite care in ensuring the quality and reputation of their wines. The quality of the wine is the result of carefully selected, hand-picked fruit, followed by an indoor inspection process where only the roundest, perfectly ripe grapes are selected. 47 Don Ciccio & Figli Washingtion D.C., United States From the picturesque Amalfi Coast in Southern Italy to historic Washington D.C., an Italian family s legacy steeped in rich tradition lives on through the launch of Don Ciccio & Figli. Francesco Ciccio Amodeo, President and Master Distiller, began his journey in the hospitality industry as a young boy growing up in the quaint town of Furore, Italy along the Amalfi Coast where the majority of his family members served as some of the most celebrated and respected chefs, winemakers, and artisanal liqueur purveyors. Francesco s career in the hospitality industry began in earnest at a resort in his hometown. Rising quickly through the ranks, Amodeo went on to acquire specialized industry certifications. Armed with this training and a wealth of family history, Francesco left Italy for D.C. to make his mark in the American hospitality industry. Amodeo broke into the D.C. hospitality industry with coveted management positions at prestigious culinary establishments including Butterfield 9, Hook, and Bibiana. Rather than limit himself to one restaurant, Amodeo took a leap of faith, and left Bibiana so that he could concentrate all of his time and energy into creating his artisanal Rosoli and Amari line featuring sweet and savory seasonal flavors, aperitivi and Amari giving way to the birth of Don Ciccio & Figli in Washington D.C. 48 Doran Vineyards Paarl, South Africa Doran Vineyards, a collaboration between two long-time friends that combines Irish flair and passion for life with a South African love and appreciation of the land and its traditions, is a boutique Irish-African vineyard venture in the Voor Paardeberg. Irishman Edwin Doran first started visiting South Africa in the early 90 s when his successful school sports travel business ran their first rugby tour to Wynberg Boys High School. Head of the Wynberg governing body and father of the rugby captain, was André Badenhorst and the two men instantly found common ground over their shared love of rugby and wine. André s role within the South African wine industry has been of huge importance, founding and building up some of the Cape s most iconic wine farms and enduring wine brands. After farming in Constantia, first leasing Buitenverwachting and creating the hugely-popular Buiten Blanc, and then establishing Constantia Uitsig from scratch, André was intrigued by the new challenge of leaving cool-climate winemaking behind to focus on the warmer Voor Paardeberg region. The farm itself, Far Horizons, is 179ha in the heart of one of South Africa s most up-and-coming wine districts, Voor Paardeberg. The combination of opportunities afforded by the new cellar, André s expertise and Edwin s business acumen has meant that Doran Vineyards has been able to entice accomplished young winemaker, Martin Lamprecht, away from the Rhône Valley back to his South African roots. 52 Giacomo Borgogno & Figli Piedmont, Italy With the cellar founded in 1761, Giacomo Borgogno e Figli is among the oldest names associated with wine in the Langhe region. The legendary Borgogno Barolos are classics in the history of Italian wine, and the estate has an extensive library collection. This library has been meticulously safeguarded over the decades, even through the mid-20th century s geo-political upheavals, precisely to allow the select Barolos to age 10 years or more in the cellar. Giacomo Borgogno e Figli remains committed to this practice and to providing wine drinkers the opportunity to enjoy well-aged Barolo. Though Cesare Borgogno changed the name of the estate in 1967 to Giacomo Borgogno e Figli, he continued to vinify wines from the family s land holdings following their centuries-old traditions.the Borgogno family cared for the estate for 247 years until 2008 when they sold it to the Farinetti family, who promised to preserve and continue their legacy. Today, Giacomo Borgogno e Figli is run by budding oenologist Andrea Farinetti, flanked by Beppe Caviola. 57 Process 99 J.P. Trodden Washington, United States Mark Nesheim founded J.P. Trodden Distilling to honor his grandfather, J.P., and the spirit of passion, ambition, and generosity from which he created a better world around him. Like his grandfather, Mark didn t believe in living a life that was less than what he was capable of.the inspiration for J.P. Trodden Distilling came in 2009 from his own question of passion, ambition, and generosity. What could be created that could be shared. That would build on a successful career as a chef and restaurant executive. That could be done in his own unique style, taking no shortcuts, and never owing anything to anyone, no matter what. The answer was bourbon, and four years later, he offered his fi rst small batch bourbon to the rest of the world. It s been more than well received. It s exceptional. It s full of passion. It s meant to share with folks like you, our friends. Life s better now, and we like to think that J.P. s spirit of generosity has something to do with that. It s a spirit that brings people together, that honors their roots, and welcomes bigger dreams. That spirit became our spirit, J.P. 58 Jax Vineyards Napa Valley, United States In 1993, David Jackson purchased a small but exceptional dry-farmed vineyard in northern Calistoga. Shortly after David purchased the vineyard his son Trent was inspired to join the new family business and build on his father s dream. Trent produced and bottled his first vintage in his San Francisco garage and then hired consulting winemaker Kirk Venge to lead the way. Locals started to hear about this winery and started buying up the super-limited production of their Cabernet Sauvignon and Cabernet Franc. In 2002, Trent s sister unhesitatingly jumped on board and put the wines in the hands of San Francisco and New York restaurateurs much to the pleasure of sommeliers and guests alike. Expanding from their single-vineyard, family -owned Cabs, the Y3 series allows them to utilize venerable winemaker Kirk Venge s access to premium Napa fruit of prodigious quality and expand their portfolio to other varieties. Jax Vineyards goal is to produce wines of great value that accurately reflect their varietal nature. 61 KGB Spirits New Mexico, United States KGB Spirits is a New Mexico based craft distiller creating small batches of bourbon, rye whiskey, gin, vodka, absinthe and orange liqueur, with plans to add a rum in the next year. Our Rancho de Los Luceros Destilaría is located on the property of the historic ranch of the same name in Alcalde, NM, in the straw bale building that was once home to the Los Luceros ry the second straw bale built winery in the United States. The batch caty of our stills is approximately 100 gallons, which means that all of our products are small batches and subject to slight variation from batch to batch. Each bottle is hand bottled and hand marked with batch and bottle number. Our individual and unique batches create spirits that are collectable, and will inspire some connoisseurs to cellar them, as they would fine wines. Unlike wine, which changes in the bottle, spirits retain the characteristics and flavors present at the time of bottling. A small company, KGB Spirits currently has 4 employees. Following the philosophy that what creates a unique spirit is the ability to extract flavor from various ingredients, KGB Spirits hired Steven Jarrett, a classically trained chef, as its Master Distiller. Steve s background in working with various flavor elements and creating recipes sets KGB Spirits apart, and encompasses our idea that good spirits are meant to be enjoyed as one would a good meal. 64 La Castellada Friuli, Italy La Castellada lies in the Oslavia subzone of the Collio in the far northeastern corner of the Friuli. In 1956, Giuseppe Bensa purchased a small parcel of land on which to produce wines for his family inn. In the late 70s, Giuseppe s sons, Giorgio and Nicolo took over the family winery. Nicolo, along with neighbors Gravner, Kante and Radikon, began experimenting with wine in a way that would change the course of winemaking in Italy forever. While begun as a two wine operation (one red and one white) La Castellada has expanded to blending varieties. However, all wines are individually vinified and carefully handled in a way that supports the character of the grape, the plot and the vintage. Currently, Nicolo manages the vineyard and his son, Stefano is making the wines. All grapes on the property are organically farmed and are vinified through spontaneous, open-vat fermentation with extended skin contact, individually customized oak-treatment, vat maturation and bottling performed without filtration of sulfur; the wines are released only when deemed ready to drink by Giorgio and Nicolo. 66 La Maialina Tuscany, Italy La Maialina Chianti, Chianti Classico, and Chianti Classico Riserva are crafted to express the essence of the territory and tradition of quality of this historic region. La Maialina celebrates the history, culture, and cuisine of Chianti, famed for its beautiful landscape marked with green, gentle hill covered vineyards, olive groves and cypress trees. Settled first by Etruscan then the Romans, the territory has been prized since antiquity for its rich soil and favorable climate for the cultivation of grapes and olives. The earliest documentation of a Chianti wine dates back to the 13th century when viticulture was known to flourish in the Chianti Mountains around Florence. 68 La Roncaia Friuli, Italy La Roncaia was founded in 1998 with the acquisition by Fantinel family of a winery, located in Friuli Colli Orientali (Friuli Northeastern hills), already having an over-30-year history in winegrowing. This was the starting point for a new project consisting in creating a small company able to produce top-quality wines, with a particular focus on native varieties and the extreme care in the selection of the most precious grapes. This has led to the creation of six wines, exclusive stages of a first class travel through wine s heavens. A journey that symbolically starts from the seductive Refosco, accompanied by the power of another great red, Merlot, continuing with a refined enhancement of the regional typicality, Friulano, elegantly joined by Eclisse, a cuvée featuring an absolute intensity. Finally La Roncaia quality rises to the sweet peaks of excellence, with the two extraordinary DOCGs: Ramandolo and Picolit, stars shining with a rare light. Six exciting experiments of taste, born from a welldefined philosophy: to express a unique terroir, through the selection of few vines interpreted with style, always aiming at the best. This is La Roncaia: a real jewel cellar that, through the experimentation and the use of peculiar wine making techniques, stands out for its limited edition products, awarded with the most desirable awards at international level. 71 Lion s Kop Stellenbosh, South Africa While most people summit Table Mountain by cable car, true Capetonians choose to climb Lion s Kop. It is one of the range s most majestic peaks, revealing to the willing explorer a rare and exceptional view over Cape Town city and bay. Lion s Kop Sauvignon Blanc is produced from one cool single vineyard that lies on top of a hill overlooking the valley of Stellenboschthe vineyard for Lion s Kop Pinotage is very close to this site. Here on the Stellenbosch Kloof, prevented from the drying South Easter wind by the Stellenbosch mountain range, the vines develop in a perfect setting in South facing vineyards upon deep weathered granite soils with prevailing False Bay sea breezes to encourage a long and gentle ripening. Lion s Kop Merlot originates from three different vineyards, from which grapes were extremely carefully selected for their specific characteristics. Durbanville fruit, where Merlot fully ripens under rather cool conditions, lends a beautiful mineral character; Hermanus Hermanus, from an ocean side vineyard, provides a hint of mint, and a lot of freshness; Stellenbosch is the third origin of the grapes where bush vines (non irrigated vines), deep into the Stellenbosch Valley, provide highly concentrated black fruits that add an intense ripe fruit note to the Lions Kop Merlot. 73 Mãe de Ouro Minas Gerais, Brazil 22 Fazenda Mae de Ouro means The Mother of Gold Farm in English. Surrounded by rolling hills, their fields are a sea of tall green sugarcane, irrigated by water from the lake and the tropical rains. As the sun sets the fields look as if they are made of gold, giving them their name. Mae De Ouro is a family farm and distillery founded with a dedication to four pillars: ecology, viability, responsibility and heritage. Located in the heart of the most celebrated cachaca producing state in Brazil, Mãe De Ouro lies near the sleepy town of São José da Barra where fewer than six thousand residents live. The commitment to sustainability is apparent at every step of production: Today in Brazil, millions of acres of sugar cane are burned each year. While it is more labor intensive to harvest unburned sugarcane, they have chosen not to burn their crops or use machines. Burning sugar cane pollutes the environment and also destroys the natural yeasts that give their cachaça its unique flavor. By hand selecting each plant and taking only what they need, they can harvest their crops at the peak of the season when the cane is the sweetest possible. 78 Mizu Shochu Saga, Japan Mizu is proudly distilled by the Munemasa Shuzo Co. of Arita, Japan. While honoring the traditional shuzo methods, Munemasa is driven by a passion to craft the unexpected and to create shochu of uncommon character. Founded in 1985, Munemasa infuses creativity, innovation and a unique perspective into the traditional ese spirit. This is the way of our master distillers, Wada-san and Okoba-san, who make the Mizunomai in the artisanal, old-style method, while adding unusual and unconventional twists for the more bold shochu lover. Japanese shochu is a distilled spirit that is remarkably smooth and light with delicate, earthy notes seldom found in Western spirits. These distinctive flavors are a tribute to the local harvests - typically barley, sweet potato, sugar cane or rice - and are rooted in a deep appreciation for the purity and perfection found in nature. To capture the true essence of these ingredients, honkaku (authentic style) shochu is distilled only one time. The traditional method of single distillation preserves and highlights the naturally occurring oils and aromas that deliver the spirit s unfamiliar, yet exquisite flavors. 79 Montanaro Piedmont, Italy 22 At the Montanaro Distillery, Grappa is made by distilling the marcs of various vintage wines, firstly Barolo. After pressing, the liquid is passed to traditional steam alembics which preserve the aromas and perfumes of the original wine. During distillation, the impure parts are eliminated to ensure a clear flow of Grappa from the taps. The Grappa is then aged in vintage wooden vats for years, in special cellars. By ageing, the spirit acquires a perfume and flavor which is velvety, dry and smooth at the same time, persistent and ethereally recalling the original wine. 80 Movia Brda/Collio, Slovenia Straddling the border of Italy and Slovenia, Movia is in the heart of the Collio. However, the winery is actually located on the Slovenian side of the border and as such is designated the appellation Brda (Slovenian for Collio ). The Movia estate has been making wine for over three centuries and was purchased by the Kristančič family in It is difficult to summarize the importance of this estate and the work being done by current winemaker Aleš Kristančič. It was Aleš grandfather who, in a desire to save the legacy of family winemaking, convinced Tito to allow them not to sell their grapes to the co-op (as was mandated by the dictator himself) but rather to make wines and use them as the official wine of state. Aleš, who studied oenology at the University of Padua, is a proponent of natural and biodynamic winemaking. However, his vinification and viticultural philosophy cannot be construed as solely traditional or even purely natural; rather, it is a reflection of a collective wisdom acquired and refined over two centuries of winemaking at the Movia estate as well as formal, modern training. Aleš uses extraordinarily long maceration (years in some cases) in old Slovenian oak with no stirring. Racking is never performed, and the fining and filtering procedures are governed by the atmospheric pressure incurred by the arrival of the new moon. Movia s wines are unparalleled in authenticity and unmatched in their purity of expression. 84 Peter Jakob Kühn Rheingau, Germany peter jakob kühn Quarzit Riesling. trocken Founded in 1786 by Jacobus Kühn, The Kühn estate remains a family operated winery currently run by 11th generation winemakers Peter Jakob, his wife Angela, and their son Peter Bernhard. The entirety of their efforts is in the pursuit of exploring the potential of and finding the purest possible expression of, their grapes. Peter Bernhard graduated from the prestigious Geisenheim university after stages in Burgundy and Alsace (at Zind-Humbrecht) and has been working in the estate s cellars ever since. Having studied thoroughly both the philosophical aspects of biodynamicism and the science of both grape growing and winemaking, Peter Junior lends a fantastic perspective and represents the next generation of Kühn family winemaking. The Kühn family history is intrinsically woven into their land. For over 200 years the Kühns have meticulously maintained their vineyards and developed a deep appreciation of their land, its flora and fauna. The decision to embrace biodynamic principles was borne of this relationship and an earnest desire to produce vibrant, expressive wines that did justice to the terroir on which their family has farmed for 10 generations. As the first (and still the only) biodynamic producer in the Rheingau, the Kühns have fully embraced every aspect of the preparation, the application and the philosophy of biodynamic farming and have quickly become icons for profound Riesling and natural, organic wines. 92 Samaroli Scotland Born in Bologna seventy years ago, Silvano Samaroli has been selecting and bottling the world s greatest Scotch whiskies since At that time he was the only non-british or non-scottish person doing so. Having begun with Scotch, years later he began choosing rums from some of the world s best rum distilleries and then transporting them to Scotland for maturation. His story is that of a fanatic an entrepreneur with an almost savant-like knowledge and palate of the world s finest Scotch whiskies. His focus was on selecting and bottling interesting, single cask whiskies from Scotland. But what set him apart was that when he chose a cask of whisky, he would re-cask the whisky into new (or virgin) oak to add considerable layers of depth to what one would find in a regular single malt bottling. Samaroli Whisky is made from single malts and vatted (blended malts) whisky; Samaroli rums are made from single casks and blend rums. Maturation for the Whiskies and Rums are carried out in Scotland, where the climate (cooler than in the Caribbean with regard to the rums) enables longer aging and consequently cleaner, clear-cut and more elegant spirits. The elegance, balance, complexity, finesse, and depth of flavor of Samaroli spirits are without rival. 97 Serafini & Vidotto Veneto, Italy Francesco Serafini and Antonello Vidotto purchased this historic estate in 1986 with an objective of crafting classic Bordeaux inspired wines from the varieties that have been cultivated in the dolomite foothills for centuries. Following extensive work in the vineyards and the construction of a sophisticated new winery designed by the architect Carlo Palazzolo, the duo have succeeded in producing complex and elegant wines from old vine Cabernet Franc, Cabernet Sauvignon, Merlot, and Petit Verdot as well as exceptional interpretations of Prosecco, Sauvignon Blanc, and Pinot Nero and the rediscovered native variety Recantina. They are aged at least 12 months in 400 French, Hungarian and American oak barrels, inside century-old caves dug deep into the mineral-rich volcanic rock underlying the handtended vineyard. Here, an ideal match of terroir and grape allows Zinfandel to show its true potential. Jerry and Sigrid Seps wines are famed for intensity and longevity. Raspberries, black cherries and spice are the essence of their complex, well-balanced and elegant wines. 102 Suze Auvergne, France Suze was born in 1885, at a time when almost all aperitifs were wine-based, when Parisian distiller Fernand Moureaux distilled the Gentian root a bitter root used for centuries as an herbal tonic to promote good digestion and general well-being. In 1889 the drink was perfected and officially became the aperitif that the world knows today. In 1896 the iconic bottle was designed by Henri Porte and was eternalized in Picasso s 1912 painting, Verre et bouteille de Suze (Glass and bottle of Suze). For more than a century, Suze has been produced with the strictest respect for tradition, with fresh wild yellow gentian carefully selected and harvested by hand in the mountains of Auvergne. Over the years, Suze gradually took on a sweeter, less herbal profile; Suze d autrefois, however, is modeled after the original 1889 recipe. Born during the Universal Exhibition in Paris in 1889, both Suze and the Eiffel Tower are linked as French icons, with Gustave Eiffel contributing to the design of the Suze distillery that was constructed in Name of Founder: Name of Distiller: Area of Production: 1889 Fernand Moureaux Pernod S.A. In the late 90s, Giampaolo took his love of his vineyards to the next level. In his pursuit to better understand how his soil types impacted his grapes, Giampaolo began making wine off his land. Soon after, he began customizing his vinications relative to each of his parcels of Sagrantino to reflect the distinct characteristics of his vineyard. Giampaolo Tabarrini was the first person to bottle Single Vineyard Sagrantino in Umbria and continues to produce among the best wines in Umbria while setting a high standard of excellence for the region. 106 The Maritime Republic Imports Italy 22 The Maritime Republic Imports are importers of Italian wine and beer. We believe that, at some point, most important human exchanges involve the table and the bar. Therefore, in working with wine and beer, we place ourselves as facilitators of a process that exists very close to the crux of, well, everything. Balancing the gravity of that fact with the levity that s necessary to make these exchanges successful is how we define fun. Birrificio Retorto [Founded in 2011] Brewmaster Marcello Ceresa s approach to crafting beer begins with the soil, graduating from l Universita Cattolica del Sacro Cuore di Piacenza with a degree not simply in brewing but also in food and nutrition supply and technology. His sense of where it begins to where it goes is fundamental to the beer he creates. Wanting to maintain that connection to all parts of the chain, in 2011 he stopped working as a traveling brewmaster for other breweries around Piacenza, enlisted his sister and brother, Monica and Davide, and opened Birrficio Retorto. The brewery is based in Piacenza, Italy. Birrificio Rurale [Founded in 2009] Though Lorenzo Guarino is technically the brewmaster at Birrificio Rurale, this is truly a collective of friends who had the good fortune to grow up in and around Milan and Monza where there have been no shortage of small breweries they could sample from over the years, fine tuning their own senses of what it was they wanted to make. In the end, they ve committed themselves to making fun and creative all natural beers. Everything remains unpasteurized, unfiltered, zero conservatives, and with all organic ingredients including things like chestnut honey and bergamot. The brewery is based in Desio, Itlay. Birrificio Maiella [Founded in 2008] Birrificio Maiella lies in the shadow of the massive limestone massif of the National Park that bares its name, written as Majella in Abruzzese. With wolves, bears, chamois, and peaks dotted with snow all year long, the Majella feels more like an untouched Alps than a mountain range in the Mezzogiorno. The nearest town of Pretoro clings to the walls of it like a Shangri-La cloaked from outside view via fumes of mountain mist that stream through its streets up the slopes. Brewmaster Massimiliano Di Prinzio takes advantage of every aspect of this location. The brewery is based in Abruzzo, Italy. 107 Tiano & Nareno Mendoza, Argentina Sebastiano, known as Tiano, and Nazzareno known as Nareno, landed at the port of Buenos Aires in the summer of 1908, after 18 days at sea. But the city was not their final destination. They still had 1,000 km westward to travel before arriving in the region of Mendoza, a land where vines had been cultivated at the foot of the imposing Andean Mountains for hundreds of years. Mendoza was the place where Tiano and Nareno, my grandfathers, set up their homes and founded their families. My grandfathers devoted their lives to working the land and growing vines. They were passionate about tradition and had a great love for work well done. The land, climate and vines of Mendoza held no secrets for them. PITMAN S SIGNATURE SERIES WHISKEY REBELLIOUS RYE WHISKEY DISTILLED FROM RYE MALT MASH & AGED WITH AMERICAN OAK 95 PROOF 47.5% ALC/VOL SAN DIEGO EAST COUNTY, CA 750ML Twisted Manzanita Ales was built on the idea that great beer is crafted with both passion and creativity. In 2010, Twisted Manzanita Ales opened its doors with a tow-barrel brew house, however, in a little more than a year we began construction on our much larger facility. We recognize that craft brewing is an art that requires tremendous attention to detail and extensive involvement from our brewers in every aspect of the process. In response to that need, we have built a space for our brewers to let their creative juices flow with few boundaries and interesting ingredients sourced both locally and internationally. When we started going down the distilling path in 2012, we made a vow to only use raw, fresh ingredients in small batch format to distill our product. This means taking the time to understand what role each fresh ingredient plays in the distilling process. It also means no taking short cuts, using extracts or blending pre-distilled products. While the technology may be from a new generation, the ideology is from past generations. Craft Distilling truly is an art and we work HARD to maintain its integrity. When J. L. Pitman created his Rebellious Rye Oaked Whiskey he was determined to capture the unique taste of the Rye flavor along with the smooth malted barley. The first in the Signature Series, this handcrafted, small batch rye whiskey captures the essence of the Rye Whiskey flavor profile and character, in an nontraditional fashion. When J.L.
